Yet again you inspired me to lift my game. As you are a fan of garlic l have a couple of suggestions for you; * Have you ever thought about using a garlic press and fresh garlic, a little bit more messing around but in my opinion worth it. *Try roasting a whole head of garlic, and then eat the roasted garlic with olive oil and rock salt. Game changer IMHO. Thanks for all the effort you go to. Looking forward to some more time lapses.

Got my first camp oven this week. Your excitement and joy for cooking over fire has got me excited to get to the bush and get cooking. Hello from Alberta Canada.

My tip for steamed vegies, cut them up, double wrap in foil with a knob a butter, a little water (20-30mls), salt/pepper and toss on the coals, turn 2 or 3 times, take about 10-15 mins for perfect steamed vegies. I cut and wrap them before i leave home and keep them in the esky until Im ready to cook them.
If you can cook it at home and you have the right gear, you can cook it any where. I've done so many roasts in the bush i've lost count. Roast pork shoulder with the works is my favourite in the winter. I've also hot smoked Trout in the camp oven before, give that a go next time you are up the Ovens chasing a Brownie. Great work Tim. Hey Tim have you tried a butterflied lamb. We recently discovered them from woolys or coles with different marinaids they are great value a lot less fat than say a leg of lamb also has no bone , would never buy a traditional leg of lamb again anyway if you haven't already tried it give it a go.
