    Great looking wings, what size vortex was that? Was the skin nice and crispy?

      Thanks Gary, the Vortex comes in three size. I have the medium... witch is what's recommended. The skin was crispy even though they were smoked... I normally don't smoke chicken for that reason.

      Thanks Matthew, the Vortex is a wing cookin' machine as it produces an extreme amount of heat which hits the dome of the kettle and rolls back down onto the wings. Plus lining the kettle with the foil, concentrated the heat even more... enjoy your weekend : )

    If you can find a stainless steel bowl between 10 and 12 inches diameter you can cut the bottom of the bowl so it fits between the two grates. Then you have a diy portex. Closest to 12 inches in diameter the better!! I’ve had good results with a 10 inch diameter stainless steel bowl. It works good and a 22 inch grill and extremely well in 18 inch grill. I also purchased 2- Vortex’s so I can do 4-22 inch grills at the same time. Lots of wings for the crew!!! I’ve done for family packs of wings at the same time. I learn to alternate them by about 10 minutes so you can take wings off each grill in 10 minute intervals. I go 18 minutes flip and then another 15 minutes. Using lump charcoal. I also like to see her of them in the video. I hate going out for wings at restaurants now!! Great video!👍

    Chris Collins, I mean BIGGS, I mean CB...Brodilly....that video was one of my favorites. It had some pop. The Vortex was kicking wing butt, the muzak was rockin, the Biggs man was throwin down with a new sign off KEEP ON LOOKIN AT BIGGS HOME COOKIN. Yeah Baby. I like that big RED thing at the end. You gots to stay to the end to see that kind of stuff. Too bad some leave too soon and don't see it. Great job bud. 30 minute wings. Amazing. You've got some energy in the video now. Keep it going.       Your to much Phil... you crack the BigMan up! Were sticking with Biggs, Chris, Chris Biggs, CB or BigMan... lol. Glad you liked that one! At first, the video was nothin' special before I put it together, but once I did that and added a few extras... it turned out good and I was liking it. Just need to find some back round music throughout the video and I should be pretty good. I don't think to many people saw the channel mention at the beginning or Bigg Red at the end... only a couple of comments on it. Thanks for giving me a bit of a push to further better my videos... CB : )

      Thanks Kendall. You, Booger and I all like the wing tips. If I do cut them off, I use them to make a stock. In this case I left them on and ate all twelve wing tips... no one else eats them. I even eat the very tip if it is crunchy enough... haha!

      I lined the kettle with tin foil which made the volume of the kettle less and concentrated the heat even more... those wings were done the first time I checked in on them... which was 20 mins. Next time I won't add any smoke. Your eyes did not deceive you... that was Bigg Red that you saw. What should I cook up... any ideas? Thanks Jon for stopping in : )

    First time I have seen the 'Vortex method' looks fantastic. Have to try it. Greetings from UK. Ps would baste just before sear with 'you know you want it' have added an extra layer of flavour, and evened out any potential dryness in the Chicken?

      First time using it for me... I wanted to see how crispy the skin would get while smoking it... smoking chicken at lower temps does not make for crispy skin. You can use either or... my kettles did not come with that grate system and if your going to smoke they recommend putting your wood on top of the grate... other wise it will burn up in a flash. Hey did you happen to see the very end on my last two videos...

      Biggs' Home Cookin', I always watch the full video, that's why'I'm late getting to them sometimes😂😂I just went back and made sure I didn't miss anything. As soon as the taste test is done I start my comment. I did miss the red kettle in the last pic though, guess I was too busy typing😂😂Sometimes if it's a long video, not yours specifically, I will listen to it while I'm doing other things. That's not often though. I really enjoy watching and learning😃

    Why the aluminum foil? Defeats the convection idea of the vortex doesn't it? It would keep the air from entering back at the bottom of the vortex forming the convection cycle. Just curious. The wings looked great though.

      Thanks for watching Jim... it may not be optimal, but I still think you get convection... plus the foil helps keep the kettle clean and it still got hot in there... around 550 degs F.

      Thanks. I've been reading in my FB groups and the idea is that it forces more air THRU the vortex instead of around it so it tends to keep the temps up better and I agree that it would make cleanup easier. I plan on trying it next time I do wings. Keep on Cookin''! I just subscribed since it looks like you know what your doing.. :-)

      The wings were good and crispy! It's hard to achieve that crispy skin when adding smoke to the wings, but the Vortex produces such high heat that it takes care of that problem.       Hey Chip, thanks for stopping in. The extreme high heat crisped up the wings were it releases itself from the grate... hence no sticking! Also, if you leave your food alone and let it do it's thing, there's a good chance it won't stick.

      I make them on the PBC and they turn out great, but when I go to pull them the skin always tears (not just a little either). I wasn't sure if it was because you're grate was heated before putting them on or because you let the wings come to room temperature before putting them on. Perhaps it's not getting hot enough. Have you tried it on the PBC?

      The heated cooking surface also helps with the food not sticking... which I did not mention. The wings were only out of the fridge 15-20 mins. You know i have never done wing on the PBC... can't see burning all the coal for a small batch of wings.

      Yeah, I can understand that. I typically snuff the coals out and either reuse them in the Weber (newbie to the Weber believe it or not) or another quick cook in the PBC. Thanks for the tips!

      I reuse coal all the time... but when meat juices have been dripping on them I don't care to reuse them. I have snuffed out coals from the PBC by placing the basket on the Weber kettle, then closing the lid. I will try using half the amount of coals recommended.

      Hey PAPA, if you like crispy then the Vortex is for you. I don't soak my chips... putting them in that mesh pouch prevents them from flaring up and slows down the burning process, but being the Vortex was screaming hot they did burn up quicker. Chicken was good... Thanks man!

    The Vortex is great for doing wings in the kettle, but you really don't need to buy one. My wife was throwing out a small galvanized pail she used to use for flower arrangements. I cut the bottom off of it and now use it to do my wings. You can pick up a metal pail at the hardware store for $5.

      That's all good... but you should be careful with heating up galvanized metal as it will give off some unpleasant fumes... do a search...

      Thanks Lasse, I've seen your poortex and they do produce extreme concentrated heat... those wings were actually done in about 20 minutes or so : )

      Lining the kettle with foil reduced the volume inside the grill concentrating the heat even more I believe... have a great weekend! : )

      I lined the kettle to catch the grease drippings and realized it might of had an effect on how fast the wings cook... although I've never cooked them without the foil... I'l be lazing on Sunday afternoon : )

    I went to Goodwill and bought a stainless steel bowl for under $2, cut out the bottom and saved $33. I call it the Poortex.

    Vortex BBQ - A Space Odyssey, by Biggs' Home Cookin' (Season 1). I feel a series coming on...I googlified those vortex, 35-40bucks? Are they made withD2 or Damascus steel?..if ya wanna piss some of the Big Block Stores, make these and sell for 1/2 the price.

      Hahaha! Thanks Gregor... there made out of 20 gauge 304 grade stainless steel... They are a bit expensive... that idea sounds good lets run with it...

      Be happy too. And just as a juxta-postion, I want to send this post, How to shoot A Vortex from one of my favorite Outside TV sites. And I know nothing of 'how to start a business' other than watching DiResta how to build, grind and print site. BUT, ill be happy to front 5, 10 15k to start something viable, I guess the first thing is to find good inexpensive material. I'm convinced that something 'this' simple can be produced as good but cheaper. (sending link of how to shoot a vortex below, hope you don't mind).
