I don't know if all cooking from Spain is like your recipes, but i love the simplicity. Nothing is overworked. Every ingredient is exactly what it is and shines. There is a lot to be learned about cooking with using simple ingredients to make something great tasting! Simple doesn't mean bland.

Definitely. That would also be similar to Indian style pilau rice. You could be brave and whilst throwing the Cardamon pod skins away, sprinkle a couple of the seeds in the rice!! (A touch of fennel seeds go nice as well) 🍚👍

If you put your rinsed rice in the pot and then put your finger on top of the rice, and pour water in up to your first knuckle……. you’ll get it right every time no measuring cups needed!

This recipe is so logical that it is mind blowing. Cooking dried chickpeas from scratch allows them to release their starch. For people like me, one the go, we use canned chickpeas, but they don't release much starch. The solution, a rue! This gives you the thickness you normally get when cooking dried chickpeas. 🎉bravo🎉

@@davidhoban3825 for canned peas, definitely rinse and make the brilliant rue from this video. If you use dry chickpeas and want a thick broth, you slow boil them until they thicken the water. That is said to be when they released their starch.

I made this tonight and it was delicious! I did a couple of subs ... Used EVOO with an EVOO lemon oil that we get locally. Durant has wonderful olive oils and all made here in Oregon. They also do incredible balsamics. Also sub'd the flour and milk with a half and half mix of heavy cream and whole milk 1:1 ... so half heavy cream and half whole milk. We have mice as we live in the country, so it's a challenge to keep flour. Also added Spanish Chorizo, cubed, as an added protein. We have a local butcher that makes the best links of all kinds. Not at all like the Mexican Chorizo. We've had authentic Spanish Chorizo in Europe and the ones made locally are as good as it gets! I highly recommend this recipe! Keeping it for later and adding it to my box-o-recipes.

Nice recipe as always. I can't help feeling it could be maxed up a bit. It looks a bit like a curry after all. A few more spices perhaps or even some additional veg components? Some chopped cabbage when frying the onions or some peas/spinach right at the end. Anyway, it's a lovely recipe as it is but it clearly lends itself to some personal tweaking ideas.

This looks so incredible! I can't wait for dinner time, I will be making it for lunch. Rice cooking tip.... After rinsing boil 1c rice with 6c of water, draining after 25 minutes (or rice is tender). You can return to the pan and heat to reduce moisture if desired. This dramatically reduces the arsenic level in rice

I made it this morning. Very easy recipe to follow (3 portions for the freezer)
I used a veggie stock cube for the stock and it tended to "overpower," the other flavours and I have to admit to using "standard" Paprika.
Must get round to buying some of the sweet Spanish stuff.
It still tasted great though! 😉😉

It won't come our as thick without the flour
I’ve seen recipes similar to this using coconut milk, so you should be fine. Omitting flour shouldn’t change your flavors, just the consistency 💛

Don’t forget you could also use the aquafaba or chickpea liquid instead of milk or milk alternatives to thicken the liquid. It also contains the nutrients from the chickpeas.

Love this recipe. Though not a vegan, there are days when garbanzos and rice sounds like the PERFECT meal. Will definitely be cooking this. The only thing I'll be doing differently is the rice. I'm Filipino so we use the "finger" method of cooking rice. Love your channel. Sometimes I just put it on in the background because your voice soothes me. Lol. 😁 Have a great day!

Made it tonight, it’s a nice easy recipe and the flavours are not overpowering they all work well together . I made it with plant based oat milk and it was delicious . I will make it again .

I'd definitely have to cut down on the garlic. Bowl needs some color, maybe add bell pepper to the rice, or cilantro. I'd also omit the bread, while delicious that'd to many carbs in one meal for me. I'd serve some raw veg, or maybe a salad.

Chickpea Tip - Don’t drain the chickpeas but just add to pan. The liquid (aquafaba) is like adding an egg to the recipe and a great thickening agent so why waste it?
Maybe the canned chickpeas liquid might add too much salt? But I guess if you already planned to keep the aquafaba, then make adjustments to allow for that liquid + its salt.
Yeah, I totally agree and I cringed when I saw him putting that down the drain.

This recipe seems sooo delicious, so looking forward to trying it!!! BUT, 2:14 , teflon pans should never be heated to a high heat like you do there. They should always just be used on medium heat!!! Never more... Otherwise you are releasing toxins from the pan into the air, which are so bad that if you have pet birds in your home, you can simply kill them!!! A few months back, someone on an Instagram or TH-cam channel I followed came on and told how they just, by accident, had let their teflon pan heat to a high heat and before they could do a thing, both their Amazon Parrots, such important members of their family, died. There was nothing they could do!!! So if you can, get rid of your teflon pans!!! If you have parrots in your home, you for sure should get rid of every little teflon pan or pot you have!!! Get familiar with carbon steel, cast iron and also stainless steel pans and how to season them all (even stainless!) to be quite nonstick without teflon. Lots of great videos on TH-cam!!!
