My mother made this for many years, fed 8 kids, parents and had some leftover for a meal in my dads lunchbox the next day…best meal ever..❤…sometimes my mom would substitute the broccoli with potatoes, fiesta corn or leave it out the veggies…any way she made it - it was delicious and I still make it when my kids and grandkids come over

My chicken casserole was in layers w the shredded cooked chicken on bottom, the cooked green beans on middle layer, then a can of creamed soup, chicken, mushroom or chicken mixed with 8 oz sour cream and a soup can of milk, then poured over the veggies. The topping was buttered bread crumbs, like yours and some added cheese. I didn't use cheese. Cooked the same or until the casserole was bubbly. Everybody seemed to love it.
I love how you remind me of all that I love about Appalachia. We live in the rural west now but eat just like you do.

I was happy you were on when I got home. Watching you was a way to unwind after this long week. We just got home after laying my Father in Law to rest. He is at peace now. It was so heartbreaking watching in go down hill so fast. He was 82 and just 2 years ago he was cutting his own wood to heat with. He was such a sweet strong man of God

Looks great. I like to make brown rice, and stir leftover chicken into it, and then melt cheddar cheese over it. Sometimes I add chopped sweet onions into the mixture.
Yum! My Mom fed me and my Brother lots of casseroles growing up. We used to do the "dime a dip" casserole get together to raise money for the church too. Thanks Tipper 😊.

Didn't grow up eating casseroles, my bros hated them. But when I first got married made this baked dish Chicken Divan. Cooked chicken on broccoli stalks with a layer of grated cheese. Bake to melt cheese. Good for one or two. Your recipe would be lovely for a party. Hello from sunny Oregon.

When I make a chicken casserole, or any type of vegetable casserole, I like to mix in some of those French fried onions with the dressing/bread crumbs. It really adds to the flavor!

My aunt do do made this and to this day its my favorite. But I'm really drooling over the green beans and the juice! I like it on baby spinach with some vinegar. But haven't had good beans in over 30 years. Love you guys

My mom always made this and we called it chicken broccoli casserole. She put panko and cheese on top to make the crust. Her recipe also adds some curry which gives it a nice warm flavor.

This is so good! I made this once but I didn’t have any mayo. So, I used sour cream and it worked out great!
I make a casserole very much like this one. I put water chestnuts in mine. Recipes can be so similar and so different all at the same time lol

Tipper I've made the chicken casserole twice so far from the cookbook the second time I made it it with broccoli and asparagus and Monterey jack cheese and added crushed Ritz crackers and butter to the top loved it both ways.. Love chicken casserole, my kids don't like cream of mushroom so I just use cream chicken and all the rest and it's great. Great to see both you and Matt. Peace
I love chicken casserole like this. It's also great as a chicken broccoli rice casserole. I use a box of Zatarain's yellow rice (prepared) for this. Any southern casserole is food for the soul. ❤
That looks delicious!!!!!! When I was young, the 70's,we always had Sunday family dinner after church. The main dish was usually Bisquick oven fried chicken. I'm thinking your casserole dish would would be off the charts!!!!!!!! Thank you for sharing!
My version of Chicken Casserole replaces the paprika with curry powder and we put rice on bottom with the chicken mix on top. I’ll have to try your version, looks great!

If you want to stretch this out to feed more folks, you can add cooked rice to it. It really takes it up another level. I always add a cup of cooked rice and I have been known to add some finely chopped onion. I have also used Pepper Jack cheese in it. Gives it a little pop of heat, but not too much. So many things you can to with this recipe.

Everything you cook looks great. You make the best looking cornbread. I've started using your cornmeal mix brand and like it. Momma's chicken casserole version used buttered crackers as a top and included water chestnuts.
I'm 65 & grew up with this recipe. Only had crushed Ritz drizzled with butter for topping. I've used canned chicken 3 lg cans in a pinch

I love almost any chicken casserole…yours looks delicious….wanted to say that I recently made biscuits using your method & they were a big hit with friends & hubby…I’ve actually made then again yesterday…. And I always use your recipe for cornbread…yummy ❤

I have to say that I love your cookbook. It is so fun to read and of course cook from. I can't wait to cook this recipe. I haven't cooked anything that involves using the oven. I live in Texas and it has been too hot to use the oven.
Maybe you could try it in a crockpot if you want it before you get some cool weather. I use part of a rotisserie chicken in mine. I find here in Va. it is cheaper than buying a chicken and cooking it. Only $5.00 at any of our big box stores.

I've made a similar recipe for years. I put the chicken and brocolli on the bottom and combine the soups and mayo and spread it on top and then top it with cheese. It's my kids favorite!

@@CelebratingAppalachiaTipper, I Raised 9 kids n as they was growing up I would always have to add rice as a filler or a pasta or dumplins, 😊 to everything n my daughter brought us some of this, night b4 last n had rice in it 😋❗... Its her 6 yr old sons❤ fave. Dinner so she made a big double batch cause he comes in from school n has a leftover snack while waiting for daddy to get off work n mommy to run a errand or 2 n waiting on dinner😅😂❗... So funny how when we 🚫 have alot we sure can make miracles in the Kitchen, as my youngest son would say growing up 😅❗ I made mine just like yours but added rice n lil broth from my boiled chicken or my Turkey for the rice to soak up n it was always a hit , we make so much alike Tipper❗ I ❤ you n the girls , n of course the rest of the family n you've inspired me to grow new things I was afraid I Would fail at next year😉❗... I jus found yall several months ago n God led me to the right home 🕯 to visit for comfort n feeling at 🏡, bunches of ❤ to y'all 😘❗

I make a chicken broccoli casserole. I just use cream of chicken and sour cream and of course cheese. Great recipe.

@@Jabo__Jabo you can leave out butter as it is all mixed together anyway. I do mix up a bread crumb crust on top. One cup bread crumbs mixed thoroughly with 1 tablespoon butter until the crumbs are greasy.

My recipe doesn't call for broccoli. so just leave it out. Or add a vegetable they do like. Some mentioned corn, or potatoes or even noodles.

When I was still able to stand & cook, I made a chicken casserole very similar to yours but with no broccoli. Those pickled beets reminded me of mama's! Oh how I miss her good cooking! You make me crave the food I'd love to still be able to fix! Blessings to y'all from VA! 🙏💗✝️

Yum, yum!!!!! Y’all did indeed have a feast!!!! My chicken casserole is like yours. I don’t remember where I got it from but I but onions in mine and because my hubby doesn’t eat broccoli, I always just used basic mixed vegetables. I know that broccoli made it really good! Beets are delicious, as is the home cooked green beans. A meal fit for a king!
We have a similar recipe in my family...My sisters son asks for it every birthday meal...My sister used to cook in a Long Term Facility for 100 residents...She adjusted the ingredients for that many people and they all loved it...Its definitely a comfort food for me on a cool Fall day or a cold stormy day in the winter...Thanks for sharing😊God Bless you and your family🙏🙏🙏
I made this the other day and followed your recipe to the letter and it is SO GOOD!! Now my favorite casserole of all time! I added a little cranberry sauce on the side when serving.

such a quick, simple but delicious meal Tipper...you all do eat good! The casserole looks good and it is one a person could 'switch up' with a variety of varying items. I like those kinds of recipes.
I grew up eating lots of different casserole dishes, and mom’s recipe for chicken casserole was almost exactly the same as yours! The only exchange was instead of mayo, she used chicken broth…mmmm! Chicken casserole!!! 😊

I love casseroles in general. I made one with white rice, chicken, broccoli, shredded cheddar, and a jar of Alfredo sauce. Kids ate it all up quick.
This is very similar to a dish I made for my family and my sons now make on their own. Mine has curry powder in place of the paprika and a tablespoon of Worchestishire sauce. Isn't it wonderful how versatile it is?! YUM!
I make this casserole but use frenches fried onions for topping really good.
This sounds yummy! I make a chicken casserole with cheese, rice and cream of whatevers in the cupboard, but I think I'll try your recipe next time. I have your cookbook on my to get list, but I need to wait until my rich Uncle gets outta the poor house.😂

That looks delicious! My family loves casseroles, so we will have to try it. I make a chicken noodle casserole that we love that is just slightly different. I don't have specific measurements but basically you cook up a bag of egg noodles, according to package directions, once cooked you combine the noodles with veggies (can use frozen veggies or sautee up whatever veggies you like), shredded cooked chicken, one can of cream of mushroom, one can of cream of chicken, salt & pepper to taste, a pinch of garlic powder, and a pinch of cayenne pepper. Then you crush up ritz crackers and put them on top. Bake covered at 350 for about 30 minutes. You can take off the cover for the last few minutes to let the crackers brown if you want.
Sounds yummy!
