what i eat in a week: easy veggie summer recipes (20 minute meals!) ☀️

  • 🍇 recipes:
    cooked amaranth: 1:3 ratio of amaranth to liquid, big pinch of salt
    egg salad: 8-minute egg, ¼ tsp dijon mustard, 1 tsp white wine vinegar, salt, pepper
    sourdough pancake: literally just sourdough discard fried in evoo. topped with salt, spring onion and basil
    leek stir-fry: 1 tbsp evoo, 1 block of tofu, ½ leek, 2 cloves of garlic, ¼ cup teriyaki sauce, 1 tbsp soy sauce
    crispy lentils: ¾ cup dry brown lentils (soaked and cooked), 2 tbsp evoo, salt and other seasoning to taste. bake at 190°c for 15-20 minutes
    rice noodle bowl: ½ leek, 2 cloves of garlic, 1 block of tofu (pressed), fried in avocado oil. ¼ cup teriyaki sauce, 1 tbsp soy sauce. served on some rice noodles
    crispy potatoes: ½ bag of potatoes, cut into wedges. 2 tbsp avocado oil, lots of salt. air-fry at 200°c for 20-25 minutes
    pancakes: 1 cup oat flour, 1 tbsp protein, salt, 2 tbsp soy yogurt, cinnamon, 2 tbsp apple sauce, water to thin
    apple dip: 1 heaping tbsp soy yogurt, 1 tbsp peanut butter, 1 heaping tsp cacao powder. optional: 1 tsp sugar beet syrup/honey
    chickpea batter: 1 cup chickpea flour, salt, pepper, oregano, basil, 1 cup water
    soaked oats: ½ cup rolled oats, ½ cup vanilla soy yogurt
    gnocchi: ½ leek, 1 clove of garlic, 2 tbsp tomato paste, salt, pepper, 2 tomatoes, 2 tbsp chili seasoning, 1 cup white beans, 1 pack of gnocchi, water to cover, 2 tbsp nutritional yeast
    chickpea sandwich filling: cooked chickpeas, 1-2 tbsp tahini, salt, pepper, 1 pickle (or more), small handful or parsley. mix and mash until a paste forms. served on sourdough with fresh lettuce and tomatoes, fried vegetables, a drizzle of evoo and salt
    spicy rigatoni: 1/4 cup evoo, 3 cloves of garlic, 1 tsp chili flakes, 1 big jar of cherry tomatoes in sauce. salt, pepper, oregano to taste. add pasta water as needed, top with high quality evoo, I use olio carli or frantoio muralglia (sauce for 500g of pasta)

    finally someone who has realistic portions! i always feel so guilty when i watch certain videos like this because they eat such little portions thta just don’t seem sustainable at all, thank u for being realistic and providing such great, nutritious ideas!

    Albert Heijn Erdnussbutter ist die beste😍hab auch immer diesen riesigen Eimer. Ist preislich unschlagbar und mit nichts in DE zu vergleichen (alleine die Farbe schon)

      @@juliamaiten ja genau😂und hab 2 Freundinnen die Familie in Holland haben, die bitte ich immer was mitzubringen. Hab aber letztens bei Albert Heijn Erdnusmuss von Whole Earth gekauft, das ist in einer Tube & man kann es perfekt über oatmeal und sowas drizzeln😍

      Thank you! I explained in an earlier video that I‘m not 100% vegan since I do crave eggs from time to time. I get the eggs & honey from my friends garden so I don’t see a problem with that! It’s important to me to listen to my cravings :)

    Hello, I am making the bread recipe, because it looks very rich and healthy, but the baking time I did not understand well, How many minutes of baking in total would be 🥺?

      10 minutes at 220°, and then another 30 minutes at 200°!
