Now that water crisis has become prevalent , we should definitely reduce rice consumption by at least 50% and switch to millets ! Thanks for making an ecologically relevant point in your video Akka 😉 It’s so nice that u mentioned about lecithin in the video because it’s one of those good lipids that we must have . Also an extra piece of information- a form of lecithin, dipalmitoyl phosphatidylcholine is a major component of lung surfactants !
Lung surfactants are lipoprotein complexes present in between alveoli and lung capillaries. They reduce surface tension and hence prevent our lungs from collapsing . These surfactants are mainly made up of lecithin so foetal lung maturity is usually estimated by the ratio between lecithin and another compound called sphyingomyelin . If there ratio is below a certain range , the foetus might suffer from respiratory distress .

Your video is Adoreable, I have one question ...This kodo millet is to be soked over night before using or can it be used directly after washing like rice.

Namaskaram Shravan. I can share my experience with organic unpolished millets that I buy from Bio Basics Coimbatore. With the colour , the polished little , barnyard, kodo millets are all whitish whereas unpolished millets are light dirty brown in colour, and kodo deep brown in colour and generally kodo millet on washing bleeds red. With respect to rice, unpolished rice is of brown,red colour with bran intact, whereas one cannot miss the whiteness of the polished rice.😀😀😀. Regards Sujata from Munch and Mull 🙏
Namaste. When flour is used,there is no soaking required. When whole millets are used, especially for Idli,dosa batter,we definitely soak them. Small sized millet grains,when cooked for pulav,or pongal,I generally do not soak them. You can try making by soaking and not soaking and let the feel.of your body decide 😀😀😀😀. I measure by cup and not,weight. Use the same cup for measuring water,by which you have measured the millet. Yes, generally 2.5 cups water for one cup millet. If you want it softer,you could use three cups water to one cup millet. Regards Sujata from Munch and Mull 🙏
In my experience, for making Idli,dosa batter, I soak. For pulav etc, slight roasting removes the phytic acid that inhibits nutrient absorption. If some people find it difficult to digest millets,they can soak. Not mandatory. Regards Sujata from Munch and Mull

It is very informative and interesting to watch your presentation. Recently, in November 2021, I started using kodo millet. I will now follow your recipe to make it more healthier. You roasted and then washed. How much time we should wash after roasting. I normally wash without roast for 3 to 4 times. No need to soak kido Miller for 3 to 4 hours before cooking? Millets should be soaked in water for atleast 4 hours to 8 hours depending upon the millet and then for 1 Cup of Millet you should add 6 Cups of water. It should Not be cooked directly.

@@munchandmull : It will Not become like Kichdi. If it is cooked in ordinary vessel nothing will happen. If it is in a Pressure Cooker, then 5 might be enough. But cooking Millets in an ordinary vessel is recommended. Because some Millets consume lots of water. Even I have Millets Food everyday. Foxtail Millet, Barnyard Millet, Kodo Millet, Little Millet, Browntop Millet. Every 2 days one Millet. The place where I eat, they put 6 Cups of Water. But they don't cook in Pressure Cooker. They Cook in Iron Vessels. They use Bull Driven Cold Pressed Coconut Oil for Cooking. They Cook only with the 5 types of Millets that I have mentioned. They don't cook any Rice item or Wheat item. It is purely a Positive Millets. Positive Millets or Positive Grains are the 5 types of Millets that I have mentioned above. If you happen to see TH-cam Videos of Dr. Khadarvalli Speech on Siridhaanya which are known as Positive Grains or Positive Millets, you will get lots of knowledge regarding Millets and its health benefits and also how to cook the correct way. Even Dr. Khadarvalli's Daughter Dr. Sarala Khadarvalli also conducts classes and educate people about the health benefits of consuming Positive Millets known as Pancharathna Siridhaanya. Dr. Khadarvalli is from Mysore and he is a Food Scientist and Food Nutritionist. He left his highly paid job in California, USA and returned to India, when he found out that people were eating the wrong type of food and this has led to many kinds of problems, which also included where young girls at the age of just 6 years were started menstruating. According to him, normally a girl menstruates at the age of 12 to 14 years of age. Daily he gets nearly 28,000 Phone Calls from across the world as to how to cure certain diseases by consuming the right type of Millets etc. He has cured many people of different types of diseases, just by telling them to eat certain types of Millets and also how to cook them etc.

It's interesting to see that millets consume less water to grow,i.e they are less water intensive crops,( I have mentioned this point in the video) but probably take more water to cook!!! Also in my experience, have used a maximum of 2.5 glasses or 3 glasses of water for 1 glass of millet for cooking. I cook more of Kodo,foxtail,finger millet. Generally use finger millet flour. Whole finger millet ,roast and powder for porridge! In fact would definitely want to know reason as to why more water needs to be used for cooking. May be the videos of his may have the answers!! But we do consume various varieties of unpolished rice also. Unpolished rice with bran intact are also a good source of nutrients.😊😊. Appreciate your effort at keying in the detailed information. @@munchandmull : Even unpolished rice contains only 0.2% of Fiber which is Not at all enough. When Rice is polished, the 0.2% also goes away and it becomes 0%. Yes Positive Millets known as Pancharathna Siridhaanya are of 5 types. Here the meaning of Pancha itself means 5. They are : 1. Foxtail Millet 2. Barnyard Millet 3. Kodo Millet 4. Little Millet 5. Browntop Millet. ** Paddy Rice and Wheat comes under Negative Grains or Negative Millets. ** Finger Millet comes under Neutral Grains or Neutral Millets. For Neutral Millets like Finger Millet and for Negative Millets like Paddy Rice or Wheat, little amount or usually the normal amount of water like 2 or 3 Cups is enough to cook. But for Positive Millets which I have already mentioned, 2 or 3 Cups is not at all sufficient, it requires more water to cook it properly. For growing Positive Millets, less amount of water is enough, like 4 rains. No need to stock water as we do in the case of Paddy Rice and Wheat. ** When we cook Millets, it is better to take the unpolished ones. Since we consume unpolished ones, it takes more time for the millets to absorb the water, expand and release all the Fiber and other nutrition in it. If we don't soak the Positive Millets for sufficient hours, then people will complain that they cannot eat it daily and will complain that it is heat, their bodies are drying up (dehydration) etc. I have seen some people complaining like this. When I asked them, did they soak the Millets before cooking, some said No and some said that they had soaked the Millets for half an hour or 30 minutes. I told them to soak for 8 hours maximum and cook. I also asked them, how much amount of water they put. They said same amount of water which they used to put for rice. Then I told them to increase it to 5 or 6 Cups. Should Wash the Millets once and then put the sufficient amount of water and leave it to soak for 8 hours (to get the maximum nutritional benefits) and then cook it. After I told them, they came to know about all these things. Also you should cook only 1 Millet at a time. Some people cook multi grain millets, which should Not be done, because you don't get the healing properties of any of the millets properly and it will Not be of any use regarding nutritional benefits. Even if you want to prepare any sweets like laddoos, it should be soaked in water for 8 hours, then the water should be drained out and the Millets should be dried in Sunlight and then the Sweets or Eatables should be prepared.
Namaskaram John. That would be a very radical step. Instead awareness needs to be created at organic farming,, preservation of indigenous traditional rice and wheat varieties. Traditional Emmer wheat etc are also low in gluten. Awareness of health benefits of millets,it's ecological significance as a low water requiring crop etc. It's always good to have a mix of grains in our diet. 😀😀😀🙏🙏. Namaskaram Shravan. I can share my experience with organic unpolished millets that I buy from Bio Basics Coimbatore. With the colour , the polished little , barnyard, kodo millets are all whitish whereas unpolished millets are light dirty brown in colour, and kodo deep brown in colour and generally kodo millet on washing bleeds red. With respect to rice, unpolished rice is of brown,red colour with bran intact, whereas one cannot miss the whiteness of the polished rice.😀😀😀. Regards Sujata from Munch and Mull 🙏

Namaste. When flour is used,there is no soaking required. When whole millets are used, especially for Idli,dosa batter,we definitely soak them. Small sized millet grains,when cooked for pulav,or pongal,I generally do not soak them.

I measure by cup and not,weight. Use the same cup for measuring water,by which you have measured the millet. Yes, generally 2.5 cups water for one cup millet. If you want it softer,you could use three cups water to one cup millet. Regards Sujata from Munch and Mull 🙏

In my experience, for making Idli,dosa batter, I soak. For pulav etc, slight roasting removes the phytic acid that inhibits nutrient absorption.

Dr Khadar wali says all millets must be soacked 6 houre before Cooking since they contain fiber in spiral structure from outside to the centre

Madam, why do you roast millets first and then wash. them and why not the other way round?
Washing and then roasting, means more moisture to remove,so more heating. So best to roast and then wash. It's difficult to roast wet millets.

You roasted and then washed. How much time we should wash after roasting. I normally wash without roast for 3 to 4 times. No need to soak kido Miller for 3 to 4 hours before cooking?

Millets should be soaked in water for atleast 4 hours to 8 hours depending upon the millet and then for 1 Cup of Millet you should add 6 Cups of water. It should Not be cooked directly.

@@munchandmull : It will Not become like Kichdi. If it is cooked in ordinary vessel nothing will happen. If it is in a Pressure Cooker, then 5 might be enough. But cooking Millets in an ordinary vessel is recommended. Because some Millets consume lots of water. Even I have Millets Food everyday. Foxtail Millet, Barnyard Millet, Kodo Millet, Little Millet, Browntop Millet. Every 2 days one Millet. The place where I eat, they put 6 Cups of Water. But they don't cook in Pressure Cooker. They Cook in Iron Vessels. They use Bull Driven Cold Pressed Coconut Oil for Cooking. They Cook only with the 5 types of Millets that I have mentioned. They don't cook any Rice item or Wheat item. It is purely a Positive Millets. Positive Millets or Positive Grains are the 5 types of Millets that I have mentioned above. If you happen to see TH-cam Videos of Dr. Khadarvalli Speech on Siridhaanya which are known as Positive Grains or Positive Millets, you will get lots of knowledge regarding Millets and its health benefits and also how to cook the correct way. Even Dr. Khadarvalli's Daughter Dr. Sarala Khadarvalli also conducts classes and educate people about the health benefits of consuming Positive Millets known as Pancharathna Siridhaanya. It's interesting to see that millets consume less water to grow,i.e they are less water intensive crops,( I have mentioned this point in the video) but probably take more water to cook!!! Also in my experience, have used a maximum of 2.5 glasses or 3 glasses of water for 1 glass of millet for cooking. I cook more of Kodo,foxtail,finger millet.
Generally use finger millet flour. Whole finger millet ,roast and powder for porridge!
In fact would definitely want to know reason as to why more water needs to be used for cooking.

@@munchandmull : Even unpolished rice contains only 0.2% of Fiber which is Not at all enough. When Rice is polished, the 0.2% also goes away and it becomes 0%. Yes Positive Millets known as Pancharathna Siridhaanya are of 5 types. Here the meaning of Pancha itself means 5. They are : 1. Foxtail Millet 2. Barnyard Millet 3. Kodo Millet 4. Little Millet 5. Browntop Millet. ** Paddy Rice and Wheat comes under Negative Grains or Negative Millets. ** Finger Millet comes under Neutral Grains or Neutral Millets. For Neutral Millets like Finger Millet and for Negative Millets like Paddy Rice or Wheat, little amount or usually the normal amount of water like 2 or 3 Cups is enough to cook. But for Positive Millets which I have already mentioned, 2 or 3 Cups is not at all sufficient, it requires more water to cook it properly. For growing Positive Millets, less amount of water is enough, like 4 rains. No need to stock water as we do in the case of Paddy Rice and Wheat. ** When we cook Millets, it is better to take the unpolished ones. Since we consume unpolished ones, it takes more time for the millets to absorb the water, expand and release all the Fiber and other nutrition in it. If we don't soak the Positive Millets for sufficient hours, then people will complain that they cannot eat it daily and will complain that it is heat, their bodies are drying up (dehydration) etc. I have seen some people complaining like this. When I asked them, did they soak the Millets before cooking, some said No and some said that they had soaked the Millets for half an hour or 30 minutes. I told them to soak for 8 hours maximum and cook. I also asked them, how much amount of water they put. They said same amount of water which they used to put for rice. Then I told them to increase it to 5 or 6 Cups. Should Wash the Millets once and then put the sufficient amount of water and leave it to soak for 8 hours (to get the maximum nutritional benefits) and then cook it. After I told them, they came to know about all these things. Also you should cook only 1 Millet at a time. Some people cook multi grain millets, which should Not be done, because you don't get the healing properties of any of the millets properly and it will Not be of any use regarding nutritional benefits. Even if you want to prepare any sweets like laddoos, it should be soaked in water for 8 hours, then the water should be drained out and the Millets should be dried in Sunlight and then the Sweets or Eatables should be prepared.

Namaskaram John. That would be a very radical step. Instead awareness needs to be created at organic farming,, preservation of indigenous traditional rice and wheat varieties. Traditional Emmer wheat etc are also low in gluten. Awareness of health benefits of millets,it's ecological significance as a low water requiring crop etc.
