Made it and it’s soooo fire. Lots of flavor. If anyone wondering, works just fine cooking on stovetop. I brought everything to a boil, then reduced to a medium low simmer covered for about 30ish minutes. Lentils were super soft. So perfect.

Quick tip: when you start your Instant Pot on the Chili/Bean setting, you will see that the Keep Warm light comes on. Hit the Keep Warm light button so it turns off. The Instant Pot should definitely naturally release in the 40 mins it sits after cooking at High Pressure. It is still super super hot, just releases a little faster when done cooking. :)

I made this tonight per the video directions. Really good and you don’t need to add salt! Seems like it would be good for freezing. It’s kind of like a Thai flavor.

Saute onion in instPot, add mushroom (courgette anf pepper) add 1 cup diced carrots, for 5-8 mins. Add 2 medium potatoes cubed, 3 generous clves garlic, i can tomatoes or tomato sauce, add 1 cup red lentils, 3 bouillon cubes, add bay leaves, 1/2 tsp oregano, 3 cups water. Stir. Bean chilli setting 15 mins. Let release for 40 mins. Add 1 cup plant milk. Add juice of 2 limes, 2 cups chopped cilantro. Add garlic salt and pepper. Mix and serve

I’ve made this twice since I first watched this video. It is absolutely delicious and easy to substitute ingredients if I find myself shorthanded. But the lime juice and cilantro are must haves! They definitely add a layer of flavor that makes a huge difference. Thanks for one of my new favorites!

Hey Kiki! Thank you for the content you make, as a lifelong vegetarian I've really struggled with losing weight and your approach has been very helpful & different! Can you please do a video on weeknight easy/filling salad recipes. I'm having a hard time eating half my plate in vegetables (as they're straight veggies). Soups and other more complex dishes take more time then I'd like & the dishes I grew up eating are pretty high cal/fatty. A few low cal life saving salads would be helpful! Thank you!!

Woow!! Im so proud of you on your journey, what a great inspiration! Losing weight is definitely not easy at all. One thing I realised after losing 50kg/100lbs in 5 months doing water fasting I realised that new goals don’t deliver new results, a new lifestyle does. This is a process not an outcome. For this reason, all of your energy should go into building better habits. Not chasing better results.
I made the soup for my husband and he LOVED it! I also doubled the recipe so glad I did! But the great response I got back was from my mother who I sent home with a bowl for her dinner and she texted me "Omg don't loose the recipe for this soup it has all my favorite flavors!" She added double hearts too. Anyway it was a hit!!!!! Hope that all made sense lol

That looks so good, I’m gonna try it but may use sweet potatoes instead as I have some to use up. I use red lentils in my bean chilli, they are so good and creamy aren’t they. Also great you used the instant pot, I love instant pot meals 😊

Love the last cookbook & have pre-ordered the new one. Can’t wait to receive it! So glad I stumbled upon your channel! I had so many similar issues with my weight that you have had, most importantly just that constant struggle to find something that would work long term. While I had been eating a vegan diet in the past & it worked quite well & i never felt better, I was unfortunately gravitating towards the more processed vegan options out of ease. Thanks to your recommendation, I have read The Starch Solution & everything clicked. I figured that it was worth a try after trying unsuccessfully with so many other methods. Over the past 4 months I have lost about 30/35 pounds. I fit in all of the clothing in my closet which is truly an amazing feeling. The best part of your channel for me is that the recipes are an easy transition to the wfpb diet. Plus, my non-wfpb husband loves them too, especially the cheese sauce! I never “met” anyone who shares my affinity for potatoes! The fact that I can eat potatoes & still lose weight makes me so happy! Thank you for sharing your journey and recipes! This recipe looks delicious and I can't wait to try it. Which almond milk did you use? Yours looks very thick - I've never seen almond milk coat the sides of a measuring cup like that or look so creamy when I add it into a soup/stew.
I was wondering the same thing. My almond milk is never that thick.
I'm pretty sure she uses 'three trees' almond milk. That's what she used in the past and it's way more creamier. Google it so you see what it looks like. You can find it at sprouts or whole foods!
so I made my own but I usually use three trees almond milk and thats great

Hi Kiki, I love this soup. One thing I noticed is that you put the red lentils in dry. Do you check them for stones? I also check mine for stones and give them a quick rinse before adding to recipes. It wasn’t until I bit on a stone that prompted me to start doing this. Love love love your videos ❤

If you don’t unplug the instant pot it stays on ‘keep warm’ mode, so takes longer for the pressure to come down.
Definitely wil try this! The almond milk looks thick! It looks like cashew cream.
Could be interesting to do half red and half brown lentils. Love that there are potatoes in this recipe!
