I'm vegan and regularly eat a pile of roasted veg made just like this, sometimes adding chickpeas, on a bed of wild rice, other times on a pile of lentil pasta dressed with a bit of salt and olive oil. So satisfying and delicious!

I made it today and it was delicious! I love the dressing! I couldn’t find how much olive oil to put in from the website so I just put in a rough amount. Some of the veggies were still hard despite spreading them out (cauliflower, parts of the potato) so I’ll probably boil those first for a few mins before adding those in. Going to try replacing the cauliflower with broccoli.

Thank you for mixing the spices and liquids in a bowl first, then pouring it over the veggies. Makes much more sense than sprinkling each item over the veggies separately, then tossing. I make roasted veggies from frozen (I know, sacrilegious), but I’ll make the marinade and use that to season them. This is what I do: Preheat oven and baking sheet to 475 degrees. Season frozen veggies and pour onto preheated baking sheet, still frozen. Veggies should sizzle when the hit the hot baking sheet. Bake 15-20 mins. Done! I know they’re going to be extra delicious with your marinade/sauce/whatever it’s called seasoning them.
I have nothing against frozen veggies, in fact sometimes they are fresher (more nutritional) as they are snapped frozen on the farm rather than sitting in warehouses for weeks.
I used zucchini, sweet potato, onion, garlic cloves, baby king oyster mushroom, broccoli and red bell pepper. For the dressing I use EVOO, Baslamic Vinegar, Salt, Black Pepper, Dill & Parsley & Garlic Powder. When cooked 15minutes I saw the broccoli getting charred and I was worried but I continue to let it sit for a total of 30min at 180degC. Because I was also worried that the sweet potato will not cook through if I stopped midway. But I stayed patient and let it cook. The end result is really wonderful. Juicy vege and pack a ton of flavor. Thank you!

My kids aren't keen on cauliflower so I add cherry tomatoes instead. I wrap whole heads of garlic, halved, in foil and throw them in too. They also prefer shallots to red onions. That shuts them up and fills their pukus with lots of tasty roasted veggies. Watching from Aotearoa New Zealand.

The pan roasted veg with roasted salmon filets using the same marinade as the veg. A quick dinner ready in about 20 minutes... Thanks bunches Joel!
