There has to be a difference in taste as well. All that said, you guys have amazing skills. Very nice sashimi at the end.

It really shows that this fish was not 🩸 properly. I understand some harvest methods do lend to this practice. This is why bluefin caught on rod and reel typically has higher quality when more care is given to the treatment of the meat. Well done to the butcher crew.

Humorous at best, maybe an amateur hour show. There's another video of ONE guy, using two blades to quarter up a tuna and slice into primal cuts ready for a conventional size knife to slice into merchandise for retailers.
Some of my favorite eats no matter the time of day are mackerel and sardines and these majestic creatures eat them so I can only imagine how delicious their meat is. Also superb deboning skills
I’ve never had fresh tuna, just canned. Would love to try it. The only fresh fish I’ve had was the fish my Dad would catch, catfish, carp, buffalo, bluegill, crappy, and bass. Love these fish.

There's always something beautiful about this process, There is a clear reverence of both the art and effort of their craft, and of the tuna itself, It's mesmerizing to watch, and I think elevates the experience of eating it in both taste and appreciation

I love how great fish mongers stores their knives like some sort of great art, in a freaking shrine looking glass box.
Those knives are expensive and very sharp. It has to be kept in a safe place .
I love watching these videos. The amount of skill cutting is crazy. I can cut but I can’t anything too sharp, I’ll lose skin or appendages.
