    Thanx for your recipes and tips! I make a lot of chicken wings but with a Japanese recipe ... Ive seen your recipe when using the egg mixture while frying legs thighs breasts - which ive not tried! Do you recommend the egg mixture while frying wings???

    • @ModernPepper
      @ModernPepper  3 ปีที่แล้ว

      Hi Jerry! Thanks for watching🙏. I think if you want to soak the wings in the Korean Fried Chicken egg/milk/gochujang/seasonings mixture recipe, u can give it a try. BUT I think because the wings are already tender and smaller in size, you don't need to necessarily presoak in any mixture. And because these wings are dressed in the sauce, the presoaking in egg/milk/gochujang/seasonings mixture is not necessary.

    Your recipe looks and sounds incredible! I would love to make it, but please advise if beef bullion granules or powder can be substituted for Beef Dashida?

    • @ModernPepper
      @ModernPepper  2 ปีที่แล้ว

      Thank you Terry🙏. As noted in the video, Beef Dashida (Korean beef bouillon powder) is recommended. Regular American/conventional beef bouillon powder will not yield the same taste, BUT do try it and see if u r ok w the taste. You can order beef Dashida online (product link is in the description box).

      Hi Chris! As you already know, there are key foods to avoid for Keto diet. So my suggestion would be to adjust the recipes to make it Keto friendly. For example, for this chicken wing recipe, I would use Stevia (to substitute for honey and brown sugar), and almond or coconut flour (to substitute for corn starch).

    Thanks for the recipe, Helen. I make hot wings at home and everybody loves them. What do you do with your left over oil? How many uses do you get out of it?

    • @ModernPepper
      @ModernPepper  4 ปีที่แล้ว +1

      Hi Andre Woodson👋. Great questions! I don't make deep-fried foods often, so when I do, I try to make other fried dishes within that same week. For me, after 4 fries, I discard my oil in compost (double/triple bag it in compost bags). If I don't have to fry 4 times within a week, I strain the oil (bring to room temperature first) using a fine mesh strainer. Then store the oil in a glass jar or bottle, and store it in a cool dry place in the kitchen cabinet. I try to reuse the oil within a few weeks before it starts to smell from the fried-food residue odor.
      I also fry extra chicken and corn dogs and freeze them. I bring them to room temperature after the fry, and individually wrap them with plastic wrap (double-wrapped), and put them in freezer bags. When I take them out of the freezer, I defrost it lightly in the microwave and reheat it in the oven at 275-300 for about 20-30 minutes (use a meat thermometer to make sure the internal heat is at 160 degrees Fahrenheit). I make the chicken sauce when I'm ready to reheat my frozen fried chicken.

      @@ModernPepper Thank you for the tips, Helen! I do pretty much the same thing by recycling an empty oil jug and use that to save the oil. I reuse it two to three times, strained at room temp through a fine mesh strainer lined with cheese cloth.

    Double fry???

    • @ModernPepper
      @ModernPepper  3 ปีที่แล้ว

      Hi Carol. You can double-fry, if you want to. I only double fry when I am preparing the wings for a party: Meaning, I flash fry the second time once the guests arrive so the wings are hot and crispy. At restaurants, they are double fried with the same idea (flash fry the second time once the orders come in, which is why the wings come out so fast).

    Hmmm the batter looks too thin to be crispy cos I can still see the chicken skin. Prefer maangchi version but that’s just a personal choice. N when u keep saying yr wings are so good so so good repeatedly then it is quite not.

    • @ModernPepper
      @ModernPepper  4 ปีที่แล้ว +3

      Hi Lotat MTB👋 In my opinion, fried chicken wings made to be coated in sauces, require little "batter" or seasoned dry flour dusting. (As demonstrated in the video, the sounds of these wings are crispy. FYI - Batter coating is not required to fry the chicken crispy. The original Korean fried chicken recipe, called SheJang Chicken 시장치킨, uses no batter or dusting of flour. This SheJang Chicken is known for its crispy fried skin exterior.) Now, for fried whole chicken (cut into pieces), I prefer to use a heavy batter or seasoned dry flour dusting. Here is my Korean Fried Chicken recipe: th-cam.com/video/S5Z7LnCU3Q0/w-d-xo.html
      Yes, I enjoy these wings and find it to be delicious, which I'm happy to say these wings are tasty. But if hearing such, adamantly makes you feel otherwise, well to your point, it is a matter of personal opinion.
      Ah...obviously, you prefer Maangchi's recipe, which is perfectly fine. And I'm sure she'll appreciate you commenting on her chicken wings. Thanks for visiting my channel🙏

    • @ModernPepper
      @ModernPepper  2 ปีที่แล้ว

      If u r going to have it right away, I don’t double fry. I fry it until it is crispy.
      For the double frying method, I recommend this if u r cooking for a party/to have later (flash fry again right before u r ready to serve). Restaurants double fry (prep the wings with the first fry and once the orders come in, u flash fry again.) This is how the wings come out so quickly when u order them.

    too much sauce they're drowning in it, won't stay crispy then. i prefer how kyochon does it with the brush

    • @ModernPepper
      @ModernPepper  3 ปีที่แล้ว

      Hi Manchester Is Blue. If you prefer to brush on the sauce, certainly do so, and just make half the amount of the sauce. Like Buffalo Wings, most make the Korean Fried Chicken wings so when it comes of the fryer super hot, you want to drench and toss them in the sauce generously for a few seconds and take it out. So that as the hot wings cool off with the generous coating of the sauce, making the sauce stick to the chicken, and also sticky. You do not leave the fried chicken wings in the sauce, as stated in the recipe. Doing so will make the crispiness go away.
