In my opinion sugar is not totally optional. Every savory dish benefits from a tiny bit of sweetness. Honey, sugar, brown sugar, molasses, I have never been upset by adding a touch. Just do it everyone. I’ve found that the difference between my home-cooking and restaurants is that they are not shy about adding sweetness, saltiness, sourness, bitterness, and above all umami. the most impotrant step, for which sweetness, I think, definitely contributes.
I love egg curries with hard-boiled eggs, this is is a great idea too! The fluffy omelettes probably soak up the gravy easier. Thank you for the recipe!

I do it all in a wok then oven cook for 2 hrs at 95 deg. When its cooked il add yogurt. Its bhunna chicken with beef really. Chipatis are done; rice is done. So im watching your new video and drinking ginger soup
Made this for dinner earlier this week! I made the Omelettes the way my mother used to - separating the yolks and whites to make super fluffy soufflé omelettes. I just bought the Hawkins tadka pan last week. So perfect. We loved the recipe. I wish I could share the picture with you!

Just made these today. Very delicious and easy to make 😋. First time making a curry too so had to get the balance for the gravy / masala but was very nice. The omelette too was so delicious you can just eat it on its own without the masala
My mom in law makes a version of this recipe. I loved the idea of beating the eggs to make it very fluffy and frying it in a tadka pan. It turned out lovely.

Saw this last night and I figured I had everything on hand except for the green chili peppers and kashmiri chili powder (but I did have smoked paprika powder so I used that with some chili flakes instead). I made my omelette in a regular frying pan with six eggs (for three people) and it turned out delicious, the egg was super fluffy and soft. It's also very tasty when reheated as leftovers! I feel like making an omelette like this would be a great way to add a protein-rich side dish with other flavours, too.

You have such a soothing voice... My mom would a make this but once in a while when she is too tired she would directly make spaces in between them and then break the egg and covered the pan with lid... It would also tasts great..

What about a dash of coriander powder before adding tomato and a sprinkling of Garam masala powder (a teaspoon of ghee too …. purely optional) just before turning the flame off ? Another variation could be right at the beginning, tempering the hot oil with bay leaf, red chili whole, a pinch of cumin seeds and crushed green cardamom, cinnamon and few cloves). Making the omelette in the round bottom pan is a good idea.
You inspired us to visit our nearest Indian market to purchase a few items before making omelets several times which have turned out very well! Instead of the sauce, I have garnished w/ketchup - I also have made some omelets with all your ingredients plus fresh spinach and green onions, equally good! Thanks very much!
