Since there's no rising agents, all the air that got whipped into the meringue is what makes the cake so fluffy. It won't rise much past what you pour in. If you whisk it or mix too aggressively, you'll burst all the air bubbles and will be left with a tiny, not fluffy cake. I think this is also called an angel food cake :)
There’s no egg yolks in angel food cake, which actually rises quite a bit, but gets turned upside down to cool because it doesn’t have the same spongy structure as this one 😋

that would be nice but, because there would be so many layers and so much cream cheese, it would squish the sponge and it wouldn't be fluffy anymore. it'd be incredibly dense and probably wouldn't taste that nice because dense cake never tastes good
@@puppym_arcus all this cake is is an angel food cake with egg yolks added in. That and light sauces work best with this kind of cake. You don't want heavy butter cream or cream cheese frosting on this as it would make it too heavy. Berry sauces, glazes, creams and curds work best here as they compliment rather than contradict.
It makes me think of foam, one of my cats, the tabby one, loved tearing apart sponges and foam, and he was so naughty about stealing food, he’d have loved this. It’s a lovely-looking cake.

You can pick up steamers really cheap. I'd recommend it too, it helps keep flavour and all the nutrients in your veg. Also handy to have a couple of things cooking on the same hob because of the extra tiers in the pan. You can even use the bottom part to boil something else like peas.

Thank you for this recipe, it's good! I baked it in the oven for 50 mins at 300 degrees. I didn't have cake flour, I used the substitution with regular flour and cornstarch sifted it a couple times before adding it to the mixture. I used Nutella as frosting because I didn't have enough stuff to make frosting but sooo good! In my opinion, it's good plain but really light tasting like it needs frosting or whip cream and fruit. Definitely going to make this again! My kids enjoyed it. 😀

It's not hard but one thing you absolutely can't skimp on is being careful folding in the egg white mixture into the flour mixture. There's no baking powder to make it rise, it's all the air bubbles in the whipped egg whites. Fold it in gently until it's just incorporated, don't use a whisk or mixer.

Well this cake method that you just shown in this video is called a "chiffon cake" ... And yes they are very fluffy cakes. Traditionally baked in a water bath in an oven but the steaming method also works. So good for you.

Hi! Just for some advice, if you aren't gentle enough when folding in the meringue, it will deflate and the batter will be less puffy and smaller. On the other hand, it could also be that the eggs you are using are just smaller.

Everytime I follow an online tutorial it always looks like I never have as much batter as the video 😅 I always double online recipes because of that. I think it might be the camera is so up close, and they may be using smaller dishes than me.

You can remove 2 tablespoons of flour per cup, and replace with two tablespoons of corn starch as a quick cake flour subsitute.

Also if u have a large pot and metal colander then you have a steamer. Just put water In the pot to boil and place the colander in it with the lid on top. Boom you have a steamer.

If you don't tap it after pouring the battery in the mold it would be even fluffier. Because when you bang the mold like that your knocking out air from the batter. That's why the bottom ring of air pockets were so tight upon reveal. Just a thought

@@blueismylove3128 its not always helpful. sometimes they just type fast and spell something wrong because of it and the other person is being a smart ass. 99 percent of the time the word misspelled is a simple word obviously no one could fuck up.

You never know why someone misspelled a word, so if they really didn't know and you assume it was just a typo then they'll continue not knowing how to spell the word. If they did know, then no harm done. It really isn't that serious and is such an immature thing to get mad over. Stop acting like it's an attack on someone's livelihood. They weren't doing it to be an asshole or condescending.

@@jdroxford Yes I thought so. We didn't have self raising flour, so we used plain flour and baking powder and it was maybe a bit powdery, but other than that, it was good

When I saw this I thought this would work for the wedding cake, the rest can have cup cakes! I will try this when I get home.

I made it today, it takes 20 min in 200ºC heat
Also if u have a large pot and metal colander then you have a steamer.
Just put water In the pot to boil and place the colander in it with the lid on top. Boom you have a steamer.
20 minutes at 200 celcisus or 20 minutes 390 in Fahrenheit.

@@nahidasultana2938 I tried it today. While streaming, the cake was big and beautiful 😍. But after cooling down, it became small 🤧😭. It slightly smell egg, I think vanilla essence is a must.

If you don't tap it after pouring the battery in the mold it would be even fluffier. Because when you bang the mold like that your knocking out air from the batter. That's why the bottom ring of air pockets were so tight upon reveal. Just a thought

Steaming something is completely different from baking in an oven.

It might produce a dryer cake but you can make a perfectly moist chiffon cake in a regular oven. 2. It's called "No bake" and it's pretty popular, which is what the title makes it seem this is. I'm not a huge fan of no-bake cakes but I've made a few no-bake cheesecakes that turned out really nice.

If you add cream cheese then it becomes Japanese cheesecake, if you cook this on the stove then it becomes Japanese pancake, this recipe is really good!
