No Bake No Gelatin Mango Cheesecake

  • No Bake No Gelatin Mango Cheesecake - At first I was rather sceptical using agar powder to replace the gelatin because I doubt the texture will be as creamy as the one with gelatin. Surprisingly, it turned out as creamy and you can’t tell that this is with agar powder and no gelatin used. I had some comments before about agar agar powder (although I love agar cake very much), that the texture will be hard and crispy unlike the real cake. However, if the cream is added, the texture will be creamy and soft. I hope you’re inspired and give this a try. Enjoy!

    Ingredients:
    7-inch ring mould
    • The Crust
    125g (about 8 pieces) digestive biscuits
    50g (1/4 cup) melted butter
    • Mango Cheesecake
    1 mango (medium or large), cut into chunks
    250g (1 cup) cream cheese
    50g (1/4 cup) fine sugar
    2 tbsp lemon juice
    250g (1 cup) whipping cream
    125ml (1/2 cup) whole milk
    10g (2 ½ tbsp) agar agar powder
    • Mango Jelly
    1 mango (large), for 250g (1 cup) mango puree
    30g (2 tbsp) fine sugar
    100ml (1/4 cup+ 2 tbsp) water
    4g (2 tsp) agar agar powder
    Deco: Mint leave
    Instructions:
    • The Crust
    1. Put the digestive biscuits into a zip lock bag. Mash or crush it with a rolling pin. Alternatively, you can also pulse them in a food processor.
    2. Add the melted butter and mix until combined evenly.
    3. Pour the crust into a prepared 7-inch ring mould. Refrigerate while working on the next step.
    • Mango Cheesecake
    4. Cut the fresh mango into chunks. Set aside.
    5. In a large bowl, add the cream cheese. Mash to soften the cream cheese.
    6. Add sugar, and continue mixing until combined and softened.
    7. Use an electric mixer to mix it so that the sugar until the sugar is more or less dissolved.
    8. In another bowl, mix the whipping cream until soft peaks formed (not stiff peaks). Add into the cream cheese mixture. Fold in until well combined.
    9. In a small pot, add milk and agar agar powder. Give it a mix before heating it to prevent lumps. Bring it to a boil over low heat until the agar powder is dissolved. Keep stirring to prevent the mixing from lumps and slow down the setting. Remove from the heat.
    10. Pour the agar mixture into the cream cheese mixture. Fold in until well incorporated. Set aside (**do not set aside for too long as the mixture will set or lumpy once the temperature decreased**)
    11. Add the chunks of mango around the ring mould. Quickly pour in the cream cheese mixture and spread it evenly.
    12. Add the remaining chunks of mangos into the mixture if you have.
    13. Refrigerate for at least 4 hours or overnight for best results.
    • Mango Jelly
    14. Cut the mango into chunks and add into a food processor. Add sugar. Pulse few times until it is mashed.
    15. Strain the puree. Set aside.
    16. In a small pot, add water and agar agar powder. Give it a mix before heating it to prevent lumps. Bring it to a boil over low heat until the agar powder is dissolved. Keep stirring to prevent the mixing from lumps and slow down the setting. Remove from the heat.
    17. Pour into the puree. Mix until well combined.
    18. Pour the puree mixture onto the cream cheese layer.
    19. Refrigerate for about 1 hour or until the jelly is set.
    The cake is ready to serve.

      Hi Valentina. I thought agar will give a crunchy hard agar texture, but no. It turned out to be pretty soft and creamy. The mango give it a little more refreshing and made the cheesecake so much lighter. Worth a try. You have a wonderful weekend, my dear friend! 🤗😘❤️🌹

    I tried making this. The flavor turned out well but it became runny after it was out from the fridge for like 5 mins. Not enough agar agar powder? I did boil it before mixing it with the cream cheese. Thanks for the recipe!

    Hi. This looks great and am going to try it very soon. 1 Qs.: isn't the 2.5 tablespoons of Agar powder a lot? I've used Agar powder in a different recipe, and adding too much of it leaves a very bitter and metallic after-taste.

    As always a beautiful result. I have never seen a mnago this nice here, but love mango in all shapes and forms.
    I have iused agar agar quite a few times lately since i find it easy to work with, and it gives a similar result as gelatin :)

    Hi! I used your recipe but I find that my agar agar sets in the batter and there are pieces of it all over. Should I make sure that the cheese and cream mixture is at room temperature before putting in the milk and agar agar mixture? Or is there any other solution?     Again… I made cheese cake with your recipe.
    Perhaps my agar-agar powder not powerfull enough. My cheese cake turns out a bit fragile, it set up though. As for mango jelly, it’s perfect.
    Next time maybe I’ll add 1 tsp more agar-agar powder to cheese cake mixture.

      Hi June. Agar powder for some reason it's harder to dissolve. If you want even more stable, use agar leaves/strips, it dissolve quite easily in boiling water. I've not tried, but I think 3-4 strips should be sufficient. Just an alternative suggestions. Go ahead with the powder form if you feel more comfortable ☺️

      Yes you can, I would prefer agar leaves. Since the fact many places don't have agar leaves, I had to use the powder form. I can't give you the weight of the leaves as they are very light. Just estimate about 2 long stripes should be sufficient. Make sure the boiling dissolve them completely

      It has to be warm. The nature of agar is it will set when it gets cold. It's ok to mix even when the agar is hot and runny

      That's just if you want the cream cheese to set, you'll need to add if the mixture is runny. If you think your homemade is rich and stiff, you can omit the agar agar

    Hi..thank you very much for a cheesecake recipe without gelatin. The agar powder that I have says 1 level teaspoon (2g) will transform 500ml liquid into jelly. So how much do you think I should add? I feel if I add 10g would it be too much?

      Well, the typical cheesecake always use gelatin. Agar is actually a substitute of gelatin which a lot of people request. So you can use gelatin instead 😊

    Hii great recipe and really helpful since it's so hard to find gelatin in where I live. I want to ask, did you pour the agar mixture into the cheesecake mixture in high temperature (boiling)? Thank you

      Actually yes because when the agar mixture is cooled, it will start to set. So you need to mix in before it's set. You need to do it quickly

      Agar starts to set after going below 50°C so you can cool you mix a bit before pouring it

      Agar agar powder may be a little difficult to dissolve. Just make sure it is well dissolved in whatever way you choose, as you don't want your cake to taste some agar powder in it. Any way you choose, so long as the agar powder is well dissolved

    Amazing recipe! I want to prepare this mango cheesecake for my brother's birthday. My queries are:
    1. Is one cup of cream cheese enough for 7 inch cake tin?
    2. Can I use fresh cream instead of whipping cream? Whipping cream isn't available at my place.

      Hi dear. I'm glad you take the initiative to make a cake for your brother's birthday.
      1. 1 cup cream cheese is enough for 7 inch pan. It will give you the height like mine. You can add another quarter cup of cream cheese is fine too
      2. I'm a little skeptical with fresh cream as it only has 25% fat or lower. The reason for whipping cream is it contain at least 30% fat, hense give a creamier texture, and it will set nicely. However, if you really can't find heavy cream or whipping cream, fresh cream will be your last resort. Just make sure your agar powder dissolves really well. Before mixing into the cream cheese. Then lastly add in the thickened cream. Try to mix your fresh cream a little bit to thickened it if possible. You might also want to try leaf agar which is easier to dissolved and not powdery.
      I hope this will help you, let me know if you have anymore questions before you start

I do have agar agar powder. I'm going to add this to milk then on low flame bring it to a boil and cook it for couple of minutes , and continuous stirring I won't forget. I hope I'm write.       Hi. You may apply the same amount as the agar, or 2 tbsp is sufficient for the cream cheese. For the puree, 1 tsp should be sufficient

      Yes that's fine. Try to whip the whipped cream a little thicker (maybe soft peaks) to buy insurance, otherwise the cream part may be wobbly

      @@esthereng8775 Not full cream. The cream must have 35% fat or at least 34% fat. Otherwise the texture will not be creamy. Some countries called it heavy cream and some called dairy whipping cream

      @@gracioustreatz7231 unfortunately my cake doesn't set, prodably due to my mistake that I forgot to heat up the liquid when dissolving the jelly powder in my rush to get the cheesecake done. However the taste was great by the way ! Can I check if there is any way that I can still save the cake ? I have put in the fridge for one day now.. should I put in the freezer instead ? Or should I go ahead to bake the cake ? However I have placed 300g of melted chocolate in the cake, will it caused the chocolate to melt if I bake the cake? Or should I simply just try to put in the fridge for a longer period... Any advise is appreciated! ☺️
