Roman tripe (ancient and tasty specialty of Italian cuisine)

  • 500/600 g of pre-cooked tripe
    250 g peeled
    1 medium carrot
    1 onion
    1 stick of celery
    1 clove of garlic
    1 chilli
    Salt to taste.
    Olive oil to taste
    2 cloves
    1 sprig of fresh Roman mint
    2 or 3 tablespoons of black skinned pecorino romano
    Boil the tripe in abundant salted water for 10/15 minutes. Add the two cloves to perfume the water. Drain it well.
    Pour a dash of oil into a high-sided pan. Add the crushed poached garlic and 1 dried chilli (fresh chilli could be much spicier, you have to adjust according to your experience)
    Prepare the fried carrot, onion and celery and add it to the pan. Let it brown for a couple of minutes and add the drained tripe. Cook over low heat until the water has completely withdrawn. At this point, blend with a glass of white wine and, continuing to cook over low heat, allow the wine to evaporate completely. Add the peeled tomatoes coarsely crushed with your hands, add salt and cook until the tripe is soft and not chewy (about an hour), adding, if necessary, a little water to keep it from drying out too much. When cooked, turn off the heat, add the grated pecorino and a few chopped mint leaves. Serve hot

    Buon pomeriggio non amo molto la trippa ma è comunque una buona ricetta di tradizione complimenti👍🏻

    Ottima ricetta, la faccio anche io allo stesso modo. È apprezzata da chi la mangia, ma a me non piace nemmeno un po'.....
