Just want to also added on by letting yall know that Hmong people from different countries, we lived different from each other due to a tragedy event that took place in the Hmong history. My wife and I spent 4 nights in BacHa March 2020. People were afraid of foreigners because of COVID. Many hotels were closed and some restaurants would not serve us. The family at Kim Dat Hotel (right at the market) took us in and treated us like family. Madame Cham at the Hoang Yen Restaurant always greeted us with a smile. We took to eating all our meals there because we became tired of being discriminated at the others.
Most of the Hmong vendors were nice and treated us well. The majority of the problems came from the Vietnamese shop owners in town.
Still our time in BacHa was interesting and I would love to go back again.

Ah, I think the blood sausage was good! I'm from Estonia, Northern Europe and we also have the blood sausages as traditional food. When I was a child, it was my favourite! We make it the same way with cleaning the intestines, but we mix the blood with salt and barley. I absolutely love them and we mostly eat it for Christmas coupled with cranberry or lingonberry jam. Another weird Christmas dish we have is meat jelly that sounds and looks very strange for most westerners. For this we cook swine head and legs long tume with some herbs and vegetables and later on we scrape off the meat from the bones and mix the liquid with the meat and pour them into cups and let them cool off, they will come out solid and taste well with some mustard or vinegar.

@@JohnDavis-uc1ic I don't really know the literal history behind the Hmong literature other to say that it was adapted from white missionaries whom visited ages ago to teach the gospel of Christ. Therefore, they use the alphabet characters unlike other nationalities you've may come across. However, there are certain ending letters/vowels in the Hmong language that will alter the word.
For example in the White Hmong dialect: mov = food/rice. if you change the "v" to a "b" now; mob = sick/hurt and is pronounced "maw" but with the tone pitch slightly higher at the end. Easier to hear the difference in person than on text.
