Ya'll hit it out of the ball park with this receipe. My husband and I really enjoyed this dish with brown rice and a chopped salad. Perfect and thank you!
Just got done making this recipe for lunch. I included some boiled potatoes, to make it more like my favorite curry at a local restaurant. Also, I used cloud ear fungus rather than regular mushrooms, and I put tofu in it rather than beans. All told, including peeling, chopping, and boiling the potatoes, it took me 37 minutes. Needs salt 😂 but I just sprinkled some on the top like Dr. McDougall says. Yum!
Can’t wait to make this. And for anyone reading, I’ve done this way of eating for over 2 years now and when I go off it I naturally put weight on and binge like a fat pig 🐷. It fills you up, you don’t feel hungry and the bonus is the food is delicious. Persevere, you do get used to it. Before this I ate meat and even though I drift off sometimes I still can’t and have no desire to eat meat again. Dillons meals are so simple and easy to follow 🤩 so grateful for these recipes. Ps try his cheese sauce and chickpea salad yum 😋

I don’t like coconut milk/cream in my Indian curry. I usually skip it but i would sprinkle some garam masala powder while sautéing those onion, garlic & ginger. It tastes sooooo good.
I skip a lot of recipes with coconut milk. Too much fat coconut milk tip was priceless! Also, I made the hamburger less helper, I use the chick pea pasta, and now that’s my new go to. I put it in the oven with bread crumbs that is a winner!
Is there a way to still get crust when sautéing veggies in the pan? That's the one thing I miss about oil is the nice crust I was able to get. LOVE the new T-shirts!

Fig leaf tea has an intense coconut flavor. I use cashew cream and fig leaf tea instead of coconut milk. I dry fig leaves in the summer for winter currys.

I have not eaten it in 20 years because I was vegetarian and gluten free then became vegan 8 years ago. I would love to see some healthy cajun dishes if that appeals to you at all. I made a dry roux (oil free) this week which can be made with gf flour for those of us that can not tolerate. It takes a little work but is easy to make up a larger batch and store for later.

The coconut of some curries makes or breaks the recipe. Ann Esselstyn uses an extract. I have not been able to find it. Sure it is likely on Amazon, yet I have not yet had to use Amazon since choosing not to in 2006. I am going to give this shreds blend with my oat milk a whirl.

Looks so EASY and FAST a great weeknight meal. Putting it on the menu for this coming weekend! Do you think Oat milk would be an OK substitution for Soy milk. Typically have Oat or Almond milk in the fridge, Soy milk would be a specific purchase.
I threw away a whole bag of fresh spinach I bought at 14th Street green market because I read somewhere that spinach has a ton of oxalates, I'm still regretting throwing away my spinach and especially now that I see you cooking with them, I trust your judgement more than any other food channel here......What do you guys think about oxalates as it relates to spinach????
I refrigerate my onions and that helps prevent the crying situation. I don’t think it has happened since I have been refrigerating them. I haven’t really heard any arguments that say you should not refrigerate your onions give it a try.
I also learned that a damp washcloth near the cutting helps because the moisture draws the gases that cause the tears. It has worked so far.I also keep some onions in the fridge because I live in an apt complex and do not leave any foods where any kind of life form other than those I support purposely can find it, even onions and taters.

Microwave rice! YUK! First step is rice in rice cooker. Takes 2 minutes to load the cooker and start it then freshly cooked rice is on the way. Hot and delicious... cook extra which you can heat up anytime.. NO MICROWAVE! AWFUL! Then you cook the meal like we see here... DELICIOUS! THANK YOU D + R!!! Hilarious and helpful! LOVE IT!

All the ingredients can be adjusted to your liking. 1 cup chopped tomatoes ( diced , crushed, canned or fresh). 1 cup chopped onion , 1tsp finely chopped ginger , a few crushed garlic, chilly pepper (optional). 1 tsp full turmeric, 1 tblsp full curry powder ( any kind). 1/2 tsp fenugreek seeds , 1tsp mustard seeds , 1tsp cumin seeds and 3 cups garbanzo beans ( boiled or canned ). In a pot heat fenugreek , mustard and cumin until it’s aromatic and starts to splatter a little, add onion , garlic, ginger, tomatoes and chilly pepper . Cook on medium by adding a little water if needed and until tomatoes are cooked well and mushy. Add turmeric and curry powder, mix well and add garbanzo beans and 1 cup water. Cook for few minutes and add cilantro if desired and serve over rice or tortillas. Remember, there’s no oil or salt but you can add if desired. I have given you the quickest and simplest recipe. Fenugreek, mustard and cumin is optional as well you can skip if you don’t want to use Enjoy 😊

1. I'm sad I didn't get a notification this video was out, and then I realized, it's my fault...I never signed up for that part 2. Mushrooms - do you wipe or rinse them off before you chop? One of the reasons I hate using mushrooms is because I'm not a fan of getting a wet paper towel and wiping any dirt off 3. It's so exciting to see another video!!
I know plenty of folks who rinse the mushrooms. I am one. I have not noted any differences in use between my time consuming cleaning and the simple cleaning.

eggplant, cauliflower, jackfruit, potatoes, corn, peas, carrots, etc.....
You can sub the mushrooms for any vegetable you like! Sarah listed some great options!

Even lower fat: Put coconut shreds in a strainer and pour hot water over it. Press liquid out of shreds and voila: low fat coconut "milk!"

Anyone make cheater ginger? THAT would be worth the money.
I do know that they make frozen crushed ginger cubes, but someone also said in the comments that they do make jarred cheater ginger!
I buy minced ginger in a small jar. It’s next to the jarred minced garlic at my store.
Trader Joe's sells frozen chopped ginger (and frozen chopped garlic). It's in teaspoon-size cubes in a little tray.

2. Mushrooms - do you wipe or rinse them off before you chop? One of the reasons I hate using mushrooms is because I'm not a fan of getting a wet paper towel and wiping any dirt off

I know plenty of folks who rinse the mushrooms. I am one. I have not noted any differences in use between my time consuming cleaning and the simple cleaning.
@d rabbit white Don't they soak up a bunch of water for you though? Or maybe it's ok because it cooks off in the pan? I didn't think about it like that. Thank you for opening my world! 😍
