I purchased a pack of two round silicone mats. I use them in the microwave for these chips. no cutting, one made up waiting for the last one to come out. It is easy to do batches and save them in sealed container. Love them with french onion dip. I take a knife and spread a little instead of dipping. Make a whole plate of them with the dip and eat from there. I have given these to many friends and co workers without telling them what they are made from until they taste. It has been a big hit with people that hate cottage cheese, and even kids. They are shocked. Salt is also a good additive.
I was just going to make this comment about the silone mats... with a reminder don't cut silpas as they have a fiberglass in their center of their layers
(heebie-jeebies) Quite recently, I tried a silicone mat... once. I gave it to my daughter afterwards... she "inherits" ALL of my BAD, brilliant ideas. It was used for keto cookies. The mat required dishwasher + boiling water n soap + vigorous rubbing with dry paper towel AND still could not entirely remove oily sheen (one of the Sheen brothers.. 😂) appearance and feel on the mat (Mat Sheen????). Daughter is not as persnickety as I am! 🐈
How is this not just common knowledge in the keto life. I just did this and they are excellent chips, i mean the best keto chips i have ever had. Who is keeping this from the masses. I mean this is astounding. I am flabbergasted.
@@jobrown8146 I used to make them in the microwave. One container of cottage cheese (200 g) would make two batches, I spread it in a circle and left the middle of the parchment clear (it would burn before the edges got crispy otherwise, so I know my microwave isn't too great at heating evenly). I hated standing by the microwave to keep an eye on them so they wouldn't burn but still got crispy. I needed to catch them when they were just right or more often microwave them repeatedly, if they were still soggy. They would turn from crispy to having burnt spots rather quickly. It took at least 5 minutes per batch. So 2 containers would take 20 minutes of microwave time, if I was lucky, but usually more like 30 minutes. Now I take those two containers, blend them and spread the cottage cheese in inch wide lines on two trays. I bake for 80-90 minutes, open the oven a few times to let steam out, but other than that it's very hands off. I get them evenly crisp without risk of burning. And I don't consider the extra heat from the oven a problem when it's cold outside. So the oven method suits me and my kitchen appliances better.
Yes to the "dust" What I do is take my Anthony's Cheddar cheese powder & mix it with the Redmond's Taco seasoning & cream the cottage cheese to uniformity smoothness. Stir in my seasoning, microwave the chips..then as you say "sift ya'all" the "dust on top of the cooked warmish chips. Yum! Thanks for your review & opinions! The Keto Twins made a second video where Sarah added dried mashed potato flakes to the cottage cheese for a potato flavor. I plan to use this recipe today. I keep Trader Joe's cottage cheese on hand at all times.
I love this method because mine always come out hard enough I can scoop salsa, queso and 7 layer bean dip with them. I use a store brand that I whip and they come out amazing. I love buying when it goes on sale and whip a bunch up and freeze for later use.
Dried mashed potato flakes doesn’t seem very keto? Will look it up to see what I’m missing there. Maybe I’ll use the potato extract I’ve heard from keto focus for the flavor.
@@amandacurtis7245 If your macros are in alignment with a particular keto or low carb plan, it should be fine. Isn't the threshold for "keto" something like 50 grams of carbs or less? Use a food scale to ascertain how much potato flake is being used and that'll give a better idea on whether or not the snack can be eaten that day. 2T of potato flake is roughly 20 carbs. The question is... how many chips will 2T of potato flake help make?
I loved your improvement on the Twins recipe. I just watched it yesterday. The microwave is much better. The wax paper didn't work for me. The chips stuck to the paper. I used my silk cookie sheet worked much better in the microwave. No sticking. Thank you.
Finally a decent use for cottage cheese 😊. Pro tip is to drain off some of the cream dressing as to get a dryer curd. That will also reduce some of the lactose, lower the carbs, and less chance these will make your toot if you are sensitive to lactose. Great episode ❤
Many thanks to you, as a novice cook, I got brave enough to try these! First I made some from a mozzarella stick! Turned out great. Then I did some cottage cheese ones and added multiple ingredients. lol Parmesan cheese, pork rinds, nutritional yeast, and ground flax seed. They too turned out great. Did both parchment and silicone cups. Thanks again for the encouragement!
Try adding 'potato flavor' drops to a carton of cottage cheese. (Make sure to label it lol) Then add your classic chip flavors after cooking. Er-ma-gerd.
Steve from Serious Keto blends his cottage cheese with the spices and slowly bakes his cottage cheese chips/ crakers. They come out uniform and toasted looking.

So , I just did this after watching this video, love it!! Sooo I thought , wonder how these would work as layers, just let me say nutty bars , it works , just did it , try it!! Who would have thought peanut butter and cottage cheese chips .. mind blown ( don’t forget the chocolate coating, just pour it on)
My husband loves these. I had been making them in the microwave using Great Value full-fat small curd cottage cheese. (Works great.) But the microwave takes too darn long, and you can only make a few at a time, so it takes FORever. Just a couple of days ago I tried Steve’s at Serious Keto’s method. It takes a long time, too, but I don’t have to stand at the stove for an hour, and they come out WAY better. Perfect, in fact. So that’s how I’m doing it, and I just bought a #100 scoop to make it happen. I don’t put anything in the cottage cheese…we like them plain. PS Cooked, Steve’s way, they WILL stand up to dip, just so you know.
I tried these chips and some of your flavorings! Thank you so much for the video test. I just watched another keto twins video where they made the same chips but they added a tablespoon of freeze dried potato flakes! Evidently makes it taste even more like a potato chip. I may try that because we’re talking such a small amount of carbs for 1 tablespoon in a whole batch.❤
I took a page from Steve at Serious Keto, and I use Kroger brand and blend it up till smooth, and plop it onto a teflon sheet and bake it in the oven for 80 total. I can make about 9-12 chips at a time and they come out chrispy and crunchy and I have enough to share. My coworkers and neighbors love them. My neighbor had guacamole and chips last night using these cottage cheese chips. She was able to scoop up thick guacamole and get a nice crisp crunch from it. It s totally worth it to do it in the oven for me, becuase I found that they do keep well on the shelf in an air tight container so you can make batches and keep them for later meals. I've tried Aldi and Daisy brand and it doesn't spread as well as the Kroger brand, and they were more like crackers than chips, but if it doesn't get crunchy all the way through, I put it in my dehydrator to finish. Some of my chips will brown, and stay flat, some will be crispy on the edges but still flexible in the center, Those I also finish in the dehydrator ( I have my dehydrator going all the time with various foods drying , you can leave it in the turned-off oven with the door open for the same effect) They curve up like Pringles chips!
I held my breath first, then bought those colorful silicon cupcake liners at the Goodwill. Haven't gotten nerve to try them yet, but hmmm. In the "Winter kitchen, I just set up a microwave -i bc black mold took out my appliances, wall, floor, cabinets, etc, - leaving me with trusty, excellent George Foreman grill, back in end of year. Much better now, but the floor is still due. Life goes on and it is good and good enough!

I tried the pork rind tortilla (remnants of the trial) and microwaved it and a great crunchy chip with no carbs....whereas cottage cheese chips have carbs. They were good and awesome with salsa and cream cheese.

Just watched the vid at 10:45 pm and making some now… wow, the cheese really boils! Almost done… 2 minutes, looking very dry… holding tight… taking out at 3 minutes… OMG! @@helenelast Me too. The cottage cheese I'm using is what I had on hand - small curd and very dry. I found the crisps formed in about 70 seconds for me when making a batch of 5 (~3/4 tsp each).
Air Fryer, Cosori Blaze (has lower element): 400°F, 2 minutes, tilt tray and blot liquid; 8 more minutes, add squares of cheese (jalapeno haverti); 1 more minute and WOW! I've been eating pork rinds but am no fan so these are the bee's knees.
I love your channel and your excitement when you find a delicious recipe. I have been watching since the beginning of your channel. There was episode where you were talking about one of your pans and you said she wasn't the prettiest at the dance but I can never remember the last part.
Have you ever tried just using nutritional yeast instead of that expensive flavoring. Just add a little salt and pepper maybe a little bit of almond flour. I haven't tried it yet but I'm willing to try it to get that nacho cheese flavor.
I tried the Serious Keto version and was unable to duplicate Steve’s results because I use Good Culture cottage cheese and it doesn’t have the additives the others do. But I just tried this. I plopped 1/2 teaspoon on a piece of parchment paper, put it on a plate in a 1200 watt microwave at full power. I set it for three minutes but after one and a half minutes it smelled pretty cooked so I pulled it out. The CC melted beautifully, and the chip was translucent and crisp! This is changing my world. Thank you for bringing this to our attention, Wes, and I will be visiting the account that you mentioned so they get the traffic also. I can’t wait to try these with the flavored powders!
Serious Keto took their idea and really took it to the next level. I live in Texas so used a big store brand and it flopped. Switched to Daisy brand and it worked like a charm!
@@shirleywilkinson9335 I think that with Daisy you would really have to process the cottage cheese for a few seconds. The curds are cut with a machine and there would be a lot of liquid (between the curds on the pan). These crackers fail in the microwave when there is too much liquid. They also fail if, after processing in a food processor, you don’t spread them out a bit first, depending on the brand. The ones I made yesterday were too thick-which signals disaster-because they didn’t spread. They can get very hard. But I had perfect results a couple of days ago with the same brand. It’s try and error, I’m afraid, to get these right.
You guys! Mine were a total fail. I used Daisy 4%. It spread out too much and looked thin and holey after being cooked. Not all like on the video. One I over cooked a tiny bit, but it was so delicious. But most of it stuck to the parchment paper. The second try was so thin and would not come off the paper. I have a pretty low/medium power oven. The paper was soaked on the bottom too. Any suggestions?

Always enjoy your videos. In fact, my husband, who enjoys the Keto recipes/ideas I find online, only recognizes 2 or 3 Keto/Carnivore channels and YOURS is one of them! This is partly because many of the recipes you have brought to our attention have become staples for us but, MOSTLY because he enjoys watching you make them. I have seen other videos about the cottage cheese chips and, for some reason (maybe because I had some Kroger cottage cheese sitting in my refrigerator needing to be used), this is the first time I tried making them. They are GREAT!

I was pleasantly pleased with the cottage cheese chips. I used Organic Cottage cheese small cured from Albertsons. The chips turn out crispy. And the best part only increased my blood glucose reading by 6 units!🎉❤😂🎉😅

I love these and make them often, but use the oven and make a bunch at one time. Although, sometimes that’s dangerous. Serious Keto has a video about making this into a thicker cracker, he has done several experiments, they are really good also.
WOW! what a game changer. I made some with the Great Value brand cottage cheese and then sprinkled some keto BBQ rub blend I use for ribs. Tasted just like BBQ potato chips which is my favorite flavor. I did try some plain and then some sprinkled with salt. The salted ones were better than the plain ones which are good as they are.

@@highlandstarr I use Steve's recipe from Serious Keto. I use Truvia Brown Sugar instead of the Sukrin Gold which I can't find in any store where I live and I really don't want to order it online. I find the Truvia brand works very well. I sprinkled only a little bit on the chip as soon as I took it out of the microwave. It tastes better if the chip is still slightly warm.

@@sco9616 a lot of ones on the market have maltodextrin and we all know how terrible that is... It's just vinegar and baking soda in the dehydrator and add salt when it's done.. keeps for a long time in a jar , 😀

I had to pause your video and run make some of these. I used Good Culture cottage cheese, which I think behaved a little differently from yours but still turned out great. And I sprinkled my new favorite seasoning, Badia Lime Pepper. OMGoodness! I can't wait till time to sit down and watch TV tonight with a plate of these!
It seems people get mixed results with Daisy brand. If you can’t find a store brand that would work, some folks are saying you can run it through a blender or food processor to smooth it out before cooking, and that helps it hold together. Worth a shot if you already have some to try! Let us know how it turns out. :-)

You should check out Serious Keto’s video and his method of baking them, which also lets you make a large batch at once.
Yes, Steve's version is really good
I've just checked it and it takes 80 minutes to cook 12 in the oven.
I make 4 at a time in the microwave, exactly 3 minutes per batch, so 9 minutes total for the same amount of chips, and I only open the door 3 times.

@@jobrown8146 I used to make them in the microwave. One container of cottage cheese (200 g) would make two batches, I spread it in a circle and left the middle of the parchment clear (it would burn before the edges got crispy otherwise, so I know my microwave isn't too great at heating evenly).
I hated standing by the microwave to keep an eye on them so they wouldn't burn but still got crispy. I needed to catch them when they were just right or more often microwave them repeatedly, if they were still soggy. They would turn from crispy to having burnt spots rather quickly. It took at least 5 minutes per batch. So 2 containers would take 20 minutes of microwave time, if I was lucky, but usually more like 30 minutes.
Now I take those two containers, blend them and spread the cottage cheese in inch wide lines on two trays. I bake for 80-90 minutes, open the oven a few times to let steam out, but other than that it's very hands off. I get them evenly crisp without risk of burning. And I don't consider the extra heat from the oven a problem when it's cold outside. So the oven method suits me and my kitchen appliances better.
I sprayed them with a duck fat cooking spray after coming out and dusted with a keto cinnamon sugar for a sweet treat. Yum!
Yes to the "dust" What I do is take my Anthony's Cheddar cheese powder & mix it with the Redmond's Taco seasoning & cream the cottage cheese to uniformity smoothness. Stir in my seasoning, microwave the chips..then as you say "sift ya'all" the "dust on top of the cooked warmish chips. Yum! Thanks for your review & opinions! The Keto Twins made a second video where Sarah added dried mashed potato flakes to the cottage cheese for a potato flavor. I plan to use this recipe today. I keep Trader Joe's cottage cheese on hand at all times.
I love this method because mine always come out hard enough I can scoop salsa, queso and 7 layer bean dip with them. I use a store brand that I whip and they come out amazing. I love buying when it goes on sale and whip a bunch up and freeze for later use.
Dried mashed potato flakes doesn’t seem very keto? Will look it up to see what I’m missing there. Maybe I’ll use the potato extract I’ve heard from keto focus for the flavor.
@@amandacurtis7245 If your macros are in alignment with a particular keto or low carb plan, it should be fine. Isn't the threshold for "keto" something like 50 grams of carbs or less? Use a food scale to ascertain how much potato flake is being used and that'll give a better idea on whether or not the snack can be eaten that day.
2T of potato flake is roughly 20 carbs. The question is... how many chips will 2T of potato flake help make?
I loved your improvement on the Twins recipe. I just watched it yesterday. The microwave is much better. The wax paper didn't work for me. The chips stuck to the paper. I used my silk cookie sheet worked much better in the microwave. No sticking. Thank you.
Finally a decent use for cottage cheese 😊. Pro tip is to drain off some of the cream dressing as to get a dryer curd. That will also reduce some of the lactose, lower the carbs, and less chance these will make your toot if you are sensitive to lactose. Great episode ❤

Many thanks to you, as a novice cook, I got brave enough to try these! First I made some from a mozzarella stick! Turned out great. Then I did some cottage cheese ones and added multiple ingredients. lol Parmesan cheese, pork rinds, nutritional yeast, and ground flax seed. They too turned out great. Did both parchment and silicone cups. Thanks again for the encouragement!
Try adding 'potato flavor' drops to a carton of cottage cheese. (Make sure to label it lol) Then add your classic chip flavors after cooking. Er-ma-gerd.

Steve from Serious Keto blends his cottage cheese with the spices and slowly bakes his cottage cheese chips/ crakers. They come out uniform and toasted looking.
I'm going to try both and see if the extra step is worth the extra washing up.

To add to the "Dorito" flavor, try adding a pinch of baking powder or baking soda to the spice dusting. Gives a nice zing on the tongue.

My husband loves these. I had been making them in the microwave using Great Value full-fat small curd cottage cheese. (Works great.) But the microwave takes too darn long, and you can only make a few at a time, so it takes FORever. Just a couple of days ago I tried Steve’s at Serious Keto’s method. It takes a long time, too, but I don’t have to stand at the stove for an hour, and they come out WAY better. Perfect, in fact. So that’s how I’m doing it, and I just bought a #100 scoop to make it happen. I don’t put anything in the cottage cheese…we like them plain. PS Cooked, Steve’s way, they WILL stand up to dip, just so you know.

I just watched another keto twins video where they made the same chips but they added a tablespoon of freeze dried potato flakes! Evidently makes it taste even more like a potato chip. I may try that because we’re talking such a small amount of carbs for 1 tablespoon in a whole batch.❤

I use the cup cake liners for using with dip. I put spoonfuls of dip on them.
I took a page from Steve at Serious Keto, and I use Kroger brand and blend it up till smooth, and plop it onto a teflon sheet and bake it in the oven for 80 total. I can make about 9-12 chips at a time and they come out chrispy and crunchy and I have enough to share. My coworkers and neighbors love them. My neighbor had guacamole and chips last night using these cottage cheese chips. She was able to scoop up thick guacamole and get a nice crisp crunch from it.
It s totally worth it to do it in the oven for me, becuase I found that they do keep well on the shelf in an air tight container so you can make batches and keep them for later meals. I've tried Aldi and Daisy brand and it doesn't spread as well as the Kroger brand, and they were more like crackers than chips, but if it doesn't get crunchy all the way through, I put it in my dehydrator to finish. Some of my chips will brown, and stay flat, some will be crispy on the edges but still flexible in the center, Those I also finish in the dehydrator ( I have my dehydrator going all the time with various foods drying , you can leave it in the turned-off oven with the door open for the same effect) They curve up like Pringles chips!

I held my breath first, then bought those colorful silicon cupcake liners at the Goodwill. Haven't gotten nerve to try them yet, but hmmm. In the "Winter kitchen, I just set up a microwave -i bc black mold took out my appliances, wall, floor, cabinets, etc, - leaving me with trusty, excellent George Foreman grill, back in end of year. Much better now, but the floor is still due. Life goes on and it is good and good enough!
I use these silicone cups to make cheese crisps and they work fine. I haven’t tried them for chips yet.

I tried the pork rind tortilla (remnants of the trial) and microwaved it and a great crunchy chip with no carbs....whereas cottage cheese chips have carbs. They were good and awesome with salsa and cream cheese.

@@helenelast Me too. The cottage cheese I'm using is what I had on hand - small curd and very dry. I found the crisps formed in about 70 seconds for me when making a batch of 5 (~3/4 tsp each).
Aldi has the same cottage cheese with probably the same additives. Just made several batches. Yum! Thank you for sharing. I had no clue, either.

Air Fryer, Cosori Blaze (has lower element): 400°F, 2 minutes, tilt tray and blot liquid; 8 more minutes, add squares of cheese (jalapeno haverti); 1 more minute and WOW! I've been eating pork rinds but am no fan so these are the bee's knees.
I make these in the air fryer......so much easier.....more crispy too!

Have you ever tried just using nutritional yeast instead of that expensive flavoring. Just add a little salt and pepper maybe a little bit of almond flour. I haven't tried it yet but I'm willing to try it to get that nacho cheese flavor.
I tried the Serious Keto version and was unable to duplicate Steve’s results because I use Good Culture cottage cheese and it doesn’t have the additives the others do. But I just tried this. I plopped 1/2 teaspoon on a piece of parchment paper, put it on a plate in a 1200 watt microwave at full power. I set it for three minutes but after one and a half minutes it smelled pretty cooked so I pulled it out. The CC melted beautifully, and the chip was translucent and crisp! This is changing my world. Thank you for bringing this to our attention, Wes, and I will be visiting the account that you mentioned so they get the traffic also. I can’t wait to try these with the flavored powders!

Serious Keto took their idea and really took it to the next level. I live in Texas so used a big store brand and it flopped. Switched to Daisy brand and it worked like a charm!
I used daisy large curd and they flopped. Did you drain the cottage cheese first!
@@shirleywilkinson9335 I think that with Daisy you would really have to process the cottage cheese for a few seconds. The curds are cut with a machine and there would be a lot of liquid (between the curds on the pan). These crackers fail in the microwave when there is too much liquid. They also fail if, after processing in a food processor, you don’t spread them out a bit first, depending on the brand. The ones I made yesterday were too thick-which signals disaster-because they didn’t spread. They can get very hard. But I had perfect results a couple of days ago with the same brand. It’s try and error, I’m afraid, to get these right.

You guys! Mine were a total fail. I used Daisy 4%. It spread out too much and looked thin and holey after being cooked. Not all like on the video. One I over cooked a tiny bit, but it was so delicious. But most of it stuck to the parchment paper. The second try was so thin and would not come off the paper. I have a pretty low/medium power oven. The paper was soaked on the bottom too. Any suggestions?
Daisy seems hit or miss, unfortunately. The Keto Twins used it in their video and didn’t get great results. :-(

Always enjoy your videos. In fact, my husband, who enjoys the Keto recipes/ideas I find online, only recognizes 2 or 3 Keto/Carnivore channels and YOURS is one of them! This is partly because many of the recipes you have brought to our attention have become staples for us but, MOSTLY because he enjoys watching you make them. I have seen other videos about the cottage cheese chips and, for some reason (maybe because I had some Kroger cottage cheese sitting in my refrigerator needing to be used), this is the first time I tried making them. They are GREAT!

I used Organic Cottage cheese small cured from Albertsons. The chips turn out crispy.

I love these and make them often, but use the oven and make a bunch at one time. Although, sometimes that’s dangerous. Serious Keto has a video about making this into a thicker cracker, he has done several experiments, they are really good also.
Bbq seasoning. Sour cream and onion popcorn seasoning. Kettle corn popcorn seasoning. Salt and vinegar seasoning. Over at amazon.
WOW! what a game changer. I made some with the Great Value brand cottage cheese and then sprinkled some keto BBQ rub blend I use for ribs. Tasted just like BBQ potato chips which is my favorite flavor. I did try some plain and then some sprinkled with salt. The salted ones were better than the plain ones which are good as they are.

@@highlandstarr I use Steve's recipe from Serious Keto. I use Truvia Brown Sugar instead of the Sukrin Gold which I can't find in any store where I live and I really don't want to order it online. I find the Truvia brand works very well.
I sprinkled only a little bit on the chip as soon as I took it out of the microwave. It tastes better if the chip is still slightly warm.

We don’t have a Trader Joe’s so I used Daisy full fat cottage cheese. They spread and looked lacy (holes all over). Any tips?
It seems people get mixed results with Daisy brand. If you can’t find a store brand that would work, some folks are saying you can run it through a blender or food processor to smooth it out before cooking, and that helps it hold together. Worth a shot if you already have some to try! Let us know how it turns out. :-)
