I am diabetic and have high blood pressure. I started doing Atkins last year and it is the only diet that has not only helped me control my weight, blood sugar, and blood pressure, but has also resolved many of my other health issues: sleep apnea, IBS, fungal & yeast infections (tend to go with diabetes), nausea and many others. It really makes me angry that for decades doctors would scare me away from Atkins, but everything they told me was not true. I finally found a doctor who would believe me when I said that I wasn't cheating on the DASH/Diabetic/Mediterranean diets they had put me on and that they didn't work for me. He suggested Atkins and it has been like a miracle for me. Love this way of eating.

I don't know if anyone has suggested this but just watching you do the first recipe, I might consider scoring the dough (after it's rolled out), plopping the parchment paper right on the baking pan, and then break them after they're baked. Of course, unless it's for company, I don't care what something looks like, just that it tastes good.
And that's exactly what you did with the second recipe. :D

Wesley trust me two silicone mats you can see through them when they are clear or frosted White! Works really well even with the driest dough!
another nice thing is you can run your hand along the top of the silicone mat and you can feel where the bumps are and you can make your dough perfectly level. You also can make it perfectly shaped because as you roll you can see where the dough is moving to... Your silicone mat with the blue edge that you're using is perfect. put your Dough in between two of those like what you are using to bake on right now and roll it out inbetween them. should it slide (which it probably won't) dampen the bottom of the bottom mat onto the counter! It won't move :-) then what I do is I just put the dough that is already on the mat that I cut with my pizza cutter and two squares or triangles and have docked with my pizza dough docker straight onto the pan to bake!no trying to remove anything when they are done baking they come right off of the mat. Usually after cutting with a pizza cutter you do not really have to separate them they will separate on their own. But if not they are still easier to move than when they are on parchment paper.
I do know that you're trying to follow the recipe but in your own time try this!
Any crackers that I make come out super crispy and with any recipe I can make under 15 minutes. I can pump out 7 batches in less than an hour.
It's called meal prep Monday :-)
For anybody looking for another really good crackerr tryout Suzanne Ryan's recipe and omit the egg! Those are the crackers I make they are super crunchy! I salt them generously with sea salt before I bake them ❤️

Oh, and I do love seed crackers. I've been making the recipe by Heavenly Fan, which uses psyllium husk powder as a binder instead of the ground seed portion, and doesn't add flaxseed. And she adds oregano, which is good. Seeds are very healthy and filling, but I agree it's an individual preference.

I've made some like the seed crackers before and I liked them best of they where all chopped up. They to me are good for when you just want something crunchy that can travel in a lunch box. Will work with cheese though (like a creamy cheese spread)

You are a fabulous Video host! I love your facial expressions, your accent, and your funny quick comments that might seem like just a word to others but you crack me up! I just enjoy watching you share these recipes. You make me want to pull out the stops and get busy baking. I started Keto but went on vacation three weeks later and have had a hard time getting back on the plan. I have found alternatives to eating sugar, candy, and junk food. My husband is diabetic and I've found some keto deserts that he can enjoy and wont raise his glycemic index, which is wonderful! Thanks so much for your video and I'm going to look for more of your videos to enjoy. thanks again!

Great presentation. I would suggest replacing all the parchment paper with nonstick food grade silicone baking sheets. You can easily roll out the dough between two sheets, no sticking. Using a glass rim for cutting out the crackers will not damage the silicone mats. Very smart. Put the sheet with the outlined shapes onto the cookie sheet, THEN remove the scrap dough and roll it out on another silicone sheet. Repeat. No need to transfer individual circles of floppy dough. Silicone sheets are worth the investment. No clumsy parchment paper cost and waste. No messy clean up and stuck foods. It goes in the freezer, the oven, the microwave, and the dishwasher. My 20-year old SIlpat is ready to take on these recipes!

Tip for fathead crackers. Dehydrate them and they get crispier. And if you use dough hooks on your hand held mixer it is a game changer.
Not a big fan of Atkins. They talk about hidden sugars but use maltitol in their products which will elevate your blood sugar.

You could always lower the temp in your oven & cook longer to pull out moisture. Also, Atkins has a “new” variety that is sweetened with erythritol now.

Flax oil goes rancid super fast -- and starts to taste 'off' fast too. Corn oil can be half rancid and still taste okay (that's why it's so popular in commercial products).

Heavenly Fan freezes her dough in a loaf shape small enough to fit through the food processor . When she removes them from the freezer, she lets the dough rest 10-15 min and then uses the slicer attachment of the food processor to slice the crackers. Super fast. Then re-freezes them until ready to fry or bake.

I have an idea for cutting them out. Make a small tube of dough and place between two wooden skewers (2" wide) roll out between parchment. Move skewer away and cut little square pieces the width of your lifter. Makes relatively even pieces to cook.

  • @diannehess8121
    @diannehess8121 4 ปีที่แล้ว

The thing with the Keto dough is that you can cut it completely square. The rough edges you cut off can be put back on top of the squared or rectangle dough and rolled easily back in.

I only have patience for the microwave approach: 1 teaspoon of good grated parmesan (not the sawdust) spread into a circle on a ceramic plate in the microwave for 1 minute - I make 9 per square plate - scrape them off with a spatula or flat knife while they're hot and flexible - let cool for a few minutes or put them in the freezer for 1 minute. That should result in 7 calories each. Similar result with shredded mozzarella and other hard cheeses.

I’m watching the first cracker recipe right now. My first thought was to put the parchment with the rolled cracker dough in the freezer for 10 min before cutting. I think that would work well because it would firm up the butter and make them easier to handle.

  • @micheleosullivan4430

I've made the first crackers with fresh basil. A little trick, if you have it. After I roll out the cracker dough, I toss my large pizza stone in the oven (only for 1 minute) Slide the warm stone under your parchment paper and it will loosen up the dough, but not melt it. They'll slide right off.

The thinly sliced cheese cracker mod... Provolone makes a good choice. The flavor is more neutral than cheddar.
After making your provolone crackers, put a drop of pizza sauce on it, a small pinch of mozzarella and a pepperoni. pop under broiler to melt cheese. Crispy little pizza bites! These are awesome!
