  • Chocolate Pie
    2 1/2 cups sugar
    2/3 cup corn starch
    6 Tablespoons cocoa
    1/8 teaspoon salt
    4 cups milk
    6 egg yolks
    4 Tablespoons butter
    2 teaspoons vanilla
Mix, sugar, cornstarch, cocoa, and salt in a large sauce pan. Whisk in about half of the milk to dampen. Add egg yolks, and whisk well. Then stir in the rest of the milk. Cook, stirring constantly, over medium-high heat until thick. Remove from the stove and stir in butter and vanilla until butter is melted. Pour into a baked pie shell. Top with meringue using the recipe below.
    MERINGUE:
    6 egg whites
    3/4 cup sugar
    1 Tablespoon corn starch
    1/2 teaspoon Cream of Tartar
Begin whipping egg whites with a whisk. In a separate bowl combine sugar and corn starch. Once egg whites are at a soft peak, slowly spoon in sugar one spoonful at a time. Sprinkle in the Cream of Tartar and continue beating to stiff peaks. Spoon onto pie filling, sealing the meringue to the edges of the crust. Bake in 400° oven for eight minutes or until lightly browned. Cool completely before slicing.

Just a tip on saving time to remove lumps from cocoa, cornstarch and sugar: get out your old timey sifter and sift right into your pan. This saves so much time and lump free. Love your recipes. Thank You.

One thing I was taught was placing plastic wrap over top of filling pressing out the air before putting hot pie into fridge to cool down. It prevents the hard skin from forming if you leave pie out to cool uncovered. I guess you could still let it cool on counter with wrap but fridge cools it faster.

Including the meringue, you put 3-1/4 cups of sugar in that one pie. And six large eggs! Couldn't believe it! One cup of sugar is sufficient for the pie and a couple of tablespoons for the meringue. Two eggs are quite enough.

I have been making chocolate and coconut pies for probably 55 years and had my granny show me and then our cafe cooks show me also and never did anyone explain stiff peaks so well! Thank you! I never had trouble getting them but never knew exactly how! We have always made 2 at a time! Via microwave with Pyrex batter bowl
Pour out half and add coconut and then cocoa to remaining half! I thought I had commented but maybe not! Microwave 4 min, stir 3 more min stir and 1 min more! Normally ready at this time! Top with meringue and sprinkle coconut on top of the one with coconut! My fav is coconut but my family loves chocolate!

You make making these pies so simple to make! And I appreciate that you take your time and explain each step as you go along to, measurements etc! I hope you have a recipe for the coconut pie to! The chocolate, coconut and pumpkin were always my favorite growing up. 🙂

The meringue may not weep, but I bet the crust does! I’ve never heard of pouring hot filling into a cooled crust. Every pie recipe I’ve ever seen specified to let the filling cool before placing into the crust.

Can you tell me if this is a deep dish pie or not? I watched this twice and still didn’t see if Tom ever said. I’m hoping it is but if it isn’t that is fine too. I am wanting to make this for my husband’s birthday on Oct 08th. He sure loves Chocolate pie. Thank you again Tom and Melissa for a wonderful channel.

I've never heard of letting it cool first. You want it to set in the pie shell not the pot.

I so enjoy your videos. I happened to see your hot dog sauce video as I was surfing for recipes, I showed it to my husband, he had to make a batch very soon thereafter and it's all put away in the freezer. His grandma always made this pie and I have to make it for him every Thanksgiving. It's so good. Did the pudding develop a skin as it sat there to cool off? You have such a calming way of making these videos I could watch them all day long. You both make a great team.

This pie is awesome. I saw one chef say you should always put the meringue on top of hot filling. This starts the cooking of meringue and stops weeping. I’m going to try it. Thanks for your videos. I’m hooked😁. You have an awesome camera lady.❤may the Lord bless you both.🙏🙏🙏
