How to soak fruits for Christmas Black Rum Cake. (Stewed, Boiled Fruits)

  • This recipe of Stewed Fruits is the way to go if you are planning on bake Christmas Black, Fruit Cake.
    Loads of spices, tons of flavors.
    *Ingredients*
    1 1b Currant
    1 1b Raisins
    1 1b prunes (remove seeds and cut if half)
    1/2 1b cherries
    (Any other fruits of your desire)
    3 bay leaves
    2 cinnamon stick
    1/2 tbs ground cinnamon
    1 tsp mix spice
    1 tbsp vanilla essence
    1 bottle rum
    1 bottle cherry brandy or (wine of your choice)
    Boil fruits for 1 1/2 - 2 hours under the lowest heat, check within that time frame add more water if needed.
    Allow to cool, pour in tight lid container along with Rum and Wine, just enough to cover the fruits, allow to soak for at least a day before baking.
    Please Note: You could slightly blend fruits after its cooled down, then soak or you could blend on the day of baking.
    (Remove Bay Leaves and Cinnamon Stick)

    I had a quick doubt, instead of boiling for 2 hours, can I pressure cook the fruits for 20 mins?

      You can cook for 1 hour instead of 2
      Not sure about the pressure cooker

      Hi Tayla, yes you could, but you could also do it the easier way, where you add all your fruits to the container, pour your favorite rum & wine until the fruits are fully covered.
      Let that sit until next year when you are ready to bake, the alcohol will preserve the fruits having them well soaked and nice.

    If I choose not to simmer but just to marinate for a few months, should I bother with the bay leaves or cinnamon sticks?
    And does your 'mixed spice" come with a more specific name such as..." Rum cake spice mix" and who makes it? Thanks.

      Rum cake mix spice is just as good, even pumpkin spice would be fine
      If you are going to marinate/ soak for months, yes the cinnamon sticks and bay leaves should be excluded.

      No .. It’s a mixture of, gloves, cinnamon, nutmeg, mace, allspice, ginger and coriander.

    Is it a must that its boiled then put to soak or it can just be put to soak from now and be ready to use for christmas???

      Fruits need to be soak in alcohol preferably brandy, rum, or wine for at least 1 month up to a year before baking, the longer the fruits are soaked the better.

      Half and half, enough to cover the stewed fruits.
      Remember the alcohol should be added after stewing.

      Mace is the soft covering of the nutmeg, (not it’s outer shell) It’s gives a similar flavor of the nutmeg.
      Where did you see the ingredient mace though?

      Yes it’s similar to the Chinese Five Spice but I would not use that in baking

      If you want a similar blend, it's close to'' pumpkin pie spice'', spice cake, ginger bread, or apple pie. If you leave out mace it wouldn't be noticeable.

      I think a sweet red dessert wine or what they call a fortified wine works the best.
