Rotisserie Chicken roasted with the Cajun Bandit on the Weber Performer

  • Rotisserie Chicken
    Ingredients:
    - 1 roaster chicken
    - 2 quarts water
    - 1/2 cup soy sauce
    - 1/3 cup kosher salt
    - 1/4 cup light brown sugar
    - 1 tsp coarse ground black pepper
    - 2 Tbsp grated onion
    - 2 cloves grated garlic
    - 2 dried crushed bay leaves
    - 2 Tbsp worcestershire sauce
    - * extra soy sauce for basting
    Prep:
    - combine all ingredients and mix well in a 6 qt. food safe
    container.
    - add chicken & brine 4 hrs.
    - remove chicken from brine & pat dry.
    - truss chicken & place on spit.
    Cook:
    - light coals, add to cooker & preheat to 350-375 deg F.
    - put spit on rotisserie, roast chicken & baste with soy sauce every
    15-20 mins.
    - cook chicken to an internal temp. of 165-170 deg F.
    - remove from cooker & spit, then let rest 15-20 mins.
    - carve chicken into pieces, slice breast meat & serve.

    Got my Weber attachment for Christmas this year did my prime rib on it…insanely good! Doing chicken today… best Trussing I’ve seen on You Tube, chicken looked amazing too 👊🏼

      What's the word... rotisseriebird! Didn't that chicken look great... I was blown away by the color and how juicy it was. I do like to cook my chicken at a little higher temp 375 deg... it's all about the skin. I did overshoot the temp on this by a good 5 deg... yet it still turned out great!     Have to say that the Rotisserie is about the best 'upgrade' for the kettle - makes for some awesome cooks.
    The color on that bird was amazing!

    That container holds the chicken perfectly :-) Great tying technique :-) I wish my Weber Kettle had the option of adding a rotisserie to it.       MegaFred... WHATSUP!! Yes, the 6 qrt container was perfect for one chicken. That was the first chicken that I trussed... not bad right. I don't understand why you can't get one for yours... is there something different about your kettle? MrFred that chicken was most awesome... you can do this one on your grill by spatchcocking the bird and cooking it indirect. Thanks Fred... \m/ RO \m/

      They do seem to come out better on the rotisserie... I've been wanting one for a long time so, I'm glad I finally got one. Even though I basted throughout the cook... I think the color happens because it's self basting throughout the cook. Thanks guys... enjoy the weekend : )

    Ahh,, the new accessory toy. Funny I've had my finger on the order buttom for a month or so on this very item. Kerp puttin it off. With Thanksgiving coming up, guess I'll go ahead and push the button. I may rotisserie one, and hang one to compare. Yours (Chicken)turned out beautiful. Very nice brine, and nice job on the truss.       I've been wanting this one also for a long time and I'm glad I got it. I also checked out the Vortex. Which one did you get, the medium or small and is yours the original Vortex or a knock-off? I can get the medium one delivered for $43 Mr. Phil, that chicken was da bomb! Good color and flavor, a must try! That was the first chicken I trussed... not bad, huh. OK thanks philinflorence : )

      2) I ordered 2 Turkey hooks from PBC today
      3) Mine was the Vortex original medium size. No knock offs allowed here

    Hey Chris I bought the Cajun Bandit rotissurrie and ring ,,it works great but when I cover it up to cook a nice roast like Brazilain Picanha it always runs real HOT like 400f . I cant get the temp down even when I shut the Weber vent by half of less.I want to get a 250 to 300f temp but cant do it with this rig, Please advise DD in Los Angeles

    put a little water in that drip pan to help with moisture

      Thanks... but I do believe there was plenty of moisture from brine solution the chicken was in.

    You had way too many coals for just 1 chicken ! One Basket full of coals would have been plenty for just ONE 5 lb Hen , Two baskets half full of coals would be enough for Two 5 lb Hens ! You still had both baskets with coals still burning when You removed the One chicken ! Those remaining still burning coals would have lasted another 2 or 3 hours for smoking other meats!

      Your right one basket full of coals would be enough... but for this cook being the chicken was in a brine, i wanted to have high enough temps to dry out the skin and get it crispy! As for the extra coals at the end... I just snuffed them out by closing the vents and reused the in another cook. Thanks for watching Bear!
