I just made this and it it came out perfect. I didn't have unsalted butter so I used I can't believe it's not butter and left out the salt. Thank you for sharing 💕
Hi Matthew, I tired Demerara sugar as I don’t use white sugar anymore and substitute the oil with olive. My butter and sugar does not form the fluffy cream as it usually does in my mixer. Should I use coconut oil vs olive oil? Also the Demerara sugar will not dissolve.

omg this looks so good, however when I attempted it and baked it, it tastes eggy and oily and little sugar...not sure what happened. but all the other recipes go well usually 😢...maybe the recipe needs more flour and sugar to it
Practice makes perfect with baking. Make sure the measurements are proper and that everything is room temperature when beating it together. The key is to mix the butter and sugar very well until fluffy and the sugar dissolves
Don't omit the oil or else it will not be this fluffy and airy. If you want to get a denser cake and use the butter then you would use 2 sticks of butter
I’m having the same issue, made this twice tonight and both had sinking middles I usually love your recipes as they’re all a hit for me. First attempt at this, I forgot to put the water in the bottom of the oven so 15mins into baking I moved the cake up to put the water. I figured this is what made it sink in the middle so I tried again. I followed all your steps - speed to use, time to beat the mixture etc. And everything looked amazing, even my swirls were perfect. It baked well, raised nicely and even had the clean toothpick result. By the time it cooled, the middle caved in AGAIN and we barely got edible ends 😢 Any tips other than opening too soon or overbeating, because I did neither of these the second time and the middle dropped in and resulted in a puddle texture 😢

Yeah the Demerara doesn't dissolve well for this cake. And you can definitely try the coconut oil, it may be a bit heavier though.
