Sharing and making tonight thank you Edit: came out great I added some sweet potato and used less sugar in addition to the pumpkin. Still great and less sweeter than store bought and in a family of diabetics that's a blessing. Came out really big maybe go for an inch and a half dough balls.

Well I made the empanadas yesterday after procrastinating for a few days at attempting your recipe a a gifted pumpkin. A pleasant surprise indeed, very tasty and even got a compliment out of the 1st batch.
A few years ago I lived on an island with my grandma and we would go to a lot of parties, empanadas and custard would always be there and I lived the pumpkin ones! I’ll be trying to make these some time. Thanks for the recipe!

Once it's prepared it can last for a few day in the refrigerator. I used the remainder of mine after 4 days and it was even better than the first one :)

Try this one, I used this recipe for my Pineapple empanadas: 2 1/2 Cups of All-Purpose Flour One Cup of Butter (2 Sticks of Butter) One 8oz Block of Cream Cheese
Yes. I make mine different than shown here. But everything is so good. What I use is Maseca dough for homemade corn tortillas and a little bit of flour. Which can be used to make empanadas. Add some water in there and not to much of the flour or it will stick. I'd also buy a tortilla press to make it easier on your hands. This item can be found in a Mexican store near you. Also I like to get my family involved in helping me. Not only that but my kids like to help out in the kitchen. Take care and God bless you and your family. Instead of water, can you use milk? I also noticed you didn't let the dough rise
When using canned purée do you still do the sugar water step? Or just mix sugar and spice into purée?
Jump to the last step, add the spices to the puree. Saves a lot of time :)

Yes, that would save a lot of time. You can also try the recipe with the cream cheese, that one does not require yeast.

Can you use anise
In place of cloves?
Yes, you can add or take away spices.
Could other fillings be used?
1/2 teaspoon of nutmeg or ground cloves?
1/2 tsp ground cloves for the puree. If you are making your own puree, boil the pumpkin with the piloncillo, whole cloves and the cinnamon.

I used a large one, about the size of a jack o lantern. A small pumpkin would work great. I had to find another use for the other half.
My yeast is not ricing?
You may have used water that was to hot or the yeast is dead...
