I lost my sweet 98 year old mother-in-law in 2020 and you remind me so much of her in the way that you cook. She was a wonderful teacher just like you.

These are the best kind of cookbooks! When I go to thrift stores, I normally pick up the cookbooks that the churches put together from their parish members. The cookbooks you find in the stores are so complicated with fancy ingredients that I never use. I am definitely getting this cookbook! And I am definitely going to make this dish! It sounds amazing.

I made it twice since receiving my copy of your cookbook. The first was exactly how you show it on line and it was fabulous. The second time I did it with low sodium broth and I used 2 cans of cream soup. The biggest difference in my second one was I added finely chopped onion and celery sautéed and it was just as good if not just a tiny bit more tasty……..Both times I served it with Lesure peas and ABSOLUTELY cranberry sauce is a must. We love it!!
I was thinking a sautéed onion in butter would go well in this recipe. May add some green peas or beans as well. Good call on doubling the soup as well. I think it needs it. Wondering if I should use some cream of cheese soup to give it a cheesy flavor. Might make it salty though. Def gonna slap some sour cream on top! It's begging for it.
I made this tonight. But I halved it. I didn't have the Pepperidge farm stuffing so I used great value chicken flavored stuffing mix. My husband after 38 years of saying he hates casseroles, went for a second helping. 😊
I only buy the big pack of peperidges farms on holidays. I thought I'd use two of the small packages of stuffing. I love this recipe. Cranberry sauce and a vegetable is all that needs to be added. I'm a new follower. Can I order the cookbook?

The best thing about this recipe is that it uses all pantry items which do not need to be frozen, thawed, pre-cooked, etc. It is a dump and go recipe, the easiest kind. Thanks for this yummy recipe.
I am 75 years old, and my granny Ruth made a casserole similar to this. She was making it before Pepperidge Farm came about. I know she cooked her chicken (a whole hen) and deboned it, then after that I am not sure what she did. I think she made her dressing like she would make for Christmas or Thanksgiving, then make her gravy and pour over the top and then bake. I always loved when she made this dish! This receipe reminds me of her and her casserole!
I just ordered your cookbook! I too am really bad a writing down recipes and they are all over my house. Now that I have your cookbook I know that at least I will be leaving some good old fashioned dishes to my children. My grandma was from North Carolina and your cooking reminds me of hers.
Very similar to what my mom used to make. I just made hers over the weekend. Got some marked down chicken breast tenderloins, cooked them in the oven with some olive oil, salt, and pepper, cut them into smaller pieces. Meanwhile, cook the stuffing (she always used Pepperidge Farm Herb Stuffing, so that's what I use too) as instructed minus the celery and onions (my mom never put them in, so I don't either) through the stove top instructions. Once everything is done, take the chicken and some of the stuffing, mix with the Cream of Chicken soup, layer into the bottom of the casserole. Then, put the rest of the stuffing on top and bake it to the rest of the stuffing's instructions. Done. Serve with vegetables. Yours is a bit easier, and I may try it, but I'll probably still use that herb stuffing. I've never had any stuffing over than that. I may one day try to make dressing from scratch since I've never done it and never saw it done. Pepperidge Farm is definitely the top brand. No Stove Top stuffing in my house. And you know Pepperidge Farm is the best because it's always harder to find in the stores. Thanks! - from your neighboring state to the north, the other Carolina.
Thank you so much for this recipe, my husband passed away 9 months ago and it's been hard for me to learn to cook for just me and I could eat this for days. I still do cook big meals when the grandchildren are over which is just about every weekend, they love their Nana's cooking.
Just made this recipe for dinner today. Had to double it because I had a lot of hungry people but this turned out so, so good. I especially liked the crispy edges of the dressing. Thank you for sharing! It was so easy and quick to throw together and a very stick to your ribs hearty kind of meal. I served it with canned peas and some pear slices. My husband sat back from the dinner table and said, "Hun, that was so good. Thank you. I got my belly full tonight."
Meme, I realize I am a year late to the party (just found you last week) however, after binge watching [and subscribing] I think your cookbooks would also be great for children who are interested in learning to cook. As of July 2024, I have two grandsons, who are 12 & 10 years old and the 10 year old is always interested in helping to cook. Your recipes are simple and obviously delicious and you make it fun to watch and participate in. Thanks for sharing your passion. I too love to cook and although I am primarily cooking for my husband and myself now, I find it easier to cook for a crowd than just the two of us. I am definitely going to try this recipe. I have a picky eater at home who has a problem with textures of food, but I am sure he is going to like this casserole. He loves chicken and he loves toasted, crunchy foods, and this dish has both. What a plus that it's so easy to put together and is so economical! (I ordered your cookbook. I'm going to order another one for my brother for Christmas. He is retired and does most of the cooking in his house. I'm sure he's going to love it.)

I've done a recipe like this for years. The only thing that I've done differently is that I use one envelope of Pioneer Chicken Gravy Mix put together with chicken broth mixed with the chicken. If you don't have canned chicken, you can also put chicken tenders on top of the casserole and increase the time to 40 minutes.

I'm going to make this the day before Thanksgiving. One daughter & her family will be getting in that day. So, I need a quick easy meal to fix. On Thanksgiving my other two, a spouse, a girlfriend & 4 grands will be here. I will be doing serious cooking that day & two days after. I need recipes to use the turkey & ham leftovers. One daughter is bringing a honey baked ham. Maybe sandwiches & salad. I haven't gotten that figured out yet. Food is such a fun way for families to be connected. I make my mother in law's crumb cake for breakfast one morning. She passed away before any of my children knew her. So, I bake it & talk about her for them to know who she was. I can give you that wonderful crumb cake recipe if you'd like it. Everyone loves it right out of the oven.

I made this for my husband when I had to go home for my grandma's funeral. While I was home visiting I made this for my mom and stepdad. Dear MeMe, I searched all over the high desert of California for Pepperidge farms stuffing to no avail so I finally looked at Amazon and found and ordered it. The same is true with Dukes mayonnaise. I always misplaced the recipe cards I had and I lost all of my cookbooks when I became homeless so I had started keeping recipes on flash drives so I don't lose them when a computer dies. I also thank you for your recipes. I feed our missionaries weekly and I don't like to keep repeating dishes. This has really expanded my repertoire. And I found Campbell's Cream of Bacon soup on Amazon. I can't wait to try it.
This is one of my favorite recipes from the cookbook. You are right about finding the corn bread stuffing, but when I do, I stock up on a few bags. I often use left-over turkey.
My family the McCrory’s and Turners were Early pioneers to Fairfield County in the 1700’s. I know some of your recipes were meals that my grandfather must have had as a young man near Chester. I love South Carolina and watch all of your videos. Shine for Jesus.
Very similar to a dish I have made for years that my grandchildren love. 1st layer: stuffing 2nd layer: chicken (de-boned rotisserie works) 3rd layer: cooked broccoli florets 4th layer: 1 can cream of onion, 1 can cream of celery, 1 can of milk heated, then poured over all previous ingredients. Last layer: cheese Plop into a 350 degree oven for about 15 minutes. 15 if the stuffing, broccoli, and soup are already hot. They ask for this all the time. I’ve had to triple it for 10 people.

Wow, that couldn't be any easier!! I didn't grow up on cornbread dressing or cook it; Yankee roots lol. In the 60s that was one of my favorite lunches at school (here in the south); turkey & dressing that had boiled eggs in it and in the gravy lol. My recipes were scattered all over, too, and even some just in my mind. Covid actually forced me into typing up my recipes, placing them in plastic protective covers, and then into a binder. Must be something that Grandma's do at some point in our lives.
I need to get my thing I cook for family together too. One example is my bread stuffing/dressing I make. My daughter called me once and asked for the recipe. I had to tell her I learned from her grandma( my mother) and she learned from her mother ! It was this way….. bread broken or cubed,broth,onion,celery,egg,salt,pepper,sage or poultry seasoning, sometimes giblets from Turkey if cooking one, and some of the little pieces I have meat from the turkey neck, if have. Some butter that cooked the onion and celery in. I did not have exact measurements ! 😅 she wanted to know how the heck did I make it like that !? My granddaughter and her girls love it and request it and my deviled eggs 😊😊 and gravy made from the broth.
Made this for dinner last night. My store didn’t have the stuffing so I used a box of Kroger brand stove top cornbread stuffing. Made it as directed and put it on top of the casserole. Talk about easy!

I am definitely going to try this recipe. I have a picky eater at home who has a problem with textures of food, but I am sure he is going to like this casserole. He loves chicken and he loves toasted, crunchy foods, and this dish has both. What a plus that it's so easy to put together and is so economical! (I ordered your cookbook. I'm going to order another one for my brother for Christmas. He is retired and does most of the cooking in his house. I'm sure he's going to love it.)

I've done a recipe like this for years. The only thing that I've done differently is that I use one envelope of Pioneer Chicken Gravy Mix put together with chicken broth mixed with the chicken. If you don't have canned chicken, you can also put chicken tenders on top of the casserole and increase the time to 40 minutes.
This looks so good. I think this will be perfect if I want Thanksgiving dinner when it’s not Thanksgiving.

I'm going to make this the day before Thanksgiving. One daughter & her family will be getting in that day. So, I need a quick easy meal to fix. On Thanksgiving my other two, a spouse, a girlfriend & 4 grands will be here. I will be doing serious cooking that day & two days after. I need recipes to use the turkey & ham leftovers. One daughter is bringing a honey baked ham. Maybe sandwiches & salad. I haven't gotten that figured out yet. Food is such a fun way for families to be connected. I make my mother in law's crumb cake for breakfast one morning. She passed away before any of my children knew her. So, I bake it & talk about her for them to know who she was. I can give you that wonderful crumb cake recipe if you'd like it. Everyone loves it right out of the oven.
Look at my Ham Perlo recipe, to use some ham. My family loves it.😋🙂

Just bought the cook book. I'm going to try the chicken casserole recipe this coming Sunday.
I made this for my husband when I had to go home for my grandma's funeral. While I was home visiting I made this for my mom and stepdad. It went over extremely well...I remembered to get some cranberry sauce. Thank you so much for this. My stepdad hasn't been doing well lately...my mom said this is one of the few things he will eat.

I thought I had watched all of your videos. Looks like I missed one lol. My mother always made this recipe and taught me how to make it. Now my daughter makes it! It's the exact same recipe except we use the herb stuffing mix. It just tickled us all to see MeMe use "our" recipe. God bless you all!!

Dear MeMe, I searched all over the high desert of California for Pepperidge farms stuffing to no avail so I finally looked at Amazon and found and ordered it. The same is true with Dukes mayonnaise. I always misplaced the recipe cards I had and I lost all of my cookbooks when I became homeless so I had started keeping recipes on flash drives so I don't lose them when a computer dies. I also thank you for your recipes. I feed our missionaries weekly and I don't like to keep repeating dishes. This has really expanded my repertoire. And I found Campbell's Cream of Bacon soup on Amazon. I can't wait to try it.

This is one of my favorite recipes from the cookbook. You are right about finding the corn bread stuffing, but when I do, I stock up on a few bags. I often use left-over turkey.

Very similar to a dish I have made for years that my grandchildren love.
1st layer: stuffing
2nd layer: chicken (de-boned rotisserie works)
3rd layer: cooked broccoli
florets
4th layer: 1 can cream of onion, 1 can cream of celery, 1 can of milk heated, then poured over all previous ingredients.
Last layer: cheese
Plop into a 350 degree oven for about 15 minutes.
15 if the stuffing, broccoli, and soup are already hot.
They ask for this all the time. I’ve had to triple it for 10 people.

Wow, that couldn't be any easier!! I didn't grow up on cornbread dressing or cook it; Yankee roots lol. In the 60s that was one of my favorite lunches at school (here in the south); turkey & dressing that had boiled eggs in it and in the gravy lol. I'm going to make this, no fuss, no muss for a quick dinner when I really don't feel like cooking. Thank You!!3

My recipes were scattered all over, too, and even some just in my mind. Covid actually forced me into typing up my recipes, placing them in plastic protective covers, and then into a binder. Must be something that Grandma's do at some point in our lives.

I need to get my thing I cook for family together too. One example is my bread stuffing/dressing I make. My daughter called me once and asked for the recipe. I had to tell her I learned from her grandma( my mother) and she learned from her mother ! It was this way….. bread broken or cubed,broth,onion,celery,egg,salt,pepper,sage or poultry seasoning, sometimes giblets from Turkey if cooking one, and some of the little pieces I have meat from the turkey neck, if have. Some butter that cooked the onion and celery in. I did not have exact measurements ! 😅 she wanted to know how the heck did I make it like that !? My granddaughter and her girls love it and request it and my deviled eggs 😊😊 and gravy made from the broth.

Made this for dinner last night. My store didn’t have the stuffing so I used a box of Kroger brand stove top cornbread stuffing. Made it as directed and put it on top of the casserole. Talk about easy!
