Easy Beans Salad with Garlic Croutons

  • A crunchy, creamy and mouth-watering salad that will make you crave more with each bite!
    Recipe: Easy Beans Salad with Garlic Croutons
    Ingredients:
    Serves 2 to 3
    400g (14 oz) can of red beans, drained and rinsed
    2 pickled cucumbers, 232g (8.2 oz)
    ½ of a medium red onion
    1 large carrot
    130g (4.6 oz) of ciabatta
    1 clove of garlic, grated
    1 ½ tablespoons of extra virgin olive oil
    2 tablespoons of mayonnaise
    3 tablespoons of sour cream
    Salt and pepper
    Instructions:
    1. Preheat the oven to 180 °C / 160 °C fan / 350F / Gas mark 4.
    2. Cut the bread into 1 ½ to 2 cm thick pieces. Transfer to a large bowl. In a large bowl add 1 ½ tablespoon of olive oil and 1 clove of grated garlic. Stir until combined.
    3. Drizzle the oil and garlic mixture on the bread, add a pinch of salt and toss to coat the bread. Transfer the bread to a baking tray lined with parchment paper. Bake for 10 to 15 minutes. Allow to cool down.
    4. Dice the cucumber, cut the carrot into thin strips, and slice the onion. Rinse and drain the sliced onion.
    5. To a large bowl, add beans, cucumber, carrot, onion, toasted ciabatta, mayonnaise, sour cream, ½ teaspoon of salt and ½ teaspoon of black pepper or to taste. Toss to combine. Serve and enjoy!
    Notes/Tips:
    - The salad is best served immediately.
    - Natural yogurt can be used instead of sour cream.
