Hi Tim, I'm old enough to remember when lamb was a meat staple, Sunday roasts, and chops during the week and chicken was a luxury! Shanks are probably the best part of a lamb as wings are for a chook. You've done a great job there. The only thing I could recommend is deglazing the frypan with wine and adding that to the camp oven to get all those caramelised bits back in

Your videos are always a treat! I always enjoy the tips and tricks that make campfire cooking more successful. As for slow cooking in a dutch oven, I like to bury my oven in the ground with hot coals. That way I don't have to babysit it and I can spend the day fishing or hiking and come back to camp with dinner ready.

Nice cookup young felah,l like to put a touch of milk and garlic pepper salt in the mash and if your a pro a bit of sliced onion,talking about cooking gear where abouts do you store your new steamer.

Great video mate I now have another recipe to add to the to do list on the next trip. Steaming the veges is the way to go and I add a little bit of cream to the spuds when I am mashing them up. Milk or even powdered milk is ok if you haven't got anything else just adds that little bit extra. Love your channel and just subscribed cheers mate

I just had this at home a few nights ago, the only difference is that I smoked the shanks for an hour before braising them, DEEEEEEEEEEELISH. but i have to say you had some mighty shanks!

Love your videos Tim and look forward to them coming out. 3 hours might be the bomb. We just did lamb shanks in camp oven over 2 hours and we reckon they could have stayed on another half hour or so as the meat didn’t fall off the bone though was cooked through.

Brilliant Tim! You've given me a lot more confidence to cook using my camp oven. My one time, I must have used too many coals at the base, and well, the roast was burnt to the living daylights and the consistency of charcoal - completely unedible. I do like how you showed you use coals on the base once and twice on the lid! Great to know, thank you! Did it take you much hit-and-miss over the years to gain these skills?
Gday mate, It takes time for everyone to get use to cooking in a camp oven. Specially this time without the trivet in the bottom. It helps not replacing the bottom coals so you don’t burn the bottom of the meal inside. Once you get your cook times right, you will really enjoy cooking in your camp oven so much more. @timbates4wdadventures Tim mate it is sensational, I cooked it the same time. Close to the fire for the first hr and a half, then the next I sat it back a tad. It's just awesome. Also, scallop potatoes and chicken loaf.

Hi Tim. Was watching this video for the third time, and the wife commented that it was a big meal for one person. This prompted a discussion as to whether you had a camera guy with you? I noticed on your video on Mt Buller(?) solo camp that the camera seemed to track you as you walked along? Going to have to try this recipe.

Get a small tin to fit on your steamer rack or place it in the pot and half fill with water half way up the tin and get some fruit loaf cut up into small chunks or just cut in half slices ad butter to each side mix up same milk and egg and and flavours you like pour over the loaf mix and bake . It heavenly with same full cream or ice cream. Hope you try this mate. Cheers Donny

Nice cookup young felah,l like to put a touch of milk and garlic pepper salt in the mash and if your a pro a bit of sliced onion,talking about cooking gear where abouts do you store your new steamer.

Great video mate I now have another recipe to add to the to do list on the next trip. Steaming the veges is the way to go and I add a little bit of cream to the spuds when I am mashing them up. Milk or even powdered milk is ok if you haven't got anything else just adds that little bit extra. Love your channel and just subscribed cheers mate

I just had this at home a few nights ago, the only difference is that I smoked the shanks for an hour before braising them, DEEEEEEEEEEELISH. but i have to say you had some mighty shanks!

3 hours might be the bomb. We just did lamb shanks in camp oven over 2 hours and we reckon they could have stayed on another half hour or so as the meat didn’t fall off the bone though was cooked through.

Yeah mate. If you have the time to push the cooking time out to 3 hours, you’ll notice a big difference in the end cook up result.

Brilliant Tim! You've given me a lot more confidence to cook using my camp oven. My one time, I must have used too many coals at the base, and well, the roast was burnt to the living daylights and the consistency of charcoal - completely unedible. I do like how you showed you use coals on the base once and twice on the lid! Great to know, thank you! Did it take you much hit-and-miss over the years to gain these skills?

It takes time for everyone to get use to cooking in a camp oven.
Specially this time without the trivet in the bottom. It helps not replacing the bottom coals so you don’t burn the bottom of the meal inside.
Once you get your cook times right, you will really enjoy cooking in your camp oven so much more.

Close to the fire for the first hr and a half, then the next I sat it back a tad.
It's just awesome.
Also, scallop potatoes and chicken loaf.

Hi Tim. Was watching this video for the third time, and the wife commented that it was a big meal for one person. This prompted a discussion as to whether you had a camera guy with you? I noticed on your video on Mt Buller(?) solo camp that the camera seemed to track you as you walked along? Going to have to try this recipe.

Theres one high country huts video i had a camera guy on that one.
Not sure which video you have mentioned with the tracking.
The lamb shank video i filmed all myself and dont worry i finished the lot. Lol

Get a small tin to fit on your steamer rack or place it in the pot and half fill with water half way up the tin and get some fruit loaf cut up into small chunks or just cut in half slices ad butter to each side mix up same milk and egg and and flavours you like pour over the loaf mix and bake . It heavenly with same full cream or ice cream. Hope you try this mate. Cheers Donny
