I have made this twice. I live alone and mostly make food for myself, so I cut the recipe in half. Turned out great! It's really delicious and my grandson agreed. Also, the least effort possible for any recipe is my goal. Instead of pressing mixture into a pan and having to cut into bars I pressed them into a silicone muffin cupcake pan!! Just push up after refrigeration and out they come!! I made them again today and used a mini muffin nonstick pan that I purchased recently to make fun appetizers. Sometimes I just want a bite or two to see me through until the next meal. Or I can have 2 or 3 for breakfast, etc.!! Any way you end up serving them you will definitely find them delicious and super easy and fast to make. Thank you April!!

If you don't use... vegetable spray... rub some of that coconut oil on the scoop before you pour the honey in. Or, use the same measuring cup for both, coconut oil first. I bake with honey and coconut oil in SO many recipies. using that coconut oil to coat the cup saves lots if not all the honey in your measuring cup.
Do try parchment paper to line instead of foil. It will lift just as good, and you won't risk aluminum consumption. Also, rip a piece and use it to top your mixture as you tamper down. : )
GIRL, OMG... I did use the honey and dark chocolate chips and wax paper. This was the best, and easiest recipe. I happen to have everything I needed to make without having to go out. I am not really into these kind of things because everything always seems to sweet for me, but you had me at oatmeal and peanut butter. I also think when you buy stuff like this at the store they have way too much fiber in them. So I know this is about 3 years late, but you hit the nail on the head. Thanks...

Hey! Thanks for this awesome 👏🏼 recipe! I did however use the “stir” natural peanut butter- and it was just fine. No issues at all. Always add more oats or flax meal to make it thicker. I added so many dried fruits and nuts I had to add a little more coconut oil. But- turned out so good;) what a great basic snack idea for any one. Next time I will try an almond butter or sunflower 🌻 butter 🧈. Thank you! Salude!

I look for any excuse to break off a piece of a bar… Early morning pick me up, afternoon pick me up, after dinner with a cuppa tea, I’ve tried it all...😄 I used less honey. Hi! I actually used quite natural runny peanut butter and didn't heat it. I didn't heat the honey either as I think it'd better not be heated. The mixing process turned out pretty well, I added a splash of almond milk btw

If you blend to a powder consistency the oatmeal with shredded coconut flakes to a 1 to 1 cup of oatmeal to flakes and then you use'em for this recipe,you'll see how delicious this bars are

I’ve made them before I’ve used almond cinnamon and I’ve used pecans crunched up I can’t use walnuts I’m allergic. I’ve used cranberries along with the other items; it really taste good. I’ve never use coconut oil in it though, I’ll have to try it.

I made this but only had Jiff PB. So I only used about 1/3 C honey. Even after refrigerating them for about an hour, they crumbled a little. I really pressed them in the pan too but maybe reducing the honey had something to do with it. The flavor is good though.

Agreed on no oil. No need. Plenty of fat. If anything you coukd add TB or two of applesauce

I like the recipe without chocolate chips, instead I put almond or walnuts for more protein and less calories
Almonds and walnuts have more calories than dark chocolate though
