It's probably just a brain thing misinterpreting patterns. Generally in positions in which people allow you to take that pawn, the bishop's defending the knight, so the rook moves with tempo on the queen, maybe the queen gets trapped, and so on.
But what really happened is the opponent was acting on principle of not ever giving Eric his gambit. If you can take a Rook with check against Eric, look for some other move that doesn't take free material!

I loved the game where was just pawn moves. I'm always so scared to lose on not developing correctly.

There is some chess content showing famous "10+/many pawns only moves" games :) - recommend it - these are really some interesting games - later you only need to develop with tempo :)

Never heard of the Herrstrom gambit in the Zuckertort opening before
, but it was imho the coolest of them all. My favorite gambits are the Belgrade gambit, the Von Hennig - Schara and the Fred.

Made it to the end. Great games. Favorite gambit would probably be the one that you moved only pawns for the first 13 moves lol

The Smith Morra where you gambit-ed your bishop was a really beautiful game.
