    Top effort Tim! One trick I use is just before starting the cook, pour boiling water over the fat. Starts the cooking process and opens the score marks. Pat dry with a paper towel Then re-salt and re-oil and away you go!

    Looks good I love cooking in my camp ovens but I cook on tables with charcoal so I don't have to bend and stoop in my old age just found you channel and enjoying it keep up the good work

    Just going thru some of your older cookups and I love his idea of a camp fire sand area you have got for your oven cooking. I am building a new bbq area and I think I'll do something similar but I'm a bit pushed for space. I could probably do a smaller version.

    Nice work Tim ... Looked delicious mate ... I also put some half cut onions under the pork on top of the trivet, imparts a sublime roast onion flavour and keeps the pork a wee bit more moist and off the sometimes harsh heat of the coals .... Also a couple of cans of cider poured into the oven can keep the pork nice and moist and stops it drying out ..... If you find the crackling isn't quite as good as you want at the end of cooking, especially if your fire has been a wee bit cooler, you can set alight to a heap of finely chopped kindling sticks on the top of the oven, and keep feeding them on until you get a high heat and it will give the right amount of heat to produce the delicious crackling we all know and love...

      I have a trivet in the bottom of my camp oven.
      They are great for keeping what ever it is you're cooking up off the bottom, so it doesn't burn.

    Looks amazing, a bit wary about heating food in the tin tho. The cans have a coating inside to preserve the shelf life of the food. Apparel it’s toxic if heated into the food. 😮

      I don’t generally put any liquid in the bottom.
      Just the juice that came out of the meat is enough to stop it drying out.

    Hey, I just wanted to know if u reckon a stock 2020 Toyota sr5 hilux can do the Victorian High country tracks in Dargo, the hilux only has mud terrain tyres and I was wondering of your opinion

    G'Day Batesy! Love it, that's such a brilliant roast pork, I can't even cook that well in the oven in the kitchen at home!!
    Silly question though, and I apologise in advance if you have covered this. You cook with a cast iron camp oven. Is there any difference to using a spun steel camp oven? Not sure if there would be heat differences etc. I'd imagine a spun steel oven would heat up and cool quicker than cast steel which I reckon would be more gentle and consistent. If you have any hints or tips for those of us with spun steel I'd love to hear! Cheers!

      It’s certainly a bit more fiddly cooking in the camp oven , than the home kitchen oven.
      But, once you get the camp oven sorted out, it’s just the best way of cooking.
      No question is a silly one mate.
      I’ve not used a spun steel camp oven.
      I’d be keen some day to try one out, and see what cooking times might happen compared to the cast iron camp oven.

      Hi Mr H .... it's mainly horses for courses .... cast iron is heavy ..... spun steel is light ... They will heat up and retain heat at different rates but at the end of the day its camp cooking .... It's all about you and how you approach the cooking. I actually use a huge cast aluminium alloy camp oven when we have large family camping trips .... Pretty sure it would be around around 20L in size ...It was gifted to me by my father in law who was an ex Head Stockman from Western Queensland.

    Nice cook up young felah,but l got one on you with me wood oven installed in my garage l cooked up a lamb roast with spuds and pumpkin on Sunday,only made one mistake no gravey just mint sauce. Next Sunday l looking at roast chicken,l might try making me own stuffing and gravey. Its not a easy life being a senior cooking,4wheeling,camping, and watching everyone working.😁😊

    mmmm...5 food groups, pork, pork crackling, pork & veg, pork & gravy and ummmmmm bacon. Wrote a poem 'bout you & camping in Timbuktu... Tim & I camping went, found three girls in a two man tent, had no idea of what to do, so I bucked one & Timbuktu.😆

    Have you tried, stuff the roast with can peaches and garlic. Place some in the bottom. need the tin foil trick. Then, when cooked, remove roast, add red wine and reduce the liquid and break up the peaches. Now thats your gravy. Crackle will become second best.

    Doing my first roast tonight in my Dutch oven. Happened upon this while searching for cook times. You should try inserting garlic into the roast. My grandmother's ole trick. And serve with a good applesauce for dipping. Yeah mate, I'm American.

    Roast looks great! I've wondered how to do that in a Dutch over. However, I cringed when you put that can of veggies directly in the coals because canned goods tend to have plastic liners, and that liner melted and left you with veggies marinated in melted plastic and plastic chemicals. :)

      I’ve cooked tin veggies for years.
      Now I steam them in my home made veggie steamer.
      Great cook up.

      Yeah im not all that keen on apple sauce on roast pork.
      Just a personal choice i guess.

    My mate got horrible food poisoning from putting a can directly in the coles. It melts the plastic lining off the inside of the can & mixes with food good luck

      That’s no good at all mate.
      I’ve done that for years.
      But, now I’m using steam veggie packets in boiling water. Really good.
