Our neighbor gifted us a pumpkin for Halloween so I decided to make Empanadas for Christmas. My partner devoured most of them and asked for more. Getting ready to make a second batch for New Year. Ok, update: I did make the empanadas using your recipe. And they turned out delicious 😋. Started using my blender to soften puree but it was taking too long so I went the old fashioned way and used my bean masher instead. It worked like a charm. Other than that everything else worked out smoothly. Thank you once again for your amazing recipe.
@marcyinspired1442 the ingredients for peach empanadas, is it the same measurements ? I'm sure you don't use the pumpkin spice. Peach sounded really good, but my favorite is pumpkin for sure.
I also had lots of leftover pumpkin from the harvest season, so I tried this recipe yesterday for a school function and I received so many compliments! In my opinion, it's really the perfect recipe for empanadas (if you like the pie crust/turnover style, as opposed to the panaderia-style empanada). Thank you so much for posting this video! ❤️

And, I brought the second batch to my patents, my mom loves bakeing and couldn't stop talking about how good they are! Can the pumpkin turnovers be deep fried instead. Mother would deep fry hers-same as mincemeat empanadas, but I never took note of how she prepared the filling for deep fried pumpkin empanadas.

@@marcyinspired1442 I have a vegetable steamer and yes, I cut it into small enough pieces to fit. I leave it on for about 45 minutes, let it cool and the pumpkins slides right off without any burning, very succulent as well.

Well I made your recipe but mine didn't look as good as your but again this is my first time doing them my edges were a little to brown an they felt hard must be from the extra flour that I sprinkle on the board but the filling was good I also used a real pumpkin lest over from Halloween cooking on a electric stove an I just don't like them my favorite is cooking with gas 👋 Aloha
I hope you make them again because it always takes a little practice. And, of course, ovens vary, so maybe you can take them out a little sooner. I know what you mean about cooking on an electric stove versus a gas one. I learned to cook on a gas stove and didn't realize how great it was until now that I have an electric range. But we do what we can, right? Also, happy to hear you cooked your Halloween pumpkin. I always hate when people throw away perfectly good pumpkins when they're done decorating with them. I would say you can refrigerate and store them for about 5 days. But mine never last that long, so I'm erring on the side of caution.
