Vintage Budget Meal: 1980s Viva La Chicken Casserole!

    - Recipe from the cookbook -
    VIVA LA CHICKEN CASSEROLE
    4 cooked chicken breasts
    12 corn tortillas
    1 can cr. of chicken soup
    1 can cr. of mushroom soup
    1 c. milk
    2 cans green chili calsa (10 oz. ea.)
    1 onion, minced
    1 lb. cheddar cheese
    Bone chicken and cut in bite-size pieces. Cut tortillas in 1-in. strips. In bowl, mix soups, milk, onion, and chili salsa. Grease a large shallow 9x13 dish; add 3 Tbsp. water.
    Place 1/2 of the tortilla strips in bottom of dish. Cover with half of the chicken. Pour half of the sauce over the top. {✨I would put half the cheese on the first layer. The recipe says put all the cheese on top, but I think it’s better if you put some in the middle, too.} Repeat layers ending with sauce.
    Top with cheese. Refrigerate 24 hours. {✨overnight is plenty of time} Bake next day 1 1/2 hours at 300°.
