    Ingredients and Measurements:
    For the batch we made:
    4 lb. currants
    4 lb. raisins
    4 lb. dried prunes
    2 lb. maraschino or glace cherries
    1/2-1 cup mixed peel (OPTIONAL)
    2 and 1/2 (2.5) 750 mL bottles of red wine
    1/2 of a 750 mL bottle of rum of your choice
    To make a smaller batch of fruits:
    1 lb. raisins
    1 lb currants
    1 lb dried prunes
    1 lb maraschino cherries/glace cherries
    1/3 cup mixed peel (OPTIONAL)
    (1) 750 mL bottle red wine
    1/2 cup rum of your choice

    Blend and soak has always been the way for me!!! I been soaking for years and just top off accordingly

      @@matthewsguyanesecooking4601 Hi Matthew I would soak my fruits in any fruit juice of your choice i use orange juice soaked your fruits for a few hours then chopped your fruits to your preference I would beat my sugar and butter until fluffy i would add my flour almond or vanilla extract my cinnamon nutmeg add milk i use evaporated milk i don’t use no eggs or alcohol because there are vegetarian people in my house mixed everything together add your browning mix well and bake it’s very simple you can even add chopped almonds or cashews nuts or any nuts or your choice that’s it Matthew bye.

    I bought dates as well as raisins and cherries. I also bought walnuts. Obviously I didn’t know what I was doing🤣🤣🤣I only have three weeks so I don’t know if I should stew the fruit first. Everyone has different videos. I’m very worried about how to sterilize my pickle jar🤣

      No need to stew the fruits, just let them soak for the couple of weeks. In my opinion you cook down the fruits too much and some people cook it with alcohol (which cooks out the alcohol flavor). Trust me you’ll have a delicious black cake with just soaking a couple weeks. And the fruits you bought plus walnuts will be perfect. Add the walnuts when you go to mix, not while soaking.

      Well,a friend of mine told me that you could have a potent fruitcake by not soaking the fruit at all.She just makes the cake with the fruit as usual,then she drowns the cake in rum.That sounds like a solid plan to me.I made fruitcake the day after Christmas and boiled the fruit in water.Then I blended some of the fruit with rum. Used the rest of the boiled fruit and the blended fruit in my batter and poured rum over the cake after it was baked.I burnt the cake.😂😂Anyway,I wrapped the baby in cellophane wrap,and before I cut it,I watered the cake with more rum.When I cut a slice,I watered it with more rum (cause you know you have to water the cake with rum multiple times).Someone who had it was happy about the potency of the rum and how moist the cake was.When I make more fruitcake mix tonight,I will soak the stewed fruit in alcohol overnight and make the cake tomorrow.Watering will still happen.

    Thank you so much for sharing. This makes it so much easier. With the smaller batch of dried fruits how much eggs, flour, baking powder and other ingredients would I need to mix together for the perfect cake? Thanks again.. Xoxo

      I will be releasing measurements when I make the actual cake next week. But the smaller batch will make about 1-2 cakes.

    I usually soak mines whole an when Iam ready to bake then I blend it, but this method looks way better

      You can definitely do it that way. I like doing it this way because it cuts down on time when I go to bake the cakes.

      You can use grape juice, non alcoholic wines (I believe they make a few), malta, or a mixture of fruit juices if you wish. If you use this to soak the fruits, leave the mixture in the fridge. If you leave it out, the fruits will spoil.

    Hi Matthew, I just soaked my fruits. I soaked mine with a mixture of sparkling grape wine and grape juice since I don't use alcohol. I'll be using the mixture next Friday. My question is, should I leave it outside? Or should I keep in the refrigerator till then? Thanks

      Leave in the fridge. It spoils without alcohol

    What type of red wine do you use or recommend?. I can't find the usual cherry brandy on Liberty. The version now taste like chemicals. Have you ever used port wine to soak fruits?

      We use any type of red wine (honestly speaking, you can use any cheap bottle of red wine). We usually use port wine to soak the fruits and cake when it is done. I have heard that the cherry brandy in the states does taste a bit artificial.

      It varies for sure. I put pounds so that you can use when buying the packages of fruits in the store

      I think this was a random brand. You can use anything. We use port sometimes. Any wine you’d drink you can use
