The molasses is a great idea. I'll be trying that very soon. Your pie already looks top notch but you might try adding an egg yolk to the 2 eggs. You won't believe how creamy it makes it.😊

We have a traditional pumpkin pie recipe that we use every year. It was handed down from the family to the family. Never, under any circumstance, would we add cloves. However, I do want to try this same recipe with either molasses or brown sugar. We have our family pie crust that has also been handed down. You keep talking about this Pillsbury pie crust. You know what, I'm going to try it. If you say it's good, I'm sure it's good. The easier the better!

Ms. Melissa, my Mamaw would scatter a handful of dark chocolate chips on top of the pie fresh from the oven and let it sit for 2 minutes. Then she'd spread them with her offset spatula over the surface and pop the thing in the fridge. That is a WONDERFUL flavor combination (plus it blows your guests away) and might help you to enjoy a sliver of pumpkin pie!

I just cooked to pie pumpkins yesterday. Make enough 2 pies with 6 Oz of puree. I enjoyed making my puree . Cooked in my instant pot with a cup of water. Took out and no wasting the flesh. It was so easy. The inside you took out the seeds then I twirled the strings like spaghetti. Smashed till smooth then put into the strainer to get liquid out. Very little mess. Love pumpkin pie.
I am one of those people who will bake my own homegrown pumpkin to use for pies, pumpkin rolls, pumpkin bread and cookies. I don't care for canned pumpkin because I use a special pumpkin called a Seminole pumpkin that dates back to the Seminole Indians and probably hundreds of years before settlers found them growing up trees in Florida. It is a long storing pumpkin that seldom gets over 5 lbs. and the flavor is amazing.
You made me a little nervous when you talked quite a while after pouring the filling in the pie shell before putting it directly in the oven. My Mother said the reason for the higher temperature was to quickly start the cooking of the filling so the bottom of the pie shell was not soggy. I bake mine at 425 for 15 min. Then at 350 for 45 minutes or slightly longer till knife comes out clean.
There are some differences between your recipe and mine. I don't put Allspice and molasses in mine and use only one egg. I use cinnamon, ginger, cloves and sometimes nutmeg. Also my mom taught me to heat up the pumpkin mixture until it starts to bubble, then put it into the pie shell and bake for 55 to 60 minutes at 350°.
I listened to this even though I saw the Libby's Pumpkin. I watched until the molasses. Oops! I have used the Libby's recipe (original) for over 35 years, and I am not changing now. Variety is the spice of life, but some things I don't budge on. PS I am older than you. I love your videos, and how you explain everything so clearly and completely. I have about 7 of your recipes that I want to try. And I am sure there are plenty more that I haven't seen yet that I will want to try.

I’m going to use this recipe instead of the one on the can! Sounds yummy! And just a suggestion…instead of the can whipping cream I make my own. I beat heavy whipping cream with some brown sugar instead of white sugar. It really does enhance the taste of the pumpkin pie. Try it sometime. 😊
Molasses is a must! My fave pie! My great grandmother taught me to add it. 3 T when making a 2 pie recipe. The cloves are also great! She always sprinkled it on top of the pie before baking. I do too.

The pumpkin pie I make is easy also. I do the crust the same as you, but my filling is just a little easier. I use one can of sweetened condensed milk, one can of libbys pumpkin, dash. Salt, and 2eggs, 2tsp of pumpkin pie spices. I bake it the same way as you did. When you use sweetened condensed milk no need for sugar. It is one of the easiest recipes to make and it's good.
Im from Canada 🇨🇦 nd our Thanksgiving is in 1 month...I have all my fixings for 2 pumpkin pies...We'll eat 1, the other will go in the freezer to eat another time...Pumpkin is and has always been my favourite and I like it cold with a bit of whipped cream...I always look forward to them.
My grandmother would heat molasses in a sauce pan then put a good pinch of baking soda in the molasses causing them to foam up. She would pour this over buttered biscuits. Delicious

I make sweet potatoe pies. Maybe Melissa would like that better. Its a little sweeter and so delicious. But i have two sons who absolutely have to have pumpkin pie. So i always make one for them. Whats nice about the sweet potatoe pie is you use fresh sweet potatoes. Not from a can. It makes a huge difference.😊😊
We’re lucky here in Canada we have Tenderflake brand pie shells and deep dish pie shells. The pie shells are their never fail pie crust recipe on the lard box. For a long time after she retired my mother and my father canned pumpkin. My dad didn’t like to wait until thanksgiving for a pumpkin pie.

Follow the directions on the Libby's can except leave the ginger out and substitute in nutmeg. That's the way my mom and grand mom always made them . put in the refrigerator overnight taste so good cold 😛
Dotting the dough crust is called SCORING. In Canada we use a lot of Molasses. It's either Blackstrap molasses or Fancy molasses. Most use Fansy for baking or cooking. I use blackstrap because it's a much stronger flavour. It has a beautiful bitter flavour like a dark caramel. I use use for Gingerbread or Gingernut biscuits aka cookies. It should be available in the baking section of your supermarket. If not there, go to your Cost Plus store. Look in the British section, Lyles Treacle aka Molasses. It should be next to the Lyles Golden Syrup. Canadian Thanksgiving is always in October. I will try using your pumpkin pie recipe. The addition of molasses sounds wonderful.
Just an fyi! Libbys recipe on the can of pumpkin always calls for cloves. I have made that recipe for years and love it but would be fun to try this one with molasses in it, my husband loves molasses.. Looks delicious! Pumpkin pie is my favorite!!
Your audience buying Costco pumpkin pie should read the ingredients in their Costco pie! I’m going to try this with the cloves and molasses! I’m s pie crust snob and I make many crusts ahead in September and freezing them in 1 crust per freeze. I can make many double crusts, single, and hand pies when I’m in the mood!

Perusing your videos and found this! Pumpkin pie is my all-time favorite. Now, the only thing that ruins it for me is not having the filling firm after it bakes. I don't like it when it's too soft. Is that why two eggs are used or is that the standard way? It looked very firm so I'll try this recipe soon!

Whisk eggs together in a separate bowl, before adding to pumpkin purée. Stir until well incorporated. Measure the dry Ingredients in a separate bowl, and sift into the pumpkin purée. Add the evaporated milk, gradually, stirring until fully combined. Pour mixture into the pie crust. Bake at higher temperature 15 minutes. Turn the oven temperature lower and continue baking. Test with a clean knife in the center for doneness. The knife will slide in straight into the center and back out. It should not have any pie clinging to the knife blade. (Also you may see a slight crack in the center of the pie. ) Also, I mixed cinnamon with powdered sugar in a shaker and put a shake on top of the whipped cream. Yum!
I always bake my pumpkin for 45 minutes and peel it. It makes ruffly 3 pies. To me it tastes way better than canned. Then I also can say it is all home made. You do not have to puree it. Just whisk it well.
One year my daughter in law, who always made the best pumpkin pie, forgot the sugar in the filling. . she was upset, but my uncle, who didn't use sugar too much piped up and ask if he could have it, because he preferred less sugar. She made his day.
I must tell you that this is the best pumpkin pie I’ve ever had! But I really love the whipped cream, too!

I've made pumpkin pie with a sugar pumpkin. I didn't roast the pumpkin, I boiled it. One good size sugar pumpkin I found usually will yield 4 pies.

Just an fyi! Libbys recipe on the can of pumpkin always calls for cloves. I have made that recipe for years and love it but would be fun to try this one with molasses in it, my husband loves molasses.. Looks delicious! Pumpkin pie is my favorite!!

I’m s pie crust snob and I make many crusts ahead in September and freezing them in 1 crust per freeze. I can make many double crusts, single, and hand pies when I’m in the mood!

Perusing your videos and found this! Pumpkin pie is my all-time favorite. Now, the only thing that ruins it for me is not having the filling firm after it bakes. I don't like it when it's too soft. Is that why two eggs are used or is that the standard way? It looked very firm so I'll try this recipe soon!

Could you spray your pie shield to keep pie from sticking if it puffs up?
Whisk eggs together in a separate bowl, before adding to pumpkin purée. Stir until well incorporated.
Measure the dry Ingredients in a separate bowl, and sift into the pumpkin purée.
Add the evaporated milk, gradually, stirring until fully combined.
Pour mixture into the pie crust.
Bake at higher temperature 15 minutes. Turn the oven temperature lower and continue baking.
Test with a clean knife in the center for doneness. The knife will slide in straight into the center and back out. It should not have any pie clinging to the knife blade.
(Also you may see a slight crack in the center of the pie. )
Also, I mixed cinnamon with powdered sugar in a shaker and put a shake on top of the whipped cream. Yum!

I always bake my pumpkin for 45 minutes and peel it. It makes ruffly 3 pies. To me it tastes way better than canned. Then I also can say it is all home made. You do not have to puree it. Just whisk it well.
Great tip! And I'm sure it's better that way, too! The canned product is a nice convenience if time is limited.

I don't use molasses. Instead I use brown sugar. Looking forward to fall baking.
One year my daughter in law, who always made the best pumpkin pie, forgot the sugar in the filling. . she was upset, but my uncle, who didn't use sugar too much piped up and ask if he could have it, because he preferred less sugar. She made his day.
