Traditional Steamed Egg Cake (Turn on CC)

  • Here is one of many recipe versions for the traditional steamed egg cake. I personally like this recipe the most as it comes with the simplest ingredient. It is satisfying to see the naturally forming smiling top and tasting the old-style egg aroma cake. No doubt, it is quite tricky to achieve the smiling top, some areas need to take note of.
    Follow the step-by-step instruction explained in the video or stated in "📌 Note" below, finger crossed, you will see the nice smiling top.
    ✅Ingredients:
    Egg 3
    Cake Flour/low protein flour 300g
    Granulated sugar 200g
    Soda drink (any carbonated drink) 200ml
    ✅Tools:
    6" round pan
    Baking paper
    Stand/hand mixer
    ✅TimeStamp:
    0:00 - Intro
    0:07 - Start water steaming
    0:14 - Start batter preparation
    3:17 - Batter is ready for steaming
    3:40 - Completed
    📌 Notes:
    🔹Beat the egg and sugar mixture for about 8-10min under high speed, until the mixture becomes pale and creamy.
    🔹Add the flour and soda drink in batches. Gently fold the flour and soda drink until well incorporated. Do not overmix or the cake will become dense and not soft/fluffy.
    🔹Fill the batter up and full to the brim, so the batter can rise tall and smile. Use 6 inches round pan for this recipe. Do not use an oversize pan and filled with only 70-80% full.
    🔹Heat is very important for the smiling to form. Before batter preparation, turn on the stove to start water steaming. The first 10-15minutes is when the smiling cracks happen. Thus, the water needs to be boiling on high heat once the batter preparation is ready to start steaming (Steaming time: 40-45 minutes)
    🔹Try to get a tall lid so that there is space to allow the cake to rise tall and smile. Do Not open the lid until the steaming duration is completed. Ensure water volume allocated is sufficient in the steamer. If there is a gap, seal the lid and steamer gap with a tower to ensure full force heating.
    🔹Some recipe guided to sprinkle sugar on top of the batter for the crack to happen. Personally validated, as long as above stated notes are well followed, do not need to sprinkle sugar on top and the crack will still happen.

      @@laurenlee2831 i see, if for own consumption and the smiling top is not crucial, some of the key note may disregard. Ya, hardly find nowadays, may need to DIY or can use the same recipe by adding in some raisin. Good try and finger crossed ☺️

    Hi, is it ok to use medium protein flour? Also I don't like too sweet cake; can I reduce the sugar amount ? Waiting for your reply, thank you :)

      Yes, can use medium protein flour. I personally think it is not too sweet. Reducing the sugar amount will affect the smiling top. If smiling top is not important for own consumption, can reduce the sugar amount.
