My Momma always made bean salad along with either ham salad, chicken salad or tuna salad sandwiches and potato salad when we would go on road trips and stop for a picnic lunch. She made hers like this one, with the exception of using sweet pickle relish instead of the green bell pepper and sugar. It's been years since I've had it, and I think I'm going to throw it together as a side for Christmas or New Years dinner. She loved dishes like this that were super easy and cheap to put together but could be filling as well. Bean salad, potato salad, and macaroni salad were always getting made, and she made some kind of dish out of wild rhubarb that grew in our garden too. That and her pineapple upside down cake were always hits.

For these types of "salad" I love using previously frozen onion and green pepper- a lot of grocery stores have them in the frozen food section. They still have that raw uncooked flavor, but with a little less of the "fresh crunch" texture that can stand out/dominate dishes like this; plus they're pre-prepped and ready to go for whatever you desire! They are a staple in my freezer whenever I get the chance to stock up.
My dad used to make it too. I still make it today after 60 years. The only difference is I use only red kidney beans, I don’t drain them. Also, instead of sugar, I use about 1/2 to 1 teaspoon of sweet relish. Delicious side dish with barbecue. Its one of those dishes best to make ahead. Better the next day. 😋

I remember bean salad from my many years of going to Baptist Church dinners...it was the one dish that was never eaten....every time you went back in line to get more food the bean salad bowl was always full....who ever brought it always took home a full bowl....lol

I remember this. You MUST have the egg. Its even better after flabors blend. However my mom also made 3 bean salad which many people liked. I hated it! Wax beans, shellie beans, and green beans, and onion in a seasoned oil and vinegar dressing. Very liquidy. Many people like it tho. Ill stick to the mayo and egg recipe. I never knew anyone else that ever made it, and actually had forgotten about it. I WILL be making some to share with the youngers who havent tried it!

Chopped sweet pickles sounds like a great addition. I don’t eat eggs and am thinking they could be swapped out for chopped walnuts. Would also use plain Greek yogurt instead of mayo.
