This cooking method i always fail..since the sauce does not mix well or evenly into the chicken..sometimes it just clumps up to one piece of chicken.so i rather do brushing or putting them in a plastic container and shake rather than wok toss..thank you for the insight on new flavors.thank you!!
Hi Mary, BaO is right. Your wings will be crispier when you double fry them. Also, you want to make sure the chicken is cooked through - so in the first fry, when you use medium heat to cook the chicken inside out without burning the skin then in the second fry, you use higher heat to really crispy up the skin and purge out any oil that's trapped in the chicken. You'll get better tasting fried chicken this way. Hope this helps. Happy cooking!

Looks awsome but why not just fry them really good n crispy the first time around...??
because if you want them to be crispier you fried them twice. but you could eat it after the first frying it's all up to preference.
