Yes! And I forgot to say this in the video… but never put the pie pan on a cookie sheet or put a cookie sheet on the rack below. It acts as a shield and prevents this great browning!

Do you think it would be possible to freeze the filling separate and crust dough disks for later use? Acre Homestead has me all obsessed with making extra for the freezer.
i do not have a metal pie dish, do you think it will still turn out crispy enough in a glass dish or would attempting to make it in my cast iron pan be a better option?
I don't like pie crust. Until I do. I'm not sure what in particular I am looking for, but when a crust is good, my God it hits in ways I can't imagine. Making pie crust has always challenged me. I'm a very active baker, and pie crust is my Everest. I just can't seem to get it right. I'm looking at the effort for this method and will declare it worth it if the crust is amazing, but it's hard to get going knowing there is a risk I won't like it either. I wish there was a money back guarantee.😅
I've had some issues with the pie dough, it started completely falling apart after I rolled it out. The lattice slices kept breaking clean off when I peeled them back. I'm wondering if you have any insights on what I did wrong? It's my first time making something gluten free so I'm a bit out of my depth 😅
Thanks for the response! I did follow it perfectly so I'll try adding more water next time. It turned out absolutely delicious despite the dough struggles and I'll be making it again very soon for my gluten free friends 😊
If you've a complete novice like me - make sure you add enough water (despite the warnings). Once I started layering, I was dealing with chunks. Perhaps better to add too much water, resulting in a tougher crust, rather than no usable pie crust.

Hi I need to make it gluten free, i saw your notes but i am not sure what it means use a "cup for cup" type of flour? What is that? I am in the uk, mayne we use different terms
That is any gluten free flour blend that is formulated and meant to be used as a 1:1 substitute for regular white (wheat) flour. Here in the US most of those are a mixture of several different types of gluten-free grains/starches (like rice flour, millet flour, potato starch, tapioca starch).
@@wholefedhomestead ha yes here too, but they never say 1 cupt to 1 cup, i do not know amy of ours that has that descriptin, but i use Dove Freee plain white flour usually which is GLUTEN FREE Plain White Flour Ingredients: flour blend (rice, potato, tapioca, maize, buckwheat).

Ahhh another great tip! I do that all the time to prevent it spilling on the oven!
@brennap520 you can put foil, or buy an oven liner sheet, on the bottom, below the heat source, if there is a lot of bubble over.

I don't think that would work. It needs to be cooked hot to set the crust. You could cold smoke it a short time after it's baked...

Yes! This is actually the pie filling (well, pretty close to it) from my book, Freeze Fresh. It freezes beautifully! And crust can be frozen too.

No, I wouldn’t do that. It would be way too small pieces and you wouldn’t get the flakiness.

If you followed the recipe ingredients exactly, including the xanthan gum then I'm almost certain you just needed to add a little bit more water. 😊👍🏻

I usually use a Rumiano, but any European style is good!

Yes! I still try to work it as little as possible… but it takes the rolling and folding pretty well.
