Porcupine is a protected species in Italy. They used to hunt it until they almost got it extinct. And there are no farms for breeding. In Tuscany it was a very common dish and in fact they have one of the best recipes for it. Unless somebody runs it over by accident, there is no (legal) way you can have porcupine in Italy. Also, the female is the one considered good for human consumption. Little update: A porcupine found its way into my garden and ate all of my irises and hyacinths. Needless to say I'm not happy lol

In California, we have a large Vietnamese community with excellent Vietnamese restaurants. We also have a lot of raccoons which is eaten in the South. I would love to eat game cooked Asian style.
You wont find these at ordinary vietnamese restaurants. Better luck going to a vietnamese bar-restaurant since stuff like this are considered drinking food. Not the ordinary rice/pho stuff

I was in Libya once (western mountain), and some guys were hunting porcupines at night. I was skeptical at first, but I tried it anyway, and it was actually pretty good. The meat was a little chewy, but it had a rich, flavorful taste. I'm glad I tried it, and I would definitely recommend it to others. 🇱🇾
