Tofu Cooking Trick Explained: Instant Restaurant Quality

    I’ve seen firsthand how simple changes in the kitchen can spark massive change. Join me today as I share one of my favorite plant-based techniques that you can easily recreate at home or in a restaurant. My take on the classic Rockerfella'. Let’s dive in!
    I wanted to share a bit of the experience I have in this one for people asking. I am now freelancing and working on sharing what I know with you here.

    Tofu Rockefeller with Potatoes and Carrots
    Ingredients:
    1 block extra firm tofu (in water)
    Vegan cream cheese
    250g baby spinach
    Vegan pork seasoning blend (sage, onion, thyme)
    2 cloves garlic
    1 lemon, zested and juiced
    6-8 large red potatoes, cut into large cubes
    3 medium carrots, cut into 1-inch cubes
    Salt and black pepper, to taste
    Olive oil (as needed)
    Panko breadcrumbs
    Instructions:
    Prepare Potatoes and Carrots:
    Scrub the red potatoes and cut them into large cubes, leaving the skin on.
    Scrub the carrots, leaving the skin on, and cut them into 1-inch cubes.
    Add both the potatoes and carrots to a pot of water on low heat. Boil until softened, then drain and set aside.
    Prepare Tofu:
    Drain the tofu and press out any excess water.
    Slice the tofu block in half to create two large portions.
    Heat a large cast iron pan and add a little oil. Sear the tofu on both sides until golden brown.
    Sprinkle the tofu with the vegan pork seasoning (sage, onion, thyme).
    Cook Spinach:
    In the same pan, add a bit more oil and sauté the baby spinach until wilted.
    Drain any excess liquid from the spinach and set aside.
    Prepare the Garlic-Lemon Mixture:
    Finely mince the garlic cloves and zest the lemon.
    Mash the garlic and lemon zest together into a paste.
    Add the lemon juice to the paste.
    Make the Spinach-Cream Cheese Mixture:
    In a bowl, mix the wilted spinach, garlic-lemon paste, and vegan cream cheese together. Season with black pepper to taste.
    Spread the mixture evenly over the top of each tofu slice.
    Panko Topping:
    In a separate bowl, combine the panko breadcrumbs, black pepper, a pinch of salt, and a drizzle of olive oil. Mix well.
    Sprinkle the panko mixture over the tofu and spinach.
    Roast and Serve:
    Preheat the oven to 200°C (400°F).
    Place the tofu and vegetables on a baking tray.
    Toss the boiled potatoes and carrots with olive oil, salt, black pepper, and a bit of the vegan pork seasoning.
    Roast everything in the oven until the panko on the tofu is golden brown and the vegetables are crispy, about 15-20 minutes.
    Serve the tofu with the roasted potatoes and carrots for a hearty, plant-based meal.

      They go with what sells and they’re afraid to be innovative. Unfortunately most chefs learn traditional dishes and most culinary schools teach the same. There’s a certain cache associated with traditional recipes. Derek is almost single handedly turning the tide, one cook, one recipe, one event at a time. 👨‍🍳

      This has been my argument all this time. There's no reason that the vegan choice isn't be more than salad and fries. If u wanna call yourself a chef, you would want to... and most certainly SHOULD expand what you have to offer your patrons. Ita juat pathetic most of the time.

      I don't enjoy the chopping and prepping, just like I don't like tidying up the kitchen after cooking, but I love a nice home cooked meal and a clean kitchen, but some nice music in the background (or a podcast, film or tv show) is enough to help you change your focus from a boring task. It's not that hard.

    I love how relaxed and flexible your cooking style is. After a few months watching these videos I'm feeling myself having way more fun cooking because I'm less concerned about following an exact recipe with precise measurements. More focused on what I feel like will taste good.

      I cook regularly and pretty well if my friends and family count. I don't have the attention span for RECIPES, I cook by method. So I can tell you approximately what I did to make a dish, a recipe will not forthcoming. Retired due to health issues, I spend my days catering to my dog's pleasure and comfort. Charlie wouldn't be out in the rain for any reason, much like yours. 😊

      You need a specific pair of tongs for it to work. Just google "clickety clackety tongs" and you'll find 'em.
      Just kidding, I completely made that up. Had some of you going though, didn't I? In all seriousness, I have seen tongs that only close when they're pointing in a certain direction (it seemed like magic to me). I could see that being used with some fancy wristwork to create that sound, but they could also just be normal tongs for all I know.

    I've never had the original dish, but I am looking forward to making your version! I might do that as a main for Thanksgiving. My daughter is planning to fly down this year so I might just try and impress her with something new!
    In case my husband reads this, yes, I'm still making lasagna with homemade sauce and cashew ricotta. 😂

    As a vegan who is learning to love the texture of tofu (still after 10 years I just cant cope with the soft texture - whereas my husband will devour tofu raw infinitely and he loves it any way it is cooked - whereas I have to have it crispy!! ) I am constantly trying to better my tasty tofu cooking skills. My own tofu slab may be a lot thinner but I will not be defeated !! Thank you for showing us more clever ways to cook this amazing food!

    Sir your channel is one of the best I have watched! You are creative and so zen when you cut your veggies , cook and clean! I love your recipes and will be trying them. Lately I have been stressing about my carb intake and get stuck on keto channels which try to convince you vegetarian and vegan foods are bad or even horrible for your health. I don't know how this can be but I don't eat meat and am very disappointed with our rising carnivore culture. The planet just can't take anymore of our self-centered lives. I was so glad I found you!     Really loving your videos. So many helpful tricks!! Stacking the cast iron for getting some color on veggies is such a game changer especially since I cook on electric and sometimes I struggle to add texture to more cooked veg

    Thanks for using "pork seasoning". I often use "poultry seasoning" and "Italian Sausage" seasoning. The spices are already appropriately and proportionally blended to create 'that flavor' that we all love and recognize but with much greater ease and less expense at not having to buy and hand-blend all of the individual spices. "Pumpkin Pie", "curry" spice works the same way - just buy the flavor you want and skip all of the individual spices. What I find that I miss 'eating vegan' isn't the meat but the flavor of the spicing-cooking style. But that's fixable using prepared spice blends.

    You can adapt anything WFPB...16y, from vegetarian/bit of pescatrian, now make fish out of melon,raw apple, you name it😂

      Konjac block ( white one) sliced thin, served cold, it's like sashimi. They also have "seafood mushrooms" in Asian stores. It literally says "seafood mushrooms" on the package. It's delicious! I hope you try it! You can find them both very cheap at Asian stores.

    Your videos are just wonderful and my wife and I watch them every day since we have a lot to catch up on. I'd love to see you try out recipes with structured soy protein as the... well protein. There's also a version made from peas and both have a great texture. One of my favorite vegan recipes is a Gulash stew with this stuff

    Wow, yum and a half!! I love cutting vegetables, it helps order my thoughts and I know my kids will get healthy fresh food, animal product free. Now, that bowl you added the panko to - I know a little dark goddess that would have cleaned that for you (I know, no garlic). That looked amazing!! I am so impressed!! Another great video!     Thank you for using normal grocery shop brands (I can recognise that spinach bag and spice jar anywhere) rather than just Waitrose or the unbelievably expensive UK Whole Foods, you're making food that we can all find and make 💚🌿
