I filleted my first fish yesterday. Barely any kitchen experience. The fillets didn't look clean, but it was a successful first try. Just don't start on expensive fish and don't worry about messing up.
@@malkhalifa3D The larger fish is easier to fillet. The small fish can be next to impossible to have good fillets. There is a lot of technique in how you angle the blade up or down to get clean cuts. The guy on the video is very good with his techniques.

I'm a professional chef from Croatia. I work in a pro kitchen, this month we have a big fish buffet. Lots of different fish has to be cleaned and i clean @ least 70 % of the fish, gotta have great speed when you have to get the work done. And this person does it very well. We clean squid, toothfish, sea bass, sea bream, saint pierre, saint jacques, grouper, cuttlefish, octopus, ray, shark, tuna steak, monkfish, mussels, pike, carp, salmon, perch, trout. I only use one sharp thin knive and 4 shells. It's easier like that Of course u have other work beside fish u gotta do other stuff too in a big hotel

Right! I usually buy fresh whole fish or live fish from Asian markets in the US. However, I live in Asia for business most of the year, and its easily and readily available everywhere. So, prepping fish isn't anything new for me. But...I can't stop watching him. haha
Huh, who knew watching a fish being descaled would be so satisfying? (Sidenote, I just got to the pollock, and am v excited. Pollock is one of my favorite fish to eat, especially in imitation crab form. Catfish and squid will always be my number one favorites though.

Flatfish are some of my favorite fish. I used to catch them on Danish beaches with my grandparents who knew how to filet them. They taste amazing fresh.

Flatfish are some of my favorite fish. I used to catch them on Danish beaches with my grandparents who knew how to filet them. They taste amazing fresh.
