Roland's crunchy Thai-style fried chicken is easily the best fried chicken he's ever made. The chicken is crispy and juicy, with a flavour that is out of this world. The best part is that it's extremely simple to make. The key to making truly delicious crispy chicken is to marinate it in spices for several hours before cooking, so that the flavour penetrates deep into the meat. These crispy fried chicken can be served as a party snack or as a main course. We're always craving for some crispy fried chicken, what about you ?

Thai Crispy Fried Chicken Recipe 泰式炸鸡
Ingredients:
Makes 8 drumsticks

8 drumsticks (weighing a total of 800g or 28.2oz)
1 teaspoon white peppercorns
1 teaspoon cumin seeds
1 teaspoon coriander seeds
2 shallots
1 clove of garlic
3 stalks of coriander or Chinese parsley roots
50ml water
5 tablespoons fish sauce (reduce to 4 tablespoons if you don't like your chicken to be too salty)
1 teaspoon sugar
4 tablespoons rice flour
2 tablespoons cornflour
1 tablespoon self-raising flour
7 tablespoons water (Use this only as a guide; gradually add a few tablespoons at a time until the desired thickness is reached. Increase or decrease the amount of water used as needed.)

Didn't have the Chinese coriander root but this was delicious even without it's presence. Another winner!

I think if you add fried garlic and fried onions for toppings, it would be a good combinations.

I've been surfing YT for fried chicken recipes. It's comfort food to me . But the inflation in the USA made food shopping prohibitive, it feels I'm being pushed ito the
" food insecure " category. Just a few years ago , I had no second thoughts of buying a couple pieces of fried chicken at Walmart but their policies changed. You have to buy minimum number of pieces which is outrageously priced and beyond budget . The rich are getting richer and the poor are getting hungrier. So might as well make my own fried chicken, your recipe has common sense approach at preparation and whets my appetite.
In the video you showed only one tsp of the pounded spice to mix with the water & sauces to season the drumstick, is that enough to season the drumstick ? Or do we use up all that we have pound ?
You should use red limestone water to make an extra crispy instead of water.
Most of Thai street food vender and restaurants use red limestone water for fried food.
You can buy it online in the States.
Good tip. We don't have that so we used self-raising flour which contains baking soda/powder too. Thanks for sharing!
