Raspberry rare cheese cake Ingredients: 230g of cream cheese (softened at room temperature) 60g of plain yogurt 40g of sugar 6g of powdered gelatin 30g of water 1/2 teaspoon of lemon juice. 230 g of fresh cream 2 Cheese cake 60g of digestive whole wheat cookies 5g of sugar 5 30g of unsalted butter 25 ㎖ of milk Raspberry jello 30g of water 6g of powdered gelatin 25g of sugar 60g of raspberry purée Transparent jello ( top part ) 40g of water 3g of lemon juice 8g of sugar 2g of powdered gelatin Very little raspberry purée ( added instead of food coloring ) Cookies must be put in sealable bags, broken up and mixed in with the melted butter and milk. Put the crust into a greased cake mold and. refrigerate until firm, about 1 hour. Gelatin must be dissolved in a milk and set aside for few minutes. Direction 1. In a large bowl, beat in cream cheese and sugar with the hand mixer until it is well combined together. Put the hot boiling water in a medium bowl and a dissolve gelatin mixture and let it sit in a hot water for 5 minutes. Take the gelatin mixture out of the boiling water and add fresh cream and a plain yogurt in a cream cheese mixture. Add lemon juice and gelatin mixture into a cheese cake batter and mix them well until they are combined together. Put them in a prepared crust and freeze them for at least 30 minutes ( half an hour ). 2. In a mean while, make a raspberry jello. Dissolve 6g of gelatin with 30g of water and set it aside for few minutes. In a medium bowl, mix in raspberry purée and sugar and stir until it is well combined together. In a small bowl, put hot boiling water and put the gelatin mixture in a hot water and let it sit for 5 minutes. In a separate bowl, mix in raspberry purée and sugar together until they are well combined. Take the gelatin mixture out of the boiling water and add the gelatin mixture into a raspberry purée. Take the cheese cake out of the freezer and pour the raspberry jello mixture into a raspberry cheese cake batter and refrigerate it for at least 1 or 2 hours. 3. In a mean time, make a transparent jello. Combine powdered gelatin and water in a measuring cup. In a separate bowl, mix in some lemon juice, sugar, and little bit of raspberry purée and stir them until it is well beaten together. Take the cheese cake out of refrigerator and pour the transparent jello mixture into a cheese cake, cover and refrigerate overnight. 4. Put an wet warm towel around cheese cake and slowly unmold the cake and transfer into a plate. Decorate with raspberry compote and your favorite fruit and you are ready to serve.
