To make it more simple just take 3:1 ratio of cornflour and besan (chickpea flour) mix lukewarm water till consistency is free flowing thick liquid dough ..like dosa batter add vinegar and salt and little baking soda. Heat up pan and spray oil, spread out liquid dough in circles and heat till brown on both sides. Simple fast and can be enjoyed with any chutney or aachar.
Yes. It is exactly the same as a mexican corn tortilla. Try using Harina Pan or Maseca. Also, it cracks bc you used cold water (it has to be tepid) and kneed it more and leave it to rest so it can absorb the water

Hello, no mielie meal is not a proper substitute for this recipe due to the difference in grain size and texture.

I use cornmeal, it is gritty and not as finely and smoothly powdered as corn flour/corn starch.
Corn starch is a completely dif stuff. Use Harina PAN or maseca
