Your empanadas remind me of these ones that are made in a bakery by the name of Canela’s in Crystal City, Texas,. If I’m not mistaken they’ve been around for over 50 years, I come from there but married and moved to Denver, CO. I MISS THEIR PAN DULCE, THE BEST EVER!!
I made these and they were delicious. I tweaked your recipe to be dairy free and did half sweet potatoes and half pumpkin then I used the piloncillo syrup for the glaze and they were delicious 😋 thank you for this great recipe!
Thank you for sharing this authentic recipe. I haven’t made it yet but I can tell it will be delicious. I’ve made warm cereal with summer squash using the same method to make your pumpkin. I would add cold milk and have it in the morning for a comfort meal on cold winter days. Your bread recipe is great. I look forward to enjoying my empanadas. God bless!

How long do you knead the dough In The end by hand? I've been doing it for a long time and mine isn't stretchy like that... Is that okay or do I keep going?
I don't like piloncillo. It's too strong. I use cinnamon, vanilla, brown sugar, anis, and yeast. In the Wheat Flour I use Dry Yeast as well as these spices.
where is the recipe? You call for the ingredients, but not how much of the dry ingredients!! Like how much of sugar, how much of butter, how much of spices....

If you use 30 oz of canned pumpkin instead of a whole pumpkin, assuming you would remove the Pioncillo and 2 cups of water?
When I use canned pumpkin, I add spices and brown sugar to add more flavor.

Mexican brown sugar. You can find it at more Mexican food stores. Usually come in a cone shape.
