    I’ll bet if you put a teaspoon or the Lemon Curd powder in whipped cream, it would be fabulous.

    I also make Lime, Orange curds as well, and I make a 6" sponge cake and split into 3 and fill layers with, two curd flavors.

    I make a lot of macarons so I have lots of egg yolks! My lemon tree has amazing lemons also. I make huge batches of curd and give to friends and neighbors! Loved your explanation of the ph and timing for the different preparations!

      I am sure you know you can substitute egg yolks for some of the eggs as well. You are so fortunate to have a lemon tree--they don't grow here.

    I love lemon curd. I take lemoncello (and Italian liquor) and add some to the lemon curd to make it more like a syrup . I then pour that over vanilla ice cream and put a small wafer cookie in the dessert bowl. A great light dessert for company.

      This is how we preserve lemons at present. Lol. Limoncello is amazing but will definitely try at least preserving the constituents for curd.

      I saw where you can refrigerate lemons, cover them with water in a jar. and put a lid on them. They are supposed to keep a long time this way

    I made 4 pints of this a few months ago. Turned out very well. I have 1 pint left! Gave 1 as a gift to my brother. I had never canned lemon curd before...and hadn't made it in years. Worked out spectacularly well. Thank you! going to make another batch this weekend for my prep shelf!

    I totally missed this video, I just discovered that I could can lemon curd per the USDA guidelines. So I was doing a happy dance in my kitchen. TY for this video knowing I can freeze dry it too is wonderful.

    Good gracious!! That lemon curd is sooo tantalizing, my mouth is watering! This is going in my recipe file! I lacto-fermented some lemons recently and can’t wait to get some lemon curd in the freezer and can some as well.

    Thank you so very much for all your hard work and sharing with us. There are one of the two people I really trust with advice in PC . Your research and complete instructions show us how much you care for others. My husband loves lemon curd. I do believe I can make this for him. His Mother (90) tried to teach me but it was a half day of confusion on my part. LOL.

    So much to do, so many videos to watch. You are absolutely a delight to watch. Partly because of your humor, but mostly because you have done research and I always feel safe enjoying your techniques and recipes. You and Jim are the greatest. Because of you we have 2 data loggers, one is smaller than the other, pint and quart size. With them I feel so confident and safe when I give any of my precious gifts to family and some friends.     Freeze dried lemon curd would be a great addition to some homemade yogurt and jam! I sometimes use lemon zest on Icelandic skyr and bilberry jam. I followed the recipe to a T except I didn't add all the eggs! But at precisely 170 the curd was perfect. Its in the freeze dryer now.

    My son tells me that you can soak fruits and fresh vegetables in a quart of water with a couple tsp of baking soda and that will remove the wax and pesticides. My mom used to make lemon curd to serve over fresh, still warm gingerbread as a dessert. So delicious

    This is great. I learned a lot of (in retrospect) obvious things I never thought of before: Lay your microplane on a paper towel and grate onto the paper towel; cut the ends off your lemons before you put them in the yellow thing; pour your lemon juice through a strainer into your measuring cup; use a litmus strip to test your lemon curd pH so you can can it... Only I have made lemon curd in the past and I know I cannot be trusted with it. 😳 Thanks!

      I didn't know you could freeze lemons! You just put whole lemons in the freezer??

      To get more juice from lemon or lime just put in microwave for 15 seconds then squeeze. You get a third more juice.

      I live in Kansas very rural our produce is not always the best. I own a restaurant and bar. One day my bartender went to cut lemons and limes and they were slightly frozen. She put them in microwave for 15 seconds and was amazed at the amount of juice she got. We make it standard practice now. Much less waste. I zest everyday also. Nothing goes to waste.

    I just had this pop in my feed. My Mom canned a lot, so I suggest the jars might last better after waterbath canning in the refrigerator. Dark and cool is the trick.

    It was a favorite family dessert when my mom made gingerbread and served it with warm lemon curd over the slices. Yum, it's such a good dessert or after school treat.

    NEW USE FOR LEMON CURD!!! i was having a dinner party and didn't have an after dinner drink so I invented one! It was delicious and I got so many compliments! My imitation of Crema di Limoncello, Here is what I did. One pint of lemon curd, One pint of Ever Clear alcohol, one pint of heavy cream and a teaspoon and a half of vanilla. Stir it, don't shake. You don't want to make whipped cream, lol. A little of the foam on the top of each glass works great. Garnish with a very thin slice of lemon. (I only had one) Chill. If you want it sweeter add honey. I froze the leftover and made slush out of them Also yummy. Velvety smooth drink.

    Lemon curd is my very favorite... I never thought about canning it. I think I can do this low carb and keep it gluten free. Bonus! You freeze dried it! Yes! I can do that! Instant lemon curd!

    Good morning! I am certainly going to can me some lemon curd. You talked about the Texas grid system going down, and luckily some people had natural gas, but if natural gas supply demands had failed that's another resource I'm not going to count on. Off of Facebook market place I bought a RV stove, nice and clean, and I paid $180. My son tested it before I bought it, he cooked 40 minutes in the oven, worked great, and the stove vents from the top, it has 4 burners on top. It's not so heavy you can't move it. I have natural gas stove, but this stove is for my prepping room. Also, stock up on propane before winter. There is no way I want to go grill outside during zero degrees. And with a oven I'll be able to make bread, cake, and cookies. The camp stoves are to small on top to get all your pots and pans on, plus you can still can indoors with a RV stove.

    In Australia, we have very fine sugar called castor sugar. We use it for pavlova, and the peaked topping on lemon meringue pie.

    I LOVE LOVE LOVE Lemon curd and have made it for years- wonderful on scones and toast or just eat out of the jar :) Wondering if the lemon curd would dehydrate for those of us who don't own freeze dryers?

    I make lemon curd in the vitamix (which gets hot enough during 4-5 minutes on high to cook the mixture perfectly) and I use whole meyer lemons. so easy! I haven't canned it yet, though I have frozen it.

    Recently, I washed a batch of whole jalapenos and 6 lb of celery and used a little bit of dawn with some vinegar and water. We made poppers with the jalapenos and I swear they tasted so different. Really wonderful (the jalapenos). And the celery came cleaner than ever before. Just be sure to rinse well. It will be my go to wash from now on. Stay healthy, be safe and many blessings.

      I was just going to ask about about lime curd. I have a Myer Lemon tree that t is blooming now with lots of tiny lemons on it. Also have a lime tree with many small limes on it. I can't wait to try them. Love your videos🍈🍋

    I just discovered this method a short time ago, where you mix everything together than put it in the pot. So much easier. One of my favorite ways of using lemon curd (next to spreading on my toast in the morning) is to make Lemon Gingerbread trifle. Thank you for another great video

      @@RoseRedHomestead I meant to mention. I just freeze mine. It freezes really well and when thawed out...its still smooth as when i put it in. I only freeze it cause i use it almost daily and didnt want to waste my canning lids.

    I absolutely adore lemon curd and it is so expensive! Lemons and limes are staples in my kitchen, so, I will definitely be whipping up a batch of lemon curd (I wonder if I can make lime curd as well).     If they are stored in a cold pantry they will keep a couple months longer. We have an enclosed porch which stays about 48 degrees or so in winter.
    They hardly last that long around here either. Never saw it freeze dried. A lovely way to keep it.

    I melt the butter,add all the ingredients at room temp into a tall jug and use a stick mixer until smooth and even and then into a double boiler until set. Works well.

    My Mother always washed lemons etc in soapy water - a friend of mine lived in Brazil in the '90s & stated they were mandated to wash their produce in white vinegar. Great video - love lemon anything! (My Dad loved lemon meringue pie.) 🙏

    Thank you for this video. I wouldn't have thought about freeze drying it, but will definite do it. I'll be making the curd with a monkfruit sugar substitute and probably make the parfaits using my nut and seed (Keto) granola.

      I was wondering if monkfruit sweetener would be safe for canning with - love all your science info - I am a retired elementary science teacher 🤗

      @@MM-oc3sb I don’t know, but I do know many people use different sweeteners for jams (using no-sugar pectins). I would call my local extension office before trying it. I’m going to freeze dry it, so I’m not too concerned about it. If sugar is required for preservation, it might not work. I did find keto recipes for lemon curd online using sweeteners, but none had been tested for canning.

    I used to always make lemon tarts for Easter with freshly made lemon curd! Our son has three lemon trees in Az. He sends us large totes of lemons every year and I can the juice. I gift most of it away now, but always save a dozens or so jars for curd, lemonade and pies!
