If your using premade gravy, just fill the billy up with water, get it boiling, the place the whole unopened packet in and heat it up in the packet. Saves washing the billy up afterwards.

with not being a huge camper I put cooking a pot roast for a long time until a friend done a piece of beef in a pot and I decided to give it a try about 6 months back, I throw in potatoes, corn on the cob, pumpkin and carrots, the family loves it and now it's become a weekend thing now, I love how simple it is and that you don't have to keep an eye on it constantly, the veggies come out soft and cooked perfectly, mix in some gravy powder with whats left in the bottom of the pot and your set :D great vid by the way

My favourite is throw half a doz big chops, 1/4 cup of water and cut in half potatoes in the camp oven and cook for an hour over slow heat, then add soft vegies, carrots, pumpkin , mushrooms and a tub of cream. ( I know its sounding crazy) cook 3/4 hour. Then add peas and corn and grated cheese over the top, cook for another 15 min and your done. Its bloody beautiful!

Had my first crack at doing a roast in the camp oven on the weekend Batesy. I used a fair bit of oil on the meat, plus a few herbs and spices. It left a nice bit of juice in the bowl so I just put my veggies through that before putting them in the oven. No one died and the results were pretty good. I'm guessing it's OK to mix the meat marinade and the veggie prior to cooking. Saved a bit washing up and a plastic bag also.

Br H That’s ace mate. I’m glad you’re enjoying the videos I’m making. Plenty more coming through. I hope we can get back out camping soon. The best way to wash your camp oven after it’s been used, is half fill with water, out the lid back on and place back in the fire. Boil it up and repeat if needed. Never wash with soapy water. The next meal you cook, will taste like soap suds. Lol. Once the oven is clean and cooled down. Wipe some cooking oil around the inside, so I doesn’t rust. Then it’s ready for next time. Looks good. The camp oven is a traditional outdoor cooking method here in Texas. Biscuits, cornbread, Pan DeCampo and all kinds of meat roasts. I like your heat control technique with no trivet. The sign of a true master. Do you make any breads? I enjoyed the video.

Best dinner I ever had was Lamb and veg in a camp oven, on the side of a hill, at the end of a trail cut in for hanging long span power cables in the VIC high country. Site was so narrow, I had to do a 10+ point U-turn to get back down from the end of a trail. Fun times.

G'day Paul, Once i place a couple of shovels of coals on the base. I only top up the coals on the lid, seems to work really well. Just keep the camp oven back from the fire itself. That way you can control to cooking a lot better. Hope that helps mate. Thanks for your reply Cheers Tim.

Hi Tim, love your posts especially in the high country. Can you please list your best spots so that others can follow your journey please. Regarding cooking, firstly well done its great, I note 2 things to suggest...sincerely without wishing to detract....... First is that when you turn the camp oven 1/4 turn, perhaps you could also turn the lid 1/4 turn in the opposite direction to again alleviate hot spots for the top. Secondly I received advice to never ever cook in a billy that had turned over edges (like a paint can) only ever use a smooth sided billy that will not catch food scraps in the crease at the base...nb its ok for thin liquids i.e. tea etc but for food particles not a good situation. G'day Paul, I always appreciate feedback from people. With turning the lid of the camp oven in the other direction, isn't something that i would worry about doing. I have been cooking in camp ovens for so many years, and thats how I've always done it . With the billys. Mine are smooth on the inside. The roll edge is at the top and on the outside. Again. I have been using that same design and style billy for well over 45years, when i started using them in Scouts, and I've never heard someone say not to use billys to cook food in for the reasons you mentioned. Off all the people i go camping with, i don't ever see anyone even using a billy to cook in. Old habits die hard i reckon. I love using them. Thanks again for your reply and feedback mate. Nice meal always a must have on long camp stay.I used to do 45 mins meat add vegies another 45 mins but will give slower method a go too. A fire pit like yours could be on the cards miss camp fire cooking. You might need sub titles Tim if you keep sampling and talking don't blame you though cheers

G'day Ryan, No question mate is a stupid one. I replace the top coals about every 20-25min. Just to keep that heat going inside the oven. If im doing a long cook up over 3-4 hours, then i will replace the bottom coals as well. Thanks for your reply mate. Cheers Tim.

Good onya mate, nothing like a good camp oven roast. One of my favourites is beef cheeks in red wine slow cooked in the camp oven served on a bed of creamy mash potatoes with asparagus and Brussel sprouts sautéed in butter on the side. I generally add roughly chopped carrot, brown onion and celery in with the wine with some bay leaves, thyme and garlic then make a gravy out of it at the end to pour over the cheeks and mash.

Anyone got a way to make "real" gravy (no packet mix, maybe a stock cube) actually in the camp oven while it's cooking? Would it spoil the lamb to add water about 20 minutes before done? Maybe have a trivet in there to hold the meat and veggies off the floor then when you add the water you get the dripping an' all in there?
I tried it and it’s a big fail .. I did everything u showed me and we ended up sitting campmoven into fire pit just to make sure it cooked .we did a 3 hour slow cook .but hey it was my first cook in camp oven so just keep learning

My favourite is throw half a doz big chops, 1/4 cup of water and cut in half potatoes in the camp oven and cook for an hour over slow heat, then add soft vegies, carrots, pumpkin , mushrooms and a tub of cream. ( I know its sounding crazy) cook 3/4 hour. Then add peas and corn and grated cheese over the top, cook for another 15 min and your done. Its bloody beautiful!

Had my first crack at doing a roast in the camp oven on the weekend Batesy. I used a fair bit of oil on the meat, plus a few herbs and spices. It left a nice bit of juice in the bowl so I just put my veggies through that before putting them in the oven.
No one died and the results were pretty good. I'm guessing it's OK to mix the meat marinade and the veggie prior to cooking. Saved a bit washing up and a plastic bag also.

The best way to wash your camp oven after it’s been used, is half fill with water, out the lid back on and place back in the fire. Boil it up and repeat if needed.
Never wash with soapy water. The next meal you cook, will taste like soap suds. Lol.
Once the oven is clean and cooled down. Wipe some cooking oil around the inside, so I doesn’t rust.
Then it’s ready for next time.

Looks good. The camp oven is a traditional outdoor cooking method here in Texas. Biscuits, cornbread, Pan DeCampo and all kinds of meat roasts. I like your heat control technique with no trivet. The sign of a true master. Do you make any breads? I enjoyed the video.

Best dinner I ever had was Lamb and veg in a camp oven, on the side of a hill, at the end of a trail cut in for hanging long span power cables in the VIC high country. Site was so narrow, I had to do a 10+ point U-turn to get back down from the end of a trail. Fun times.

Once i place a couple of shovels of coals on the base.
I only top up the coals on the lid, seems to work really well.
Just keep the camp oven back from the fire itself. That way you can control to cooking a lot better.

Can you please list your best spots so that others can follow your journey please.
Regarding cooking, firstly well done its great, I note 2 things to suggest...sincerely without wishing to detract.......
First is that when you turn the camp oven 1/4 turn, perhaps you could also turn the lid 1/4 turn in the opposite direction to again alleviate hot spots for the top.
Secondly I received advice to never ever cook in a billy that had turned over edges (like a paint can) only ever use a smooth sided billy that will not catch food scraps in the crease at the base...nb its ok for thin liquids i.e. tea etc but for food particles not a good situation.

With turning the lid of the camp oven in the other direction, isn't something that i would worry about doing.
I have been cooking in camp ovens for so many years, and thats how I've always done it .
With the billys. Mine are smooth on the inside. The roll edge is at the top and on the outside.
Again. I have been using that same design and style billy for well over 45years, when i started using them in Scouts, and I've never heard someone say not to use billys to cook food in for the reasons you mentioned.
Off all the people i go camping with, i don't ever see anyone even using a billy to cook in. Old habits die hard i reckon. I love using them.

I did in slow cooked but the coals didn’t heat well so ended up having to put whole camp oven in fire for last half hour
Always cooked casseroles in the camp oven, even at home on the stove, give me a camp oven any day over a slow cooker,

Nice meal always a must have on long camp stay.I used to do 45 mins meat add vegies another 45 mins but will give slower method a go too. A fire pit like yours could be on the cards miss camp fire cooking. You might need sub titles Tim if you keep sampling and talking don't blame you though cheers

No question mate is a stupid one.
I replace the top coals about every 20-25min. Just to keep that heat going inside the oven.
If im doing a long cook up over 3-4 hours, then i will replace the bottom coals as well.

Good onya mate, nothing like a good camp oven roast. One of my favourites is beef cheeks in red wine slow cooked in the camp oven served on a bed of creamy mash potatoes with asparagus and Brussel sprouts sautéed in butter on the side. I generally add roughly chopped carrot, brown onion and celery in with the wine with some bay leaves, thyme and garlic then make a gravy out of it at the end to pour over the cheeks and mash.

Anyone got a way to make "real" gravy (no packet mix, maybe a stock cube) actually in the camp oven while it's cooking? Would it spoil the lamb to add water about 20 minutes before done? Maybe have a trivet in there to hold the meat and veggies off the floor then when you add the water you get the dripping an' all in there?
Why does my gravy taste like paint primer and rust though? Lol! Kidding.
