Homemade Fettuccine [ENGLISH]

  • We will prepare homemade egg pasta together, a typical Italian recipe, essential for preparing fettuccine, tagliatelle, ravioli but also many other types of pasta such as tortellini, lasagna and cannelloni. Making egg pasta is quite easy, you need simple ingredients. In fact, only eggs and flour will be needed to prepare our delicious pasta.
    Making egg pasta is really great fun, and the surprised look and delightful expressions of your guests will fill you with satisfaction. Most of us Italians were literally grown up lulled by the smell of fettuccine and tomato sauce on Sunday mornings.
    Homemade pasta is a wonderful tradition that should never be lost. So, let's do it, it's so easy!
    Just have the patience to knead and roll out the dough, but it is absolutely worth it.
    INGREDIENTS
    1 egg for each diner + 1 for the table (4 people, 5 eggs)
    350 gr Type 1 flour
    100 gr reground semolina flour
    We put the flour on the work surface. We arrange it like a mountain with a large hole in the center. In Italy we call it 'Fountain', as the Trevi Fountain.
    I use a combination of type 1 flour and reground semolina, but type 0 or even type 00 flour alone can work.
    We break the eggs into a separate container and then pour them all together in the center of the flour fountain. My advice, handed down as a secret to be jealously guarded by my grandmother, is to never break the eggs directly in the flour fountain.
    With a fork we beat the eggs, trying to make the flour absorb little by little.
    Now let's start kneading with your hands, trying to absorb all the flour. The dough must be rather hard, we have to make a little effort in working it on the work surface. I suggest you to work the dough for a long time, at least for 5-6 minutes and to use the palms of your hands to knead, just as you can see in the video.
    When our dough is ready, with a spatula draw a cross on it, cover it with a tea towel and let it rest at room temperature. After the necessary time, the dough will be softer, and we will begin to roll it out with a rolling pin. Flour the work surface well and roll out the dough, trying to obtain a round sheet. If we see that the pastry sticks to the rolling pin, add more flour, distributing it with your hands over the entire surface of the pastry.
    When our sheet is ready, I advise you to let it rest for about 10 minutes, covered with a cloth.
    To prepare the fettuccine, fold and roll the pasta sheet in half, do the same with the other half, until the two edges are close together. Now with a well-sharpened knife we start cutting the noodles, making strips of about ½ cm wide. We can choose the thickness of the noodle and do not worry if they are not all the same, they will only be more beautiful and even tastier!
    Fettuccine can be cooked immediately in abundant salted water, or we can dry them to keep them over time. Once dried, the noodles can be kept for a month!
