    Love this series. I like different toppings for different fruits.... apples and the like, I like a crisp.... berries and stone fruits I like a cobbler, sometimes it's cakey and others it's like a sweet biscuit. I do love them all :) Thank you for all these amazing vintage recipes!

    That was a very interesting pan comparison. It made curious as to whether the cake in the modern pan was a little over cooked? So I searched and found an article at King Arthur’s Baking that compares metal, glass, and stoneware pans. It mentioned that glass cookware doesn’t transfer heat as readily as the other two materials, so it can take longer for food to cook n them. For that reason, the article said, “The standard advice for baking in glass is to lower the oven temperature by 25°F from what the recipe calls for, and bake up to 10 minutes longer.” So, if you baked both cakes for the identical conditions and amount of time, then it is very possible that the stoneware baked cake was overdone. So, don’t give up on that modern pan, it may just need a little experimenting to get the perfect bake with it. Both pans are lovely and I can see why you enjoy them.

      ​@@spiralboundfoodie The article also gave some insights into stoneware pans. There are Two (2) major methods of creating stoneware and one method leaves tiny air pockets in a pan, while the other doesn’t. Furthermore, different clays can contain a wide variety of minerals, which can affect heat transfer. So, unlike for glass, there are no general baking adjustments when using stoneware. Probably any adjustments would be the same for a given manufacturer, presuming that they don’t change either the manufacturing method or their clay source.

      Hi! Here is the recipe for Homemade Boxed Cake Mix you requested. Hope it helps, and enjoy making cake! BASIC HOMEMADE BOXED CAKE MIX RECIPE 2 cups cake flour (250 g) 1 1/2 cups sugar (300 g) 1/2 cup buttermilk powder (80 g) 1 Tablespoon Baking Powder 1/2 teaspoon baking soda 1 teaspoon salt 1 teaspoon Vanilla Bean Powder FLAVOR OPTIONS: 🍋Lemon- add 2 Tablespoons lemon zest, dried (from 2 large or three small lemons) 🧁Funfetti- add 1/2 cup rainbow sprinkles 🍫Chocolate- add 3/4 cup cocoa powder 🍎Spice- add 1 heaping Tablespoon Pumpkin Spice Ready to bake?     How apropos! We were just discussing last night about the San Gorgonio Inn’s Honey Apple Cobbler. The San Gorgonio Inn was a restaurant in Banning, CA that went out of business in 1984. They offered a complete meal at a reasonable price. The included dessert was always Honey Apple Cobbler. It had a very thin, flat crust Instead of a biscuit, pie crust, or cake like topping. I think that it didn’t even have baking powder or baking soda in the topping. It was more like a very thin crepe batter, but not very eggy, so it was more fruit than topping, It was the strangest, yet very delicious, apple “cobbler” that I have ever eaten. Anyway, thanks for the excellent bit of history on fruit cobblers.

      I’ll also mention that I don’t like melted ice cream; I want mine icy cold. So I would never have ice cream on hot fruit cobbler, but I would have it on cold cobbler. That’s probably heresy to most folks :-) .

      - RECIPE - Preheat oven to 350° 1/2 c. sugar 2 T. cornstarch 1 /2 c. water 4 c. Fruit Whisk cornstarch and water until no lumps. Combine with blueberries and sugar. Pour into a 1-1/2 qt. baking dish. Bake at 350° for 30 minutes, stirring halfway. Sift together: 1 c. flour 1-1/2 t. baking powder 1/2 c. sugar 1/2 t. salt Stir in lightly: 1/2 c. Butter, melted 1/2 c. milk Pour onto hot fruit. Bake at 350° for 35-40 min., until golden brown.

Let stand. Put butter in a 2-quart casserole; place in a 325° oven to melt. Combine remaining sugar, flour, baking powder, salt and milk; pour over melted butter. Do not stir. Spoon fruit on top of batter; do not stir. Bake at 325° for 1 hour. Makes 4 servings.

    🍋 Minty Lemon Punch Recipe: 1 cup boiling water + 1 cup mint jelly. 3 cups pineapple juice + 3/4 cup lemon juice. 1 cup ice water. 1 quart ginger ale. Garnish with fresh mint and lemon slices. Enjoy

    SAVORY CHEESE BALLS 11/3 cups coconut 2 pkgs. cream cheese 1 1/2 tsp. curry powder or chili powder Bake mixed coconut and curry powder in shallow pan 10 min. or until browned at 350 degrees. Cool. Form 60 small cheese balls, roll in coconut. Chill to firm and stick on a pretzel to serve.
