- Hello my beautiful fam welcome back to my kitchen, today I’m going to share with you how to make the perfect, soft pumpkin empanadas! Let me tell you that I’m very proud of this recipe! I’m not a baker But I enjoy baking for my family specially for Lewis because this happens to be his favorite sweet bread, this recipe took a lot of wasted flour to get it to perfection 😅 but I’m very proud that I was able to do it and now I’m here sharing it with you all ! Ingredients:
4 cups all purpose flour
3/4 cups sugar
2 1/2 tsp all pumpkin spice
2 1/2 tsp instant yeast
4 tbsp vegetable shorting
1 egg at room temperature
1 1/4 cup warm water
1/2 tsp salt
Filling: you can use fresh pumpkin or
15 oz 100% pure pumpkin
3/4 cup brown sugar
1/2 tbsp all pumpkin spice
1/2 tbsp Mexican vanilla blend
1 serving of love 💕

Seven years ago, we moved from San Diego , CA to eastern Pennsylvania. Hard to find good Mexican food here. I’m so appreciative of your authentic recipes! They make me feel like I’m back home. I’ve never made, only bought, empanadas, and I’m looking forward to making these. Thanks for the videos and recipes. You’re one of my favorite TH-camrs. ❤️🌮🍻 P.S. Yes same here I have trouble finding all the ingredients for her recipes I wish they would carry some but I'll just have to get them from Amazon. Want to try her recipes they look delicious.
Another fun and easy baker tip, you can proof your dough without killing the yeast by placing it in a oven with the light left on till the dough doubles in size 😀 😉

my favorite are of cajeta and pineapple. I use a tortilla press to make it easier :)

To activate the yeast is 105 to 115 over 120 it starts killing the yeast & Try putting your dough in the microwave or oven off so it can rise. When I work with yeast dough That works for me & my dough always rises so Beautifully😍 .Ive never tried anything pumpkin only PSL & only from starbucks because else where 🤮. But Im 34 weeks preggo & i crave everything I see 🤤 especialy sweets lmao
Gaby Espinoza i guess it all depends on the yeast u using, the one I showed in the video requests to use between 120-130 😅 otherwise it just doesn’t work, but u can always do what works best and here in az we still have our AC on so in order for my dough to rise I had to use the heath from the oven 😅

Thank you for the tutorial. I knead for 15 min. resisting adding more flour until I couldn't resist anymore, I added a tablespoon and it worked out fine.

I made your empanadas recipe I cut it in half in measurements I didn't want so many ...and let me tell you my hubby loves them but I've never made them didn't know how...we've been married 42yrs and this is the first time I made them and let me tell you he loved them absolutely loved them buy cutting your recipe in half I got 6 empanadas perfect about...thank you so much for your video and recipe...❤

I just made these! ❤️❤️ I love your videos they are exactly what I need and I love how we get the angles because I can’t roll a tortilla to save my life!! We are military and since Texas is always far away I have had to learn to make everything! I love it!!
TIP: even though you say you don’t need more flour, toward the end of my kneading I did add like a tbsp of flour to the outside and it whipped it right into shape!! I always use Manteca to coat my wooden roller as well. Not much at all... it helps to not roll up!!

Authentic pumpkin empanadas. I’m stuck in Minnesota anode every time I try an empanada, in Minnesota, I’m disappointed. No I have the opportunity to make my own. 😋

Those empanadas look delish. Our family makes ours with anise seeds in the pumpkin and the dough. We don't use yeast just baking powder. I would like to try your recipe though. Can't wait til Autumn to make these. 😋 yummy
