    I actually clean the skins off all scales and make crispy potato-like crisps.
    So good.

    Great presentation, my stepdad who is 85 now used to filet a lot of fish in his younger days, the same way you make this look easy. But skill comes to play also and your right about the different knives. There's an old saying, the proper tool, for the proper job! Having very sharp knives, is important! Three thumbs up!! No pun intended!! lol

I really like the handle on these knives as they feel good in my hand. I'm giving them 4 stars on look and feel, but have not had the chance to put them to the test yet. I mostly fish for catfish and can hopefully try them out in the next few days. If they hold an edge throughout a limit of catfish, they'll be worth another star.Update...I used the 9" strong and the 9" fillet on a mess of catfish. I did put a sharpening on these before I started. I want a razor edge to fillet fish but they weren't quite that sharp. The people who gave these knives crappy reviews and said they were sending them back was because they weren't razor sharp. So what, do they not have a knife sharpener?? Good grief! I mean you have to sharpen any knife from time to time.I personally like them and am pleased with them. If you're too lazy to sharpen a knife then hire someone to clean your fish lol.I've never bought a knife in my life that would shave hair right out of the box. Don't be afraid to purchase the knives. They're pretty nice in my opinion.

      Use the back of the knife and run it against the scales from tail to head.

    what do you mean by it makes a good stock for sauces? I just started cooking like 4 days ago and now im on this fish so I dont want to waste any materials. Im going to be making it tomorrow.

    Good job for a kitchen counter, newspaper cleaning job, and some very sharp blades. Cutting through the ribs is easy on small snapper, big ones, near impossible. I prefer to work over the top of them and leave the belly meat on the fillet, making it boneless. You're also throwing away the throat, the best tasting meat on a snapper by far. When skinning, as you did on the first fillet, if you'll leave a very thin layer on the hide, you'll take off most of the red, strong tasting meat that lies against the skin.

    It would be nice if people in the west would utilize the head and bone to make a soup out of it. Too me it's just such a waste especially a nice fish like that.

      I usually scale everything prior to cutting, then use the heads and bones and make a stock.

      Living in Ecuador now.. try a dish called "encebollado".. You'll reconsider fish soup. Easily the best soup I've ever tasted.

      Because of guts. If you cut into it, your guna contaminate your meat. Cut around it or gently cut from the anal hole with tip of nife up to its chin. Remove the insides.
